SAUTEED VEGETABLE MEDLEY



Sauteed Vegetable Medley image

Number Of Ingredients 4

4 cups mixed blanched and refreshed vegetables, such as broccoli florets, cauliflower florets, carrot rounds, green beans, or radish quarters, procedure follows
2 tablespoons unsalted butter
2 tablespoons water
Kosher salt, freshly ground black pepper

Steps:

  • Toss vegetables together in a medium bowl.
  • In a medium saute pan, heat the butter and water together over medium heat. Add the vegetables to the pan and turn the heat to medium high. Toss the vegetables, by gently moving the pan back and forth over the flame. Cook the vegetables for 3 to 4 minutes, or until heated through. Season with salt and pepper. Transfer the vegetables to a serving bowl and serve immediately.
  • Cook the vegetables in 1 to 2 tablespoons extra virgin olive oil or butter, without the water. Do this over high heat and brown and crisp the vegetables slightly.
  • Add 1 to 2 teaspoons of minced garlic, minced shallot, a teaspoon of grated peeled fresh ginger to the pan before adding the vegetables. - Enhance the vegetables at the end of cooking with a tablespoon or so of minced fresh herbs, like chopped flat-leaf parsley, dill, mint, basil, cilantro, or thyme.
  • Bring a large pot of water to a boil and salt it generously. Fill a large bowl with ice water, and put a colander or strainer in it. Add the vegetable to the boiling water and cook, uncovered, until crisp tender, or the desired degree of doneness. Scoop the vegetable from the water and immediately put them in the ice water, to stop the cooking and set their color. Cool and drain, and use as desired. When blanching a mix of vegetables, don't cook them together since they may not all cook at the same time. Start with the lightest colored or mildest flavored vegetable, and blanch and refresh each vegetable, one after the other, until cooked as desired.

This dish is one of my FAVORITES.... I was experimenting in the kitchen one night and came up with this... I hope you enjoy it as much as I always do... Goes great with pork chops or chicken!

2 (14 1/2 ounce) cans diced tomatoes with juice
1 large onion, chopped
2 zucchini, 8-inch, cut into 1/3-inch slices
1/2 teaspoon cilantro
1/4 teaspoon cumin
1/4 teaspoon tony chachere's more spice seasoning
salt and pepper
1 tablespoon butter (optional)

Steps:

  • Empty both cans of tomatoes into a lg. sauce pan.
  • Add onions, and let come to a boil. Cook for 5 minutes on med-high.
  • Add cut up zucchini's and spices, and boil just until zucchini are al dente.
  • Ladle out into bowls.
  • Add salt and pepper to taste, and put 1 pat of butter in bowl, let melt, for some added flavor. With or without the butter, it is delicious!
  • Variations:.
  • You can add bell peppers, and summer squash to this too. If you do, add another can of tomatoes, and adjust seasonings to your taste.

This is one of my creations that I served with Chicken and Veal Marsala, Fettuccini Alfredo, and Italian Garlic Bread for a dinner I had with company last winter... It was a perfect salad to serve with my special Italian dinner!

2 cups fresh spinach
3 cups red leaf lettuce, torn
1/2 head romaine lettuce, lg. stems removed, then torn
1 red pepper, cut into thin strips
1 medium red onion, sliced, then each slice cut into thirds
2 (8 ounce) cans quartered artichokes, drained
6 pepperoncini peppers, cut in half
3 plum tomatoes, cut into slices, then cut in half
1 (14 ounce) can black olives, cut in half
salt and pepper, to taste
garlic and herbed croutons (optional)
parmigiano-reggiano cheese (optional)
1/2 cup canola oil, I used extra virgin olive oil
1/3 cup vinegar, I used white
1 tablespoon sugar
1 teaspoon fresh thyme, I used 2 teaspoons of dried my friend made
1/2 teaspoon dry mustard
2 garlic cloves, minced

Steps:

  • Salad:.
  • Add greens to a lg. salad bowl. Mix well.
  • Add peppers, onions, artichokes, pepperocini peppers, tomatoes and black olives. Mix well with salad forks or with your hands.
  • Season with salt and pepper.
  • Make dressing.
  • Makes 8 servings.
  • Dressing:.
  • Mix oil, vinegar, sugar, thyme, dry mustard and garlic together well in a bowl with a whisk.
  • Add to salad mix right before serving, and mix well with salad forks.
  • Add Parmigiano Reggiano, if using.
  • Top with croutons, and serve.

This recipe is sometimes called a version of scrambled egg, though that doesn't really describe it. It is a side dish that compliments any meal. This dish is quite sweet and somewhat spicy at the same time. Canned tomatoes can be used if fresh not available.

2 -3 onions, diced
1 garlic clove, minced
6 -8 tomatoes, peeled, diced and drained
3 tablespoons sugar
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon curry powder
1 -2 egg
3 tablespoons parmesan cheese

Steps:

  • Saute the onions with the oil until soft. Add the minced garlic and continue to saute for a minute.
  • Add the tomatoes, salt, pepper, and curry powder. Allow the fluid to evaporate until almost gone.
  • Add the egg and cheese to the mixture until combine. The egg should not dominate the mixture.
  • * all spices are to taste. This recipe is on the sweet side.

1/2 cup water
2 tablespoons parmesan cheese, grated
1 tablespoon seasoned bread crumbs
1/8 teaspoon garlic powder

1 tablespoon butter

Steps:

  • Place frozen vegetables and water in microwave-safe bowl and cook in microwave per package directions.
  • Meanwhile, combine cheese, bread crumbs, garlic powder, seasoned salt, and pepper in a small bowl.
  • Remove vegetables from microwave and drain; stir in butter.
  • Sprinkle cheese mixture over vegetables and serve.

ITALIAN VEGETABLE MEDLEY

This recipe makes a nice side dish for an Italian meal. It also goes nicely with many chicken dishes.

3 tablespoons olive oil
1 -2 garlic clove, minced
1/8 teaspoon red chili pepper flakes (optional)
1 carrot, julienned
1 small yellow squash, julienned
2 small zucchini, cut into thin circles
1/2-1 teaspoon dried Italian seasoning
1 roma tomato, deseeded and diced (optional)
salt, as needed

Steps:

  • In a large nonstick frying pan put the olive oil, garlic and red chili flakes (optional). Heat over high heat until the edges of the garlic start to brown.
  • Add the carrots, yellow squash and zucchini and stir to blend.
  • Add the Italian seasoning and stir again.
  • Flip the vegetables over occasionally using a spachula. Some of the vegetables should get brown spots on them, but the vegetables taste best if there is still a slight crispness to them.
  • When the vegetables are ready, add salt.
  • Turn off heat.
  • If desired, stir in a deseeded and diced roma (plum) tomato at this time-optional.
  • I have had similar recipes at Italian restaurants, so I eventually made up my own recipe to go with my meals at home.

ITALIAN ZITI MEDLEY

1/2 lb Italian sausage, cut into coins
1/2 cup margarine
1 cup sliced mushrooms
1 cup green pepper, cut into strips
1/3 cup chopped onion
1/3 cup flour
2 1/4 cups milk
2 cups shredded cheddar cheese
1/2 cup parmesan cheese
1/3 teaspoon pepper
3 cups ziti pasta

Steps:

  • In a 4 quart saucepan, brown sausage, remove and drain.
  • Melt butter and cook mushrooms, peppers and onion until tender, but not brown. Blend flour into vegetable mix; gradually stir in mil. Cook stirring constantly over medium low heat until mixture boils. Boil and stir one minute.
  • Blend in 1 1/2 cups cheddar cheese, Parmesan cheese and pepper until cheeses are melted and mix is smooth.
  • Cook Ziti and drain.
  • Stir hot cooked ziti and sausage into vegetable cheese mixture. Pour into a butter 2 quart casserole. Sprinkle with remaining 1/2 cup cheddar cheese.
  • Bake covered at 350 degrees for 30 minutes.
