Garlic salt
Black Pepper
3 Tablespoons vegetable oil
4 ounces canned mushrooms, drained
15 ounces Italian-style canned tomatoes
3/4 cup dry white wine (substitutions in notes below)
1 Tablespoon dried oregano

Steps:

  • Preheat oven to 325 degrees F. Spray a 13 x 9 inch baking dish with nonstick cooking spray.
  • Season both sides of pork chops generously with garlic salt and black pepper.
  • Heat vegetable oil in a skillet over medium high heat; brown both sides of pork chops.
  • Place browned pork chops in prepared baking dish.
  • In a bowl, mix drained mushrooms (optional), canned tomatoes with the juices, and wine; pour over browned pork chops.
  • Sprinkle dried oregano over top of pork chops.
  • Bake uncovered in preheated oven for 1 hour 15 minutes to 2 hours depending on thickness of pork. See below for recommendations. Be sure to baste pork in its liquids every 30 minutes.
  • Serve over rice, if desired.

2 tablespoons olive oil
2 (1-inch thick) bone-in pork loin center-cut chops (about 12 ounces each)
Salt and freshly ground black pepper
1 small onion, thinly sliced
1 (15-ounce) can diced tomatoes, in juice
1 teaspoon herbes de Provence
1/4 teaspoon dried red pepper flakes, or more to taste
1 tablespoon chopped fresh Italian parsley leaves

Steps:

  • Heat the oil in a heavy large skillet over medium heat. Sprinkle the pork chops with salt and pepper. Add the pork chops to the skillet and cook until they are brown and an instant-read meat thermometer inserted horizontally into the pork registers 160 degrees F, about 3 minutes per side. Transfer the pork chops to a plate and tent with foil to keep them warm.
  • Add the onion to the same skillet and saute over medium heat until crisp-tender, about 4 minutes. Add the tomatoes with their juices, herbes de Provence, and 1/4 teaspoon red pepper flakes. Cover and simmer until the flavors blend and the juices thicken slightly, stirring occasionally, about 15 minutes. Season the sauce, to taste, with salt and more red pepper flakes. Return the pork chops and any accumulated juices from the plate to the skillet and turn the pork chops to coat with the sauce.
  • Place 1 pork chop on each plate. Spoon the sauce over the pork chops. Sprinkle with the parsley and serve.

2 to 3 bone-in pork loin chops (about 12 ounces each)
1 1/2 teaspoons kosher salt
2 tablespoons olive oil
1 tablespoon unsalted butter
2 shallots, thinly sliced
2 cloves garlic, smashed, peeled and cut in half
One 5-ounce container baby spinach, roughly chopped
1/2 cup mascarpone cheese
4 teaspoons freshly squeezed lemon juice (about 1/2 large lemon)

Steps:

  • Remove the pork chops from the refrigerator 30 minutes before cooking.
  • Heat a large skillet over medium-high heat. Dry the pork chops well on both sides using paper towels and season evenly with 1 teaspoon salt.
  • Add the oil to the pan and heat an additional 30 seconds. Add the pork chops to the pan and cook, undisturbed, until deep golden brown and beginning to look cooked around the edges, about 5 minutes. Flip the chops, lower the heat to medium and cook, searing the edges as well, until golden brown and the center reaches 140 to 145 degrees F, about 5 minutes. Remove to a plate to rest and carry-over cook.
  • Return the pan to medium heat and add the butter, shallots and garlic. Cook until fragrant and soft, about 1 minute. Add the spinach to the pan along with the remaining 1/2 teaspoon salt and cook, stirring often until wilted. Stir in the mascarpone, lemon juice and 2 tablespoons water and bring to a simmer. Stir in any juices from the pork that have accumulated on the plate and cook for 2 minutes longer. Spoon the sauce over the pork chops and serve.

3 tablespoons milk
1 ½ cups Italian seasoned bread crumbs
½ cup grated Parmesan cheese

Steps:

  • Preheat oven to 325 degrees F (160 degrees C).
  • In a small bowl, beat together the eggs and milk. In a separate small bowl, mix the bread crumbs, Parmesan cheese, and parsley.
  • Heat the olive oil in a large, oven-proof skillet over medium heat. Stir in the garlic, and cook until lightly browned. Remove garlic, reserving for other uses.

6 lean pork chops
1 cup Italian seasoned breadcrumbs
2 tablespoons italian seasoning
1 teaspoon garlic powder
1 teaspoon dried rosemary
salt and pepper, to taste
Pam cooking spray

Steps:

  • Dip chops in bread crumbs, then put on baking sheet.
  • Sprinkle the pork chops with a light dusting of the Italian Seasoning on both sides of chops.
  • Sprinkle some garlic powder on both sides of chops. As much or as little as you like.
  • Sprinkle lightly with rosemary.
  • Sprinkle with a little salt, and as much pepper as you like. (I love the fresh ground black pepper, and lots of it).
  • Spray top of chops with cooking spray.
  • Bake at 350, for 30-45 minutes until cooked through. Depends how thick your pork chops are.
  • Remove from pan, and serve with your favorite sides.

You're going to love my slow-cooked Tomato Braised Sicilian Pork Chops! They're the perfect comfort food for your family. Serve over pasta, rice or your favorite grain, break up the fork-tender pork chops and mix the meat in with the sauce..... simply delicious!

4 thick cut pork chops (approx. 8 ounces each)
56 oz crushed tomatoes
2 cloves garlic (finely diced)
½ cup onions (small dice)
2 tsp cracked black pepper
2 tsp sea salt
2 tbsp basil (chopped)

Steps:

  • Preheat the oven to 325 F
  • Season the pork chops on each side with coarse sea salt and cracked black pepper. Add as much or little pepper as you like, but I always advise going a little heavier than you think on the salt because it never seems to be enough when it's cooked.
  • Add 2 tablespoons of olive oil to a large ovenproof skillet over medium-high heat. Add the pork chops and sear on each side for 2 minutes.
  • Transfer the pork chops to a tray while you start the tomato sauce.
  • Add the chopped onions and garlic to the large ovenproof skillet over medium heat and saute for 1 minute or until fragrant. *add more olive oil if needed
  • Add the hand-crushed tomatoes and half the basil to the pan and bring the sauce to a light boil.
  • Add the pork chops back to the pan. The tomato should come close to covering the pork chops. It's okay if it does cover them.
  • Cover the pan tightly with foil and bake for 2 hours and 15 minutes at 325 degrees.
  • Reseason the sauce as needed and add the remainder of the basil to the sauce.*If the sauce is too thick add a little water. If the sauce is not thick enough you can let it simmer for another 20-30 minutes on the stovetop or back in the oven.
  • Remove the finished pork chops from the pan and serve with pasta, rice or potatoes. Save the extra sauce, it's amazing!

6 -8 pork chops, thin
3 cups breadcrumbs
3 eggs, beaten
2 tablespoons water
2 tablespoons parsley
1 tablespoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons italian seasoning or 2 tablespoons oregano
olive oil
parmesan cheese

Steps:

  • Mix bread crumbs with parsley, garlic powder, salt and pepper, and seasoning. Put on a lg. plate, and set aside.
  • Beat eggs, and add water. Mix well.
  • Dip each pork chop in egg mixture, then in bread crumbs, then in egg again, and bread crumbs again. Repeat until all are breaded.
  • Heat oil in a lg. frying pan, about 1" of oil is perfect. Turn on high to get oil hot, then turn down one notch.
  • Put pork chops into hot oil, and fry for 3 minutes on each side, or until they are nice and golden, and completely done in the middle.
  • Drain on paper towels, when done, and sprinkle with Parmesan cheese.
  • Season with salt and pepper, to taste, and serve.

6 pork loin chops
2 tablespoons vegetable oil or 2 tablespoons olive oil
1 medium onion, chopped
1/4 cup green pepper, chopped
2 (8 ounce) cans tomato sauce
1 cup water
1 teaspoon sugar
1 teaspoon oregano
1 teaspoon garlic salt
pepper
5 medium potatoes, peeled and quartered
1 cup grated romano cheese

Steps:

  • Preheat oven to 350 degrees.
  • Heat shortening in large skillet; add pork chops and brown quickly on both sides.
  • Remove chops and drain off all but 2 tablespoons fat.
  • Cook onion and green pepper in remaining fat for about 3 minutes or until onion is soft.
  • Add tomato sauce, water, sugar and seasonings.
  • Heat to boiling and cook for about 5 minutes.
  • Arrange potatoes in a large shallow baking dish or casserole.
  • Place pork chops on top of potatoes and pour sauce over all.
  • Cover casserole with lid or foil.
  • Bake at 350 degrees for 1 hour.
  • Remove cover and sprinkle with grated romano cheese, returning to oven and baking 15 minutes longer.

1/2 cup progresso garlic herb breadcrumbs

2 medium green peppers, cut into 1/4-inch strips
1/2 pound sliced fresh mushrooms
1 tablespoon plus 1-1/2 teaspoons olive oil, divided
4 boneless pork loin chops (6 ounces each)
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
2 cups marinara or spaghetti sauce
1 can (3-1/2 ounces) sliced ripe olives, drained

Steps:

  • In a large skillet, saute peppers and mushrooms in 1 tablespoon oil until tender. Remove and keep warm., Sprinkle chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. In the same skillet, brown chops in remaining oil. Add the marinara sauce, olives, remaining salt and pepper, and reserved pepper mixture. Bring to a boil. Reduce heat; cover and simmer until a thermometer inserted in pork reads 145°, 10-15 minutes. Let stand for 5 minutes before serving.

2 cups sliced mushrooms
2 tablespoons olive oil
6 (3/4 inch thick) pork loin chops
2 cloves garlic, crushed
1 cup chopped onion
1 (14.5 ounce) can diced Italian tomatoes, undrained
1 teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup water, if necessary
1 large green bell pepper, cut in 6 pieces

Steps:

  • Heat 1 teaspoon olive oil in a skillet over medium heat. Stir in mushrooms; cook and stir until mushrooms are tender, 5 to 7 minutes. Transfer the mushrooms to a bowl and set aside.
  • Heat the remaining 2 tablespoons olive oil in the skillet over medium heat. Add the pork chops, browning on both sides, 7 to 10 minutes.
