Lime Tequila Shooters Food

LIME DROP SHOTS

Steps:

• Zest 2 of the limes and reserve zest in a bowl.
• Cut the limes in quarters and place inside a blender or food processor.
• Blend until smooth and strain through a fine strainer into a bowl.
• Add the strained lime juice, a cup of cold water, the sugar and tequila into a pitcher and stir.
• Dip each shot glass in a shallow dish of water. Then rim each glass with a 50/50 mixture of the zest and sugar.
• Pour the lime drops into the rimmed glasses and serve.

CHILLED TEQUILA SHOTS WITH LIME AND SALT

Steps:

• Shake tequila with ice; strain into two shot glasses. Chase with a lick of salt and a wedge of lime.

TEQUILA AND LIME GAME HENS (OR CHICKEN)

Steps:

• Split game hens in half.
• In bowl, combine lime juice, tequila, olive oil, Cointreau, garlic and jalapeno.
• Place split hens in oblong baking dish and pour tequila mixture over; turn hens to coat.
• Cover and marinate, turning once or twice, overnight in refrigerator.
• Remove from refrigerator and let set at room temperature about 1 hour before cooking.
• Preheat oven to 400°F.
• Coat a shallow baking pan with nonstick cooking spray.
• Remove hens from marinade and arrange, skin-side up, in baking pan.
• Season with salt and pepper to taste.
• Bake at 400 degrees on upper rack of oven, basting occasionally with marinade, until skin is golden and juices from thighs, pierced at their thickest part, run pinkish-yellow, 30-40 minutes. (Or bbq using your favorite method, spit or on the grill).
• Boil remaining marinade and pour over hens just before serving. (Add more tequila if needed, to make enough sauce).

TEQUILA-OYSTER SHOOTERS

Steps:

• Moisten the rims of 12 shot glasses with water, then dip each glass in kosher salt to coat the rims. Put an oyster into each shot glass.
• In a medium bowl, combine the lime juice, red bell pepper, shallots, cilantro, parsley, and chives. Pour 1 tablespoon of the lime juice mixture into each of the 12 shot glasses over the oysters.
• Pour the tequila into a cocktail shaker with ice cubes and shake to chill the tequila. Add about 2 tablespoons of tequila to each of the shot glasses. Serve immediately.
