Steps:
- Heat oven to 350°F. Spray cookie sheet and 12x12-inch sheet of foil with cooking spray. In food processor, place cereal and sugar; process with on-and-off motions until fine crumbs form. Add water and melted butter; process until thoroughly mixed.
- Spread cereal mixture evenly in center of cookie sheet. Use foil, sprayed side down, to press cereal mixture slightly; roll with rolling pin into 12x8-inch rectangle, about 1/8 inch thick. With sharp knife, score mixture into 1-inch squares.
- Bake 12 to 15 minutes or until squares are golden brown. Cool completely, about 10 minutes. Meanwhile, in small bowl, place whipped topping; fold in lime juice until blended.
- Break cereal mixture apart at scored lines. Reserve 4 cereal squares; crumble remaining squares into small pieces. In each dessert bowl or 12-oz parfait glass, layer 1/4 cup crumbled cereal squares, half container of yogurt and scant 1/4 cup whipped topping mixture. Repeat layers. Top each parfait with 2 reserved cereal squares.

{NO BAKE} KEY LIME CHEESECAKE PARFAITS
These Key Lime Cheesecake Parfaits have all the components of key lime pie, but layered in individual serving glasses. Creamy, sweet, tart, delicious!

- In a bowl, combine graham cracker crumbs and melted butter.
- Using a handheld electric mixer, beat the cream cheese and powdered sugar together until smooth and creamy. Beat in the condensed milk, key lime juice, granulated sugar, and lime zest until creamy and well incorporated.
- Place mixture in the fridge for about 1-2 hours to firm up. (This step is optional, but it makes it easier to pipe.)
- Transfer mixture to a piping bag.
- Alternate the graham cracker crumbs and the cheesecake mousse into 8, 8 ounce canning jars (starting with the crackers and ending with the mousse.) Secure with lids.
- Place in the fridge for about 3 hours to set completely.
- Unfasten lids, pipe some whipped cream on top and garnish with lime zest.
- Serve and enjoy!

KEY LIME PARFAIT
Such a great dessert recipe given to me by an online acquaintance, that I actually purchased parfait glasses for this, though totally unnecessary. When I brought them to the table my father-in-law said, "Wow! Did you 'make' those?" Made me smile. : ) They were a hit, but the kid's don't like the coconut (surprise, surprise). (Cook time is chill time)

Steps:
- Mix gelatin with yogurt, then fold in dessert topping.
- Layer evenly in 6 parfait glasses 1/2 of the graham cracker crumbs; followed by 1/2 of the yogurt mixture; followed by remaining graham cracker crumbs; followed by remaining yogurt mixture.
- Top with shredded coconut.
- Garnish each parfait glass with a slice of lime.
- Serve chilled.

- Melt butter in heavy small skillet over medium heat. Mix in sugar and stir until bubbling, about 1 minute. Mix in crumbs; stir until color deepens, about 3 minutes. Turn out onto plate and cool.
- Stir condensed milk, lime juice and lime peel in large bowl to blend (mixture will thicken). Using electric mixer, beat cream in medium bowl until firm peaks form; fold into lime mixture.
- Place 1/4 cup lime mousse in each of six 8- to 10-ounce wine goblets. Top each with 1 tablespoon crumb mixture, then 1/4 cup mousse. Top parfaits with remaining crumb mixture. Refrigerate at least 1 hour and up to 4 hours.

- Add avocados, 3 tablespoons maple syrup, the juice of 1.5 juicy limes, vanilla and salt to a mini food processor and blend until smooth and creamy scraping the sides down with a mini spatula as needed. No chunks of avocado should remain. Taste and add the juice of another lime half if you want it to be more tart. - Scoop only the solid white coconut cream from the chilled can of full fat coconut milk and place in a bowl. Discard or save the coconut water for other use. Beat the coconut cream using a hand mixer until fluffy and smooth. Add maple syrup and vanilla and beat again. Taste and add more maple syrup or vanilla if desired. If not using the whipped cream immediately to make the parfaits then place in your refrigerator.
- Use four small glasses and start with the pie crust layer. Top with the pudding layer. You can then top with coconut whipped cream (not pictured). Add more pie crust and another later of pudding and top each parfait with more coconut whipped cream. Sprinkle with extra pie crust crumbles and lime zest. Place a thin slice of lime on each for decoration. Serve well chilled.
