1 tbsp olive oil
4 salmon fillets
knob of butter
6 spring onions , finely sliced
1 large red chilli , halved, deseeded and finely chopped
zest and juice 1 lime
small bunch coriander , chopped

Steps:

  • Heat the oil in a large frying pan and cook the salmon, skin side down, for about 5-6 mins until the skin is crispy and golden. Turn the salmon fillets carefully, then cook for a further 2 mins. Remove from the pan and set aside.
  • Tip the butter in the pan and, when melted, add the spring onions, chilli and lime zest to sizzle in the butter for 2 mins, then add the lime juice. Spoon the chilli and lime butter over the salmon. Scatter with the coriander and serve with boiled rice.

1 lb. boneless skinless salmon (4-4 oz. fillets)
1 tbsp soy sauce
2 tbsp lime juice
1 tbsp honey
1/2 tsp lime zest

Steps:

  • Preheat the grill (or broiler).
  • Whisk together the soy sauce, lime juice, honey, and lime zest in a small bowl.
  • Place the salmon on a baking dish covered with foil. Brush the salmon with the honey lime sauce and let rest for 15 minutes.
  • Cook for 3-4 minutes per side on a prepared grill. If your fish normally sticks, cook it on foil sprayed with cooking spray. To broil, place in the oven and broil for 6-8 minutes or until the salmon is cooked to your liking. Cooking time may vary slightly depending on thickness of the fish.

thumb-sized piece ginger , grated
2 garlic cloves , crushed
2 tsp low-sodium soy sauce
2 tbsp rice wine vinegar
2 skinless salmon fillets
100ml low-sodium chicken stock
140g pack baby corn , halved
175g thin-stemmed broccoli
4 baby pak choi , halved
small bunch spring onions , sliced

Steps:

  • Mix the lime juice, ginger, garlic, soy and vinegar with some black pepper. Pour half over the salmon fillets and leave to marinate for 10 mins.
  • Heat the grill to High. Lay the salmon on a non-stick baking tray and grill for 5-6 mins each side or until cooked through. Meanwhile, heat a wok with the remaining marinade and the stock, add the baby corn and broccoli, stir-fry for about 5 mins, then add the pak choi and cook for 2 mins more.
  • Serve the salmon on top of the vegetables with any sauce from the pan and sprinkle with the spring onions.

4 (7 oz) skinless salmon fillets
3 Tbsp light olive oil
3 Tbsp lime juice, (plus 2 tsp lime zest (from 2 limes))
3 Tbsp honey
1 Tbsp minced garlic ((3 cloves))
1 1/4 tsp salt, (or to taste)
1 tsp freshly ground black pepper
1/2 tsp ground cumin
1/2 tsp ground coriander
1 Tbsp chopped cilantro ((optional))

Steps:

  • In a small mixing bowl whisk well together light olive oil, lime juice, lime zest, honey, garlic, salt, and pepper.
  • Place salmon fillets in a gallon size resealable bag* then pour marinade over salmon (be sure marinade is coating all sides of the salmon pieces), press out excess air from the bag and seal.
  • Let rest at room temperature 20 minutes to 30 minutes (no longer).
  • Align oven rack in center of oven. Preheat broiler to high heat for about 5 minutes.
  • Meanwhie line a rimmed baking sheet with aluminum foil and spray with vegetable oil cooking spray.
  • Remove salmon from marinade and align on baking sheet, leaving some space between each piece. Sprinkle tops evenly with cumin and coriander.
  • Place salmon in oven (check on it frequently throughout broiling). Broil in preheated oven about 4 minutes then if needed tent with foil to prevent excess browning. Continue to broil about 3 - 6 minutes longer until cooked to desired doneness in center.**
  • Remove from oven and sprinkle with cilantro and serve. If you want the salmon a little more tart you can serve with lime wedges for spritzing.

Steps:

1 tbsp olive oil (extra virgin)
1 tbsp maple syrup or honey
1 lime (juice and zest of)

Steps:

  • In a small bowl, whisk oil, maple syrup, lime zest and juice, ginger, salt and pepper.

2 cloves Garlic, minced
3 Tbsp Lime Juice
1 Tbsp Soy Sauce
2 Tsp Honey
1 Tbsp Cooking Oil
4 Center-Cut Salmon Fillets ((about 6 oz per fillet))
2 Tbsp Butter ((I use unsalted; if using salted butter, reduce salt below by half))
1 Tbsp Honey
1/2 tsp White Wine Vinegar
1 tsp Salt
1/4 tsp Ground Cumin
2 tsp Lime Juice
Lime wedges and chopped cilantro, for garnish ((optional))

Steps:

  • Marinate salmon: Combine ingredients for marinade (garlic, 3 Tbsp lime juice, soy sauce, 2 tsp honey, and cooking oil). Place salmon in a shallow bowl or baking dish and pour marinade over top, gently turning salmon to coat. (If using skin-on salmon, leave the skin-side up so that the flesh-side is in the marinade.)
  • Transfer salmon to refrigerator and leave to marinate for 30 minutes.
  • Make glaze: While salmon marinates, melt butter in the microwave. Whisk together butter, 1 Tbsp honey, vinegar, salt, and cumin.
  • Turn on the oven's broiler, placing a rack about 6 inches below the heat source.
  • Line a sheet pan with foil (see note) and spray with nonstick cooking spray or brush it generously with oil or spray it with nonstick cooking spray.
  • Remove salmon from marinade (discard marinade).
  • Place salmon on prepared pan (if you are using skin-on salmon, cook them skin-side up first).
  • Broil salmon: Broil salmon for 2 minutes on the first side.
  • Remove pan and flip salmon filets to the other side. Give glaze stir and pour half of the glaze over salmon. (Don't worry if some of the glaze drips off.)
  • Return pan to oven and continue broiling until salmon flakes easily with a fork, 5 to 6 minutes. If you have an instant read thermometer, check the temperature and remove when salmon is 145 degrees F in the center. (Note: any glaze that drips off the sides of the salmon may burn under the broiler. This won't affect the salmon, but be sure to turn on your stove's hood vent if needed.
  • Finish salmon with glaze and lime juice: When salmon is done, pour the remaining half of the sweet and sour glaze and 2 tsp lime juice over top.
  • Serve salmon with extra lime wedges and chopped cilantro.

1/2 cup unsalted butter ((8 Tbsp))
4 cloves garlic (smashed (NOT PRESSED))
2 Tbsp lime juice ((from 1 lime)plus lime wedges to serve)
2 Tbsp dill (chopped, plus more to garnish)
1 tsp sea salt
1/4 tsp black pepper
2 lbs salmon filet (skin-on, cut into 6 portions)

Steps:

  • In a sauce pan, melt 1/2 cup butter over medium heat. Smash 4 garlic cloves with the flat side of a knife and add to saucepan with 1 tsp salt and 1/4 tsp pepper. Simmer 1 min or until fragrant. Add chopped dill and 2 Tbsp lime juice then immediately remove from heat.
  • Arrange salmon fillets on a platter skin-side-down and spoon on 1/3 of butter sauce and brush over the tops. Let salmon marinate while preheating grill.
  • Preheat grill to medium heat (350˚F to 400˚F). Oil the hot grates. Place salmon onto preheated grill, skin-side-up. Cover and grill over medium (350˚F) heat undisturbed, about 3 minutes on the first side.
  • Carefully flip salmon over (it helps to have a spatula to loosen it and tongs to flip it over), brush on 1/3 of butter sauce then cover and cook another 2 minutes (or according to salmon grilling chart), until internal temperature reaches 140˚F (the temperature will continue to rise to an ideal 145˚F internal temperature off the grill).
  • Transfer salmon to a platter and drizzle with remaining 1/3 of sauce in saucepan (if butter has hardened, heat on the stovetop just until melted). Garnish with fresh dill and serve with lime wedges to squeeze over salmon.

1/2 cup cilantro leaf, finely chopped
1 large garlic clove, finely chopped
2 tablespoons lime juice
1 tablespoon olive oil
1/2 teaspoon salt (I use 1/8 tsp salt)
4 salmon steaks, 3/4 inch thick

Steps:

  • Place fish on plate.
  • Combine cilantro, garlic, lime juice, oil and salt in a bowl.
  • Set 2 tablespoons aside in a separate bowl.
  • Pour the cilantro mixture over the fish (do not use the 2 Tbsp reserved marinade).
  • Cover and let it sit 10 minutes.
  • Spray broiler rack with nonstick cooking spray.
  • Place salmon on rack and brush with 1 tablespoon marinade.
  • Broil 6" from heat about 3-4 minutes.
  • Turn steaks over and brush with remaining tablespoon of marinade.
  • Broil 3 more minutes or until cooked through.
  • Note: I have used two very thick salmon steaks instead of the four 3/4 inch thick ones that the recipe calls for, and I have used the same amount of marinade.
  • However, since thicker steaks will take longer to cook, the marinade can burn.
  • To compensate for this, I add a little bit of marinade at a time.
  • For example, if the salmon steaks are 1- 1 1/2 inch thick or more, they can take around 10 minutes to cook.
  • So I brush the salmon steaks with less marinade, around 1/2 tablespoon.
  • I then remove them from the broiler after 2 1/2- 3 minutes, and add a little more marinade, reserving enough for two more applications.
  • Then I broil for another 2 1/2 minutes.
  • I then turn the salmon over and add more marinade, still reserving a little.
  • I broil another 2 1/2 minutes.
  • I then add the remaining marinade and broil the remaining 2 1/2 minutes or until cooked through.
  • This may seem tiresome, but it's well worth it.
  • The marinade is great and you definitely don't want it to burn!

THE EASIEST SPICY LIME GRILLED SALMON



The Easiest Spicy Lime Grilled Salmon image

An easy weeknight salmon recipe with just a few ingredients!

1 lime
2 Tbsp. extra virgin olive oil
1 clove garlic, minced
2 Tbsp. soy sauce
1 tsp. crushed red pepper flakes
salt and pepper to taste
1.5 lbs. Wild Alaskan Salmon (I used sockeye salmon!)
(optional) extra lime wedges, for serving

Steps:

  • Use a microplane to zest the lime and toss the zest into a small mixing bowl.
  • Juice the lime, adding the lime juice to the lime zest.
  • Add olive oil, minced garlic, soy sauce, crushed red pepper flakes, salt, and pepper to lime juice and whisk to combine.
  • Lay salmon in a small baking dish (I like to use a glass container with an airtight lid) and pour the marinade over the fish. Turn the salmon to coat and make sure it's covered in marinade. If you have skin on the salmon, place the filet skin side up so that the marinade can soak in.
  • Cover salmon with the airtight lid and store in the fridge for thirty minutes to an hour or until you're ready to eat.
  • Heat a grill pan over medium-high heat until it's piping hot (you could also use your outdoor grill). Use a heat-resistant pastry brush to brush olive oil over the grill grates to prevent the fish from sticking.
  • Remove fish from marinade and place it on the hot grill pan. Let it cook - without touching it! - for 5-7 minutes (see recipe notes) until salmon has lightened in color. Use a thin spatula to pick up the fish and flip it over on the grill. (If you've oiled your grill, the salmon shouldn't stick too much once those nice grill marks have developed). Cook for another 5-7 minutes until fish is cooked to your desired level of doneness.
  • Remove salmon from the grill and serve immediately with extra lime wedges (optional). You could also add an extra sprinkle of flaky salt or red pepper flakes to the fish if you like.

  • Make the cilantro lime marinade. In a small food processor, pulse together the cilantro, lime zest and juice, garlic, olive oil, salt, black pepper, and red pepper flakes. Add additional olive oil as needed until you reach a smooth consistency.

There are SO many ways to prepare salmon, and yet I'm always open to a new recipe. Salmon seems to be the most popular fish right now, so it's nice to have plenty of new ideas to change things up a bit. To keep this a guilt-free meal, serve with some steamed broccoli and brown rice.

4 (4 ounce) salmon fillets
1/4 teaspoon garlic pepper seasoning
1 tablespoon extra-virgin olive oil
2 tablespoons honey
1 teaspoon lime zest
2 tablespoons fresh lime juice
1 teaspoon low sodium soy sauce
1 tablespoon chopped fresh cilantro (optional)

Steps:

  • Preheat broiler to high. Line a rimmed baking sheet with foil and spray with nonstick cooking spray. Place fillets (skin-side down) on the baking sheet and sprinkle evenly with the garlic pepper. Place baking sheet under broiler and broil for 3 minutes.
  • Meanwhile, for the glaze, heat olive oil in a small saucepan over medium heat. Whisk in honey, lime zest, lime juice and soy sauce. Remove from heat and set aside.
  • Remove baking sheet from oven. Brush or spoon glaze evenly on the fillets. Return the baking sheet to the oven and broil for 4-7 minutes more or until the fish flakes easily with a fork. Remove from oven. Sprinkle salmon with cilantro (if desired) and serve.

Steps:

  • Place first 5 ingredients in a blender; process until smooth.
  • Pour into a large zip-top plastic bag. Add salmon, and seal and marinate in refrigerator 1 hour, turning bag occasionally.
  • Preheat broiler.
  • Remove salmon from bag, discarding marinade.
  • Place salmon on a broiler pan coated with cooking spray; broil 8 minutes. Turn, and broil an additional 4 minutes or until fish flakes easily when tested with a fork. Serve with lime wedges.

Kosher salt and pepper (to taste)
1 tbsp olive oil
1 tsp toasted sesame oil
2 limes (juiced)
zest of 1 lime
1 tbsp honey
1-2 garlic cloves (minced)
2 tbsp finely chopped cilantro

Steps:

  • Remove the salmon from the fridge, season with salt and pepper, then place in a ziplock bag.
  • In a small bowl, whisk well the remaining ingredients. Add half of this marinade over the salmon and allow it to sit over the counter for 15 minutes. Keep the remaining marinade to bash over the salmon at the end.
  • Preheat a grill pan or an outdoor grill over medium heat. Grill the salmon for 4-7 minutes per side, or until charred and flaky.
  • Bash with the remaining marinade twice while grilling.
