1/3 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground cumin, divided
4 tilapia fillets (6 ounces each)
1 tablespoon olive oil
1/2 cup reduced-sodium chicken broth
2 tablespoons minced fresh cilantro
1 teaspoon grated lime zest
2 tablespoons lime juice

Steps:

  • In a shallow bowl, mix flour, salt, pepper and 1/4 teaspoon cumin. Dip fillets in flour mixture to coat both sides; shake off excess., In a large nonstick skillet, heat oil over medium heat. Add fillets; cook, uncovered, 3-4 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., To the same pan, add broth, cilantro, lime zest, lime juice and remaining cumin; bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly thickened. Serve with tilapia.

1/2 Cup Uncooked quinoa
1 Cup Water
2 Tilapia fillets ((3.5 oz each))
Pinch of smoked paprika
2/3 Cup Frozen corn kernels (thawed)
3 Tbsp Lime juice
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/4 Cup Cilantro (roughly chopped)
Salt/pepper to taste.
Sriracha (for garnish (optional))

Steps:

  • In alarge pot, bring the water to a boil over high heat.
  • Once boiling, stir in the quinoa, cover and reduce the heat to low. Cook until all the water is absorbed, about 15 minutes.
  • While the quinoa cooks, spray alarge panwith cooking spray and heat over medium/high.
  • Sprinkle each side of the tilapia fillets with smoked paprika and cook until white and flaky, about 2-3 minutes per side. Cover and set aside until the quinoa is ready.
  • Toss the cooked quinoa with the corn, lime juice, garlic powder, onion powder and cilantro. Season to taste with salt and pepper.
  • Divide the quinoa between two plates and top with tilapia fillets. Drizzle on sriracha is desired.

1 1/4 to 1 1/2 pounds tilapia (fillets)
1 tablespoon butter (melted)
Salt and pepper to taste
1 tablespoon olive oil
1 clove garlic (finely minced)
2 scallions (green onions, thinly sliced)
1 cup cream (heavy)
1/4 cup cilantro (fresh, chopped)
1 tablespoon lime juice
1 teaspoon zest (lime, finely grated)
Salt and freshly ground black pepper, to taste

Steps:

  • Heat the oven to 375 F (190 C / Gas 5).
  • Line a baking pan with foil; spray with nonstick cooking spray.
  • Brush the tilapia fillets lightly with butter and arrange in the prepared pan. Sprinkle the fillets lightly with salt and pepper.
  • Bake the fish for about 20 minutes, or until the tilapia is cooked through and flakes easily with a fork.
  • Heat the olive oil in a small saucepan over medium heat; sauté the garlic and onion for 1 to 2 minutes. Add the heavy cream and bring to a simmer. Simmer for about 3 to 4 minutes to reduce slightly.
  • Stir in the fresh chopped cilantro, lime juice , and zest, and salt and pepper to taste. Simmer for about 1 minute longer.

1 teaspoon cayenne pepper

½ teaspoon black pepper
1 tablespoon lime juice, about 1 lime
1 tablespoon olive oil
1 avocado
½ cup fresh cilantro, roughly chopped
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon lime juice, about 1 lime
¼ cup yogurt

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a small bowl, mix the chili powder, cumin, cayenne, salt, pepper, and olive oil with the lime juice.

1 teaspoon olive oil
1 small onion, chopped
4 garlic cloves, finely minced
2 jalapeno peppers, chopped (seeds removed for less heat)
2 cups diced tomatoes
1/4 cup fresh cilantro, chopped
3 tablespoons lime juice
salt and pepper
4 (10 inch) white corn tortillas (I used La Tortilla Factory Fiber & Flax)
1 medium Hass avocado, sliced
lime wedge (to garnish)
fresh cilantro (to garnish)

Steps:

  • Heat olive oil in a skillet. Sauté onion until translucent, then add garlic. Mix well.
  • Place tilapia on the skillet and cook until the flesh starts to flake. Add jalapeño peppers, tomatoes, cilantro and lime juice. Sauté over medium-high heat for about 5 minutes, breaking up the fish with the spoon to get everything mixed well; season to taste with salt and pepper.

Steps:

  • In a large bowl, mix the honey, lime juice, and garlic. Season tilapia with salt and pepper, place in the bowl, and marinate 1 hour in the refrigerator.
