Baked Salmon with Pomegranate-Balsamic Sauce image

This new slow-cooking technique produces perfectly cooked salmon fillets every time.

4 salmon filets
1 teaspoon light brown sugar
teaspoon kosher salt
teaspoon cornstarch
1 teaspoon canola oil
black pepper
3 tablespoons light brown sugar
3 tablespoons pomegranate juice
2 tablespoons balsamic vinegar
1 tablespoon whole grain mustard
1 teaspoon cornstarch
a pinch of cayenne pepper

Steps:

  • First make the sauce by whisking all ingredients under pomegranate sauce together in a small bowl.
  • Pour pomegranate sauce into a medium sized saucepan and bring to a boil.
  • Let simmer for a few minutes to reduce the sauce to ½ cup (118 ml).
  • Set sauce aside.
  • Preheat oven to 300°F (or 149°C).
  • Combine light brown sugar, salt, and cornstarch in a small bowl.
  • Pat the salmon dry with paper towels and spread sugar mixture on flesh side.
  • Heat oil in a medium sized oven proof skillet over medium-high heat.
  • Once oil has just started to smoke, add fish flesh side down for 1 minute.
  • Flip fish to skin side down and sear for another minute.
  • Pour sauce over salmon filets.
  • Put salmon in the oven (center rack) for 7 to 10 minutes (salmon should register 125°F or 52°C).

⅓ cup pomegranate juice
1 tablespoon soy sauce, or to taste
1 clove garlic, sliced
4 (6 ounce) fillets salmon
2 tablespoons olive oil
½ pomegranate, peeled and seeds separated

Steps:

  • Whisk pomegranate juice, soy sauce, and garlic together in a shallow non-reactive bowl until marinade is well mixed. Add salmon and turn to coat. Cover and marinate for 15 minutes.
  • Heat olive oil in a skillet over medium heat; add garlic from the marinade and cook until lightly browned, 1 to 2 minutes. Pour in the marinade and cook until reduced and thickened to a glaze, 4 to 5 minutes.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Cook salmon on the preheated grill until flesh flakes easily with a fork, about 3 minutes per side. Serve salmon topped with glaze and garnished with pomegranate seeds.

Adapted from "Autumn Gatherings: Casual Food to Enjoy with Family and Friends" by Rick Rodgers. This is a dish that looks as good as it tastes and is a great dinner party centerpiece. Use wild salmon if you can and make extra sauce for freezing...you'll like it on just about anything. (Note that I removed the step of straining the sauce from the original recipe because it is optional and just adds extra effort and is not really necessary).

2 lbs center-cut salmon fillets, with skin
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 cup pomegranate juice (bottled)
1/2 cup red wine (such as Syrah-Cabernet blend)
2 tablespoons shallots, minced
1/2 teaspoon fresh rosemary, chopped (dried) or 1/4 teaspoon rosemary (dried)
8 tablespoons unsalted butter, chilled, cut into 8 equal portions (1 stick)
salt & freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees. Lightly oil a large rimmed baking sheet.
  • Run your fingers over the side cut of the salmon, feeling for any pin bones.
  • If necessary, pull any bones out with sterilized tweezers. Place the salmon on the baking sheet, flesh side up. Season the salmon with salt and pepper. Cut vertically into 6 equal portions, but do not separate the pieces (this makes the salmon easier to serve after cooking).
  • Roast the salmon until it shows just a hint of bright pink when prodded at the center of one of the cuts with a knife, 12 to 15 minutes.
  • Meanwhile, make the pomegranate butter sauce. Bring the pomegranate juice, red wine, shallots,and rosemary to a boil in a nonreactive medium saucepan over high heat. Cook until the mixture is reduced to 2 tablespoons, about 6 minutes. Reduce the heat to very low.
  • Remove the pan from the heat and whisk in one tablespoon of the butter. Whisk until the butter softens into a creamy texture, occasionally returning the pan to the heat to keep it warm, but not hot. Repeat with the remaining butter, one tablespoon at a time. Season with salt and pepper to taste. Do not bother to keep the sauce piping hot; it will be warmed by the heat of the salmon.
  • Serve on individual dinner plates and spoon the sauce on top; serve immediately.

4 cloves garlic, crushed
salt and ground black pepper to taste
1 pinch dried oregano, or to taste
2 salmon steaks

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place butter in a microwave-safe bowl and melt in the microwave, about 30 seconds. Add crushed garlic to butter and stir. Season sauce with salt, pepper, and oregano.
  • Place salmon fillets on a large sheet of aluminum foil and pour sauce on top. Wrap tightly to enclose; place on a baking sheet.

1 center-cut salmon fillet (1-1/2 pounds)
1 tablespoon olive oil
1/2 teaspoon salt

Steps:

  • Place a large cast-iron or other ovenproof skillet in a cold oven. Preheat oven to 450°. Meanwhile, brush salmon with oil and sprinkle with salt and pepper., Carefully remove skillet from oven. 4 tablespoons (1/2 stick) unsalted butter
Coarse salt and ground pepper
1 salmon fillet (2 to 3 pounds), skin on
Chopped fresh parsley leaves, for serving

Steps:

  • Preheat oven to 475 degrees. Place butter on a rimmed baking sheet and season with salt and pepper. Place sheet in oven until butter melts, about 1 minute.
  • Carefully remove sheet from oven and place salmon on top of butter, skin side down; season with salt and pepper. Return sheet to oven.
  • Roast until salmon is just cooked through, 8 to 12 minutes, checking frequently. It will flake easily when done. Sprinkle with parsley and serve.

1 x 2kg/4lb 8oz salmon , filleted to give two sides, skin on
1 lemon , sliced
good handful mixed herbs such as parsley , dill, chervil or tarragon
2 bay leaves
1-2 shallots , thinly sliced
splash white wine

Steps:

  • Heat oven to 200C/180C fan/gas 6. Sit one of the salmon fillets, skin-side down, on a large sheet of foil or baking parchment. Scatter with the lemon slices, herbs, shallots and seasoning, then sit the second fillet on top - skin-side up. Tie in 2-3 places with string to secure, splash with wine and fold up the foil or paper to seal. Can be chilled for up to 3 hrs.
  • Place on a baking sheet and bake for 50 mins-1 hr until the salmon is cooked through - check by poking a knife into the fillets and making sure the flesh flakes easily. Serve in foil or paper on a serving plate, or carefully lift out using a couple of fish slices. Slice into portions and serve with the Lemon & chive mayonnaise and New potatoes 'Lyonnaise' (see 'Goes well with' recipes) and half-steamed broccoli (see below).

  • Braise the fennel. Heat oil over medium high in an extra large skillet. Saute the fennel bulb and shallots for 4-5 minutes, stirring, until golden and slightly tender, you may need to turn heat down. Splash with wine and season generously with salt and pepper. Simmer gently until wine has evaporated. Let it finish cooking in the oven with the salmon.
  • Place the salmon in the oven to roast- either over the braised fennel, or separately. Depending on the size, thickness and the way the salmon is cut, cooking time will vary. For individual portions, check after 10 minutes. Whole filets will most likely take 15 minutes, and extra large thick filets, even longer. Better to err on the side of under than over, so set a timer.
