CILANTRO LIME SHRIMP
Cilantro Lime Shrimp is one of the easiest and quickest ways to prepare shrimp and also one of the most divine! The shrimp is tossed with fiesta seasonings before cooking and garlic cilantro lime butter after cooking so the juicy shrimp is exploding with flavor. This easy shrimp recipe can be cooked on the stove, in the oven or grilled (all instructions included) and it can be served with anything! Cilantro lime shrimp is a meal in itself with a side of veggies and rice/quinoa or instantly transforms tacos, salads, burritos, wraps, etc. (tons of ideas included) into the most epic meal ever!

Steps:
- Add marinade ingredients to a large bowl and whisk to combine. Add shrimp and marinate at room temperature for 15-30 minutes or in the refrigerator for up to 60 minutes (no more!). Note, this is a wet rub marinade and will be thick without extra liquid.
- Melt one tablespoon butter in one tablespoon olive oil in a large skillet over medium-low heat. Increase heat to medium-high. Once very hot and sizzling, add half the shrimp in a single layer and cook approximately 2-3 minutes per side, or just until opaque and cooked through. Transfer shrimp to a plate and repeat with remaining shrimp.
- To the now empty skillet, melt 3 tablespoons butter over medium heat. Once melted, add the garlic and cook until fragrant, about 1 minute. Remove from heat and add the cilantro and lime juice and stir to combine. Add shrimp back to the skillet and stir to evenly coat. Taste and season with salt, pepper, cayenne and/or lime juice to taste.
GARLIC BUTTER SHRIMP WITH CILANTRO AND LIME
Garlic shrimp cooked in a creamy cilantro lime butter sauce. Serve this as an appetizer, with pasta, over rice or in tortillas for tacos. The recipe is easy to adapt. Swap lime for lemon and try other tender herbs like parsley, dill, basil or tarragon in place of cilantro.

- Pat the shrimp dry then season with 1/4 teaspoon of salt and fresh ground black pepper.
- Use a microplane to zest the lime and set aside. Cut the zested lime in half ready for the sauce later in the recipe.
- Add one tablespoon of the butter to a wide skillet. Save the remaining two tablespoons for later.
- Place the skillet with butter over medium heat then add the garlic and coriander. Stir the garlic around the pan until the butter melts and is bubbling; about 1 minute.
- Add the shrimp, nestling them into the pan so that they are in one layer. A few shrimp stacked on top of each other is okay. Cook until the shrimp start to turn pink, about 1 minute.
- Stir in the scallions and lime zest. Continue to cook, stirring, until the shrimp are firm and opaque throughout; another 1 to 2 minutes. Slide the skillet off of the heat.
- With the skillet off of the heat, add the cilantro, juice from the lime and the remaining two tablespoons of butter. Stir the butter around the pan so that it melts into the lime juice making the creamy butter sauce.
- Taste then season as needed with salt and pepper. Serve with extra lime wedges on the side.

- 1. Combine the lime juice, vinegar, and sugar in a medium saucepan (not aluminum or cast-iron) and bring it to a boil. Boil until reduced to one cup. Let cool slightly, transfer to a blender, add cilantro, and blend until smooth. Season to taste with salt and pepper. ( The Glaze can be made a few days in advance, covered, and kept in the refrigerated. Bring to room temperature before serving.).
- 2. Heat the grill to high. Set aside a few teaspoons of the glaze to use after cooking.
- 3. Spear one shrimp onto each skewer, pushing the skewer through booth ends of the shrimp to help it lie flat on the grill. Brush the shrimp with oil and season with salt and pepper.
- 4. Grill the shrimp, brushing often with the glaze, until pink, opaque, and just cooked through, 1 1/2 to 2 minutes on each side. Remove the shrimp to a platter and brush with the reserved glaze. Sprinkle with cilantro and serve immediately.

- Mix together garlic and 1 teaspoon salt.
- Whisk together garlic paste, lime juice, marmalade, cilantro, 3 tablespoons oil, soy sauce, red pepper flakes, remaining 1/8 teaspoon salt and pepper in a small bowl.
- Transfer 1/3 of mixture to small serving bowl and reserve for dipping sauce.
- Combine shrimp with remaining mixture in a large sealable plastic bag and seal bag, pressing out excess air.
- Marinate shrimp, refrigerated, turning bag once, for 15 minutes.
- Drain shrimp and gently pat dry.

- Soak 8 wooden skewers in water at least 30 minutes. Heat broiler. In a small saucepan, combine honey, lime zest and juice, oil, garlic, red-pepper flakes, and salt. - Whisk the lime juice, cilantro, chipotle chile, adobo sauce, and brown sugar together in a small bowl; set aside.
- Pat shrimp dry with paper towels; season with ¼ teaspoon salt, ¼ teaspoon pepper, and sugar.
- Heat 1 tablespoon of oil in a 12-inch nonstick skillet over high heat until smoking.
- Add half the shrimp to pan in a single layer; cook until spotty brown and just pink around the edges, about 1 minute.
