Chili Lime Chicken Wings. These BAKED chicken wings are simple to make and loaded with flavor thanks to a mixture of chili sauce and fresh lime juice and zest. The skin is so crispy on these you won't believe they aren't fried!

4 pounds chicken wings and drumettes
4 tsp baking powder
2 tsp salt
1 tsp black pepper
3 tbsp chili garlic sauce
2 tbsp melted butter
2 tbsp honey
1 tsp lime zest (1 reg lime)
2 tbsp fresh lime juice (1 reg lime)

Steps:

  • Preheat oven to 450. Line large baking sheet with foil and place wire rack on top. Set aside.
  • Dry chicken wings and drumettes with paper towels. Get the chicken as dry as possible.
  • Add baking powder, salt and pepper to a large bowl, mix together. Add the chicken and coat the chicken in the baking powder mixture.
  • Lay the chicken on the baking sheet on top of the wire rack, make sure the chicken is not touching.
  • Bake chicken for 20 minutes. Flip the chicken over using tongs or forks and bake again for 15 more minutes.
  • While the chicken is baking, prepare the sauce. Combine the chili garlic sauce, honey, melted butter, and lime juice and zest in a small bowl. Stir together. If the butter won't mix, heat the sauce in microwave or in a saucepan briefly just until combined.
  • After the chicken has baked, remove from the oven, brush with the sauce.
  • Cook the chicken for an additional 15 minutes with the sauce on. Remove from the oven and serve.

2 1/2 pounds chicken wings, separated into drumettes and wing pieces
3 tablespoons canola oil
1 tablespoon plus 1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
3 tablespoons minced red onion (about 1/4 red onion)
1 tablespoon minced seeded jalapeno (about 1/4 large jalapeno)
2 teaspoons minced garlic (about 2 cloves)
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1/2 cup tequila blanco
1/4 cup lime juice (2 to 3 limes)
2 tablespoons chipotle hot sauce
1 tablespoon light agave or honey
1 tablespoon unsalted butter
1 tablespoon minced fresh cilantro
Spicy Avocado Crema, recipe follows
3/4 cup crema or sour cream
1/4 cup fresh cilantro, stems and leaves
2 tablespoons lime juice (about 1 lime)
1 1/2 teaspoons chipotle hot sauce
1/2 teaspoon minced garlic (about 1 small clove)
1 small or 1/2 large ripe avocado, cut into cubes (about 3/4 cup cubed avocado)
1/2 large jalapeno, seeded, stemmed and minced (about 2 tablespoons minced)
Kosher salt

Steps:

  • Position an oven rack in the top third of the oven. Preheat the oven to 450 degrees F. Line a baking sheet with foil.
  • Place the chicken wings on the prepared baking sheet. Toss with 2 tablespoons of the oil, 1 tablespoon of the salt and the black pepper. Bake until the wings are completely cooked through and just beginning to brown, about 25 minutes.
  • While the chicken wings bake, prepare the tequila lime sauce. Heat the remaining 1 tablespoon oil in a small saucepan over medium heat. Add the red onion, jalapeno and garlic and cook until softened, about 2 minutes. Season with the remaining 1/2 teaspoon salt. Add the cumin and coriander and cook until the spices are toasted and fragrant, an additional 1 minute. Add the tequila, lime juice, hot sauce and agave and bring to a boil. Continue to boil until thickened and slightly reduced, about 5 minutes. Melt in the butter and cook the sauce 1 minute more. Remove from the heat.
  • When the wings are cooked through and beginning to brown, remove the baking sheet and turn the oven to the broiler setting. Pour the sauce over the wings, toss to coat and put them back under the broiler to crisp, 2 to 3 minutes per side. Top with the cilantro and serve immediately with the Spicy Avocado Crema.
  • Put the crema, cilantro, lime juice, hot sauce, garlic, avocado and jalapeno in a food processor and process until completely smooth. Season with salt. Refrigerate in an airtight container until ready to serve. Can be made 1 day in advance.

1/4 cup lime juice
12 chicken drumsticks (about 3 pounds)

Steps:

  • In a small saucepan, heat jelly and lime juice over medium heat until melted. Set aside 1/2 cup for serving., Sprinkle chicken with salt and pepper. On a greased grill rack, grill chicken, covered, over medium heat 15-20 minutes or until a thermometer reads 170°-175°, turning occasionally and basting with remaining jelly mixture during the last 5 minutes of cooking. Serve with reserved jelly mixture.

Marinating the chicken in a seasoned tequila mixture isn't just for show: alcohol's ability to play well with both the fat (which in this case is the chicken drumsticks) and water molecules (punchy aromatics like lime juice and garlic), make it a great vehicle for infusing something with a lot of flavor. And while the ingredient list sure does evoke the flavor (and alcohol content) of a classic margarita, the alcohol gets cooked off as it bakes, making this recipe family-friendly!

3/4 cup silver tequila
3/4 cup freshly squeezed lime juice (from 6 to 8 limes)
1/3 cup honey
1 tablespoon plus 1 1/2 teaspoons kosher salt
3/4 teaspoon freshly ground pepper
4 1/2 pounds chicken drumsticks (about 20)
3 tablespoons safflower oil
Clementine or orange wedges, for serving (optional)

Steps:

  • Combine tequila, lime juice, honey, salt, pepper, chicken, and oil in a large resealable bag. Place in a baking dish and let stand at room temperature, turning bag occasionally, 1 hour.
  • Preheat oven to 375 degrees. Remove chicken from marinade, allowing excess to drip back into bag; pat dry. Reserve marinade. Place chicken on a parchment-lined rimmed baking sheet. Bake until cooked through and golden brown, about 40 minutes.
  • Meanwhile, transfer marinade to a saucepan and boil over medium-high heat until thickened and reduced to 1/3 cup, 15 to 20 minutes. Transfer chicken to a serving platter and immediately brush with glaze. Serve warm or room temperature, with clementine wedges.

CHICKEN WING DRUMMETTES:
3 lb bag thawed chicken wing drummettes
HONEY / SOY GLAZE:
6 Tbsp butter
1/4 c honey
2 Tbsp soy sauce
MAPLE / BACON GLAZE
1 Tbsp bacon drippings
1/4 c maple syrup
2 Tbsp cider vinegar
2 Tbsp bourbon
1/2 c bacon bits
TERYAKI / ORANGE GLAZE:
3/4 c orange juice
1/4 c teryaki sauce
COLA GLAZE:
12 oz cola
1 c ketchup
1/2 c cider vinegar
2 Tbsp adobo sauce, optional
TEQUILA / LIME GLAZE:
1/4 c tequila
1/4 c lime juice
2 Tbsp olive oil
1/4 c granulated sugar or 2 tablespoons agave syrup
salt and pepper to taste
garnish: sesame seeds to taste- add these as a garnish- do not cook these in pan

Steps:

  • 1. Heat oven to 425^. Spray 2 baking pans lightly with oil; place thawed drummettes on pans so there is space around each piece. Bake in oven for 45 minutes-until crispy and done. When done place hot wings in heavy bowl or pan and pour prepared glaze over wings and toss to cover evenly. Place on serving plate and Enjoy!
  • 2. Choose the glaze you wish to use and place the ingredients in a saucepan over medium heat and bring to a boil- turn heat to simmer and cook for 15 minutes-until mixture thickens slightly. When wings are done- pour glaze over wings in a heavy bowl or pan and toss to coat evenly. Place wings on serving platter.Enjoy
  • 3. Note: After drummettes are roasted and tossed in the thickened glaze- they can be placed back in the hot oven and baked 20 minutes more with a second basting in the sauce after 10 minutes. They are extra gooey this way. They will look like this. I used 2 of the recipes above.

2/3 cup brown sugar
1/4 teaspoon dry mustard
1/2 cup marsala wine
1/2 cup soy sauce

  • Pre-heat oven to 350°F Spray a 13x9 pan with cooking spray. Place drumettes into pan and sprinkle with Salt,pepper and onion powder.
  • Cook in 350°F for 30 minutes.
  • Meanwhile in a small saucepan mix brown sugar,dry mustard, Marsala,soy sauce and minced garlic. Bring to boil over medium heat than turn down to simmer while drumettes cook. Stir sauce occasionally.
  • After 30 minutes turn oven down to 325 degrees and pour sauce over wings turning wings to coat with sauce.
  • Cook basting every 15 minutes to 1/2 hour with sauce. Cook until sticky and most of the sauce is absorbed. Serve immediately or next day.

3 tablespoons everything bagel seasoning (such as Trader Joe's Everything But the Bagel Sesame Seasoning Blend)

Steps:

  • Preheat oven to 450°F on the convection setting. (If oven does not have a convection setting, preheat to 450°F.) Line a rimmed baking sheet with aluminum foil, and place a wire rack on top of foil; spray rack generously with cooking spray. Stir together potato flour, salt, and pepper in a medium bowl. Working in batches, toss chicken in potato flour mixture until completely coated, and transfer to wire rack on prepared baking sheet.
  • Bake chicken in preheated oven until skin is golden brown, about 45 to 50 minutes. (If not using convection setting, flip chicken pieces over halfway through bake time.) Remove chicken from oven, and transfer to a large bowl; do not turn oven off. Sprinkle chicken with everything bagel seasoning, and toss until chicken is well coated. 1/2 cup balsamic vinegar
1/2 cup honey
1/2 cup brown sugar
1/4 cup soy sauce
5 sprigs of rosemary
5 garlic cloves, halved
10 to 12 chicken drumsticks
2 tablespoons toasted sesame seeds
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Combine the balsamic, honey, brown sugar, soy sauce, rosemary sprigs, and garlic cloves, in a large, re-sealable plastic bag. Shake and squeeze the contents of the bag to dissolve the honey and the brown sugar. Add the chicken drumsticks to the bag and seal with as little air as possible in the bag. Place in the refrigerator and marinate for 2 hours.
  • Preheat the oven to 450 degrees F.
  • Place the chicken drumsticks on a foil-lined baking sheet. Bake until the skin is caramelized and very dark in spots, about 30 to 35 minutes.
  • Meanwhile, place the marinade in a small saucepan. Bring the marinade to a boil (in order to kill bacteria). Reduce the heat to simmer and cook over low heat until thick, about 15 minutes. Reserve.
  • Use a pastry brush to brush some of the cooked marinade on the cooked chicken. Place the chicken on a serving platter. Sprinkle with the sesame seeds and the chopped parsley.
  • Cook's note: I like the rosemary and garlic flavors in the background. Brushing the cooked drumettes with the reduced marinade helps the flavors along. Also, re-moistening helps the parsley and the seeds to adhere.

This recipe originally came from Better Homes and Gardens. Our DIL Leah made it for our dinner last night-this is her recipe with modifications. BH&G say it is great for a picnic, or can be served as a delicious starter. We ate it as a main with a salad. I'm tempted to serve rice or noodles with them with the remaining sauce spooned over them too rather than waste it as BH&G suggest. Drumettes are the wings with the tips removed, so they're like mini drumsticks.

400 ml light coconut cream
1/4 cup soy sauce
3 limes, juice of
1 tablespoon red curry paste (or more to taste)
1 kg chicken drummettes
1 cup bean sprouts
1/2 cup cashews, toasted and chopped
1 cup coriander leaves, picked, loosely packed, chopped roughly if large

Steps:

  • Preheat oven to 200°C.
  • Whisk the coconut cream, soy, lime juice and curry paste and pour into a baking tray.
  • Add the chicken and toss to coat well with the sauce.
  • Bake for 30 minutes.
  • Drain off most of the liquid reserving remainder. Tipe drummettes onto a serving platter and scatter with shoots, cashews and herbs.
  • Skim a bit of fat of the cooking sauce and pass it at the table for those who'd like extra.
