LIME AND DILL CHIMICHURRI SHRIMP

Chimichurri is a very popular condiment in Argentina and Uruguay and is most often used as a dipping sauce or a marinade for meats. My chimichurri shrimp version incorporates dill and lime, which give it a brighter flavor, making it ideal for spring and summer entertaining. -Bonnie Landy, Castro Valley, California

1/2 cup extra virgin olive oil
1/2 cup packed fresh parsley sprigs
1/4 cup snipped fresh dill
1/4 cup fresh cilantro leaves
3 tablespoons lime juice
3 garlic cloves, halved
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound uncooked shrimp (26-30 per pound), peeled and deveined
1 medium red onion, cut into thick wedges
1 medium zucchini, cut into 1/2-inch pieces
1 medium yellow summer squash, cut into 1/2-inch pieces
8 cherry tomatoes
Crusty bread

Steps:

  • Place first 8 ingredients in a food processor; process until pureed. Reserve 6 tablespoons mixture for serving. Place remaining mixture in a bowl; toss with shrimp and vegetables. Let stand 15 minutes., Alternately thread shrimp and vegetables onto 8 metal or soaked wooden skewers. Grill, covered, over medium heat or broil 4 in. from heat until shrimp turn pink, 3-4 minutes per side. Serve on bed of additional herbs with crusty bread and reserved sauce.

1 1/2 cups cilantro
1 1/2 cups flat leaf parsley
4 garlic cloves
2 small limes, juice of
1 small shallot
1/4 cup extra virgin olive oil
1 1/2 tablespoons red wine vinegar
1 1/2 tablespoons white wine vinegar
1 jalapeno (1/2 seeded 1/2 not )
sea salt
fresh ground pepper

Steps:

  • 1. trim the stems on the parsley and cilantro.
  • 2. rough chop garlic, shallot, 1/2 seeded and half not seeded jalapeno.
  • 3. mix all ingredients in blender and puree to desired consistency.

If you like lime, parsley and garlic you'll love this tangy sauce for any type of meat, fish or chicken - I even tried it on pork and it was yummy. I use Via Nueva brand lemon salt (Sal Con Limon) and just love it on almost everything. You can order it online at vianueva.com using paypal. I save the Chimichurri sauce in a jar with a tight fitting lid for up to 2 weeks, thats all its ever lasted before being eaten. Fresh squeezed limes add alot to the flavor. You can use less olive oil too.

1 bunch fresh flat leaf parsley, chopped
1 cup olive oil
1/3 cup fresh lime juice
2 tablespoons white vinegar
6 garlic cloves, chopped
1 shallot, chopped
1 teaspoon salt (I use lemon salt, Sal Con Limon)
1/2 teaspoon black pepper or 1/2 teaspoon white pepper
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • Parsley should be chopped up pretty small and should equal about 1 cup. You can chop the garlic and shallots in a little food processor if you have one but I would hand chop the parsley.
  • Combine and mix all the ingredients. Reserve half of the marinade for dipping. Marinade your steak (or whatever your grilling) in the other half for as little as 1 hour but overnight is best for beef.
  • Grill your steak (or whatever your grilling) and serve the reserved marinade for dipping or topping.
