This dip is exactly what every party needs. Mayo, cream cheese, and cheese are topped with buttery crackers, bacon, and a sweet heat glaze.

½ cup mayonnaise
8 ounces cream cheese (at room temperature)
2 cups cheddar cheese (grated (like this))
2 whole green onions (sliced thin)
⅓ cup butter crackers (crushed (like this brand))
8 slices bacon (cooked and crumbled, or bacon bits)
½ cup Boucan Pepper Glaze

Steps:

  • Preheat the oven to 350°F. For easier mixing, allow the cream cheese to come to room temperature.
  • Mix together the mayonnaise, cream cheese, cheese, and green onions.
  • Spread in an 8 or 9-inch pie dish. Top with crushed butter crackers.
  • Bake at 350°F for 15 minutes or until heated through.
  • Remove from the oven and top with cooked, crumbled bacon and Captain Rodney's Boucan Glaze. Serve with sturdy crackers, tortilla chips, or Scoops.

Captain Rodneys Dip, also known as a Cheese Bake, is a CREAMY, CHEESY, BACON-Y dip with a SWEET and SPICY twist.

1/2 cup mayonnaise
8 ounces cream cheese
2 cups grated cheddar cheese
3/4 cup Captain Rodney's Boucan Glaze (divided)
4 slices bacon (cooked, chopped, divided)
2 green onions (more for garnish if desired)
1/2 cup butter cracker crumbs

Steps:

  • Preheat oven to 350F.
  • In a large bowl, combine the mayonnaise and cream cheese. Use a hand mixer or stand mixer to combine until smooth.
  • Add in the cheddar cheese. Mix to combine.
  • Add 1/2 cup Captain Rodney's Boucan Glaze, green onions, and half the bacon to the cheese mixture. Mix to combine.
  • Spoon into a 9 inch pie plate or similar size baking dish.
  • Top with cracker crumbs.
  • Bake for 20 minutes or until the dip is bubbly and the crackers are golden brown.
  • Remove from the oven and drizzle with the remaining 1/4 cup Captain Rodney's Pepper Jelly, and top with remaining bacon.
  • Add more sliced green onions for garnish if desired. Serve with crackers or vegetables. Enjoy!

1 green onion, finely chopped
10 Ritz crackers, crushed

1/2 cup captain rodneys lime ginger or 1/2 cup tequila lime glaze

  • .Mix first four ingredients til creamy and place in a glass pie dish.Bake at 350 for 15 minute or until crusty on edge. Remove for oven and top with crumbled Ritz and bacon pour glaze over top and serve with crackers Melba toast or pretzels.

1/2 cup mayonnaise
1 (8 ounce) package cream cheese
1 cup grated cheddar cheese
2 chopped green onions
8 slices chopped cooked bacon (I have often used Kraft real picnic style bacon bits, in a pinch)
1/2 cup captain rodney's boucan glaze (I think any sweet pepper jellies will work, but I prefer theirs)
12 -20 Ritz crackers or 12 -20 townhouse crackers

Steps:

  • Mix Mayo, cream cheese, cheddar cheese and onions in a greased quiche pan or similar. Top with crumbled up crackers: well enough to coat, but not too thick. Bake at 350 degrees for about 15 minutes, until just bubbling on edges. Remove and top with bacon and dribble glaze. Put back in oven to finish . Need to see bubbling edges and a nice toasty brown crackers. remove and serve with remaining crackers! Yummy!
