OVEN FRIED BREADED PORK CHOPS
Crispy on the outside and juicy on the inside, these oven-baked Breaded Pork Chops taste like a decadent fried meal -- and they're ready in 30 minutes!

Steps:
- Preheat oven to 400°F. Spray a rimmed baking sheet with cooking spray or line with parchment paper; set aside.
- Pat pork chops dry and season liberally with salt on both sides. Sprinkle the cornstarch over the pork chops and pat to coat evenly on both sides.
- In a large, shallow dish, combine breadcrumbs, Corn Flake crumbs, sugar, paprika, onion powder and salt. Drizzle with oil and mash with a fork until the oil is thoroughly incorporated.
- Lightly beat the egg with a fork in another shallow dish.
- Dip the pork into the egg, then press into the breading mixture until evenly coated on both sides. (Discard leftover mixture.)
- Place the pork on the prepared baking sheet. Bake until just barely pink in the center and an instant read thermometer registers 145°F, about 15-20 minutes.

- Preheat oven to 425°F. Spray a large nonstick baking sheet lightly with oil.
- Season pork chops on both sides with 1/2 tsp kosher salt.
- Combine panko, cornflake crumbs, parmesan cheese, 3/4 tsp kosher salt, paprika, garlic powder, onion powder, chili powder and black pepper in a large shallow bowl.
- Place the beaten egg in another. Dip the pork into the egg, then crumb mixture.
- Place on the prepared baking sheet and repeat with the remaining chops.
- Lightly spray a little more oil on top of the pork and bake in the oven for 20 minutes.

FABULOUS OVEN-FRIED PORK CHOPS
This is my husband's favorite way to have pork chops. They are always tender and juicy and taste wonderful. You can adjust the seasonings by adding, omitting, or substituting to your taste. Most of the time the only seasoning I use is plain salt and pepper.

- 1. Preheat oven to 400 degrees. Rinse pork chops and shake off excess water. Sprinkle desired seasonings on both sides and dredge in flour.
- 2. Add butter or margarine and vegetable oil to a shallow baking pan. Heat in the oven just until butter is melted. Take care not to overheat.
- 3. Tilt the pan to make sure the liquids cover the entire bottom. Arrange the floured chops in the pan.
- 4. Bake for 20 minutes.
- 5. Remove the pan from the oven. Lightly spray the upper side of the chops with baking spray.
- 6. Turn chops over.
- 7. Continue baking for 20 more minutes until golden brown.
LIGHTER FRIED PORK CHOP

- Heat the oil in a medium skillet over medium-high heat. Put the flour in a shallow dish. Season the pork chop with salt and pepper. Dredge in the flour and add to the skillet. Cook until golden, about 5 minutes, then flip and cook to desired doneness, about 3 minutes more. Give the lemon half a good squeeze over the chop.
- Next, add the cannellini beans and spinach to a medium skillet set over medium-high heat. Season with salt and pepper and cook, stirring occasionally, until the beans are warmed through and the spinach is just wilted, 3 to 4 minutes. Give the beans and spinach a good squeeze of the lemon half.
- Serve the beans and spinach alongside the pork chop with the lemon wedges for squeezing over.

- In a shallow dish, whisk together the egg whites & cornstarch until smooth.
- In a shallow dish, whisk together the bread crumbs (panko), pecans, salt, rosemary & sage.

- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
- Beat soy sauce, egg, water, garlic powder, and ginger together in a shallow bowl. Spread bread crumbs into a separate shallow bowl. Dip pork chops in the egg mixture, allowing excess to drip back into the bowl. Press pork chops into the bread crumbs until evenly coated on both sides.
