These maple chocolate chip cookies are chewy and soft with maple and brown sugar flavours. 20 minutes and no chill time required!

½ cup butter, softened ((regular or dairy free))
¾ cup brown sugar
1 egg
¼ cup maple syrup
½ tsp vanilla extract
2 tsp maple extract
½ tsp salt
1 tsp baking soda
2 cups all-purpose flour
½ cup semisweet chocolate chips ((regular or dairy free))
½ cup walnuts, chopped ((can substitute with pecans or more chocolate chips))

Steps:

  • Preheat oven to 350°F and line 2 baking sheets with parchment paper.
  • In a medium bowl, combine flour, baking soda, and salt. Set aside.
  • If using walnuts, chop them into small pieces and set aside for later.
  • In the bowl of a standing mixer with the paddle attachment or a using a handheld mixer, combine butter and brown sugar, mixing until smooth, around 1-2 minutes.
  • Beat in the egg until combined. Add in the maple syrup, vanilla extract, and maple extract and mix until combined, scraping down the sides of the bowl often.
  • Add in the dry ingredients and mix on low speed until combined. Add in the chocolate chips and walnuts and mix on low again.
  • Use a medium cookie scoop or your hands to roll the dough into round balls, about 1.5 tablespoon-sized. Add more walnuts and chocolate chips on top if desired. Bake the cookies one tray at a time for about 8-11 minutes. Remove them from the oven when the edges are slightly brown and look set. The middles will look soft!
  • Let the cookies cool on the baking sheet for about 5-10 minutes then transfer them to a wire rack to cool completely.

2 1/4 cups all-purpose flour
1 teaspoon baking soda
Fine salt
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
3/4 cup packed light brown sugar
2/3 cup granulated sugar
2 large eggs
1 teaspoon pure vanilla extract
One 12-ounce bag semisweet chocolate chips

Steps:

  • Position 2 racks in the center of the oven, and preheat to 375 degrees F. Line 2 baking sheets with parchment.
  • Whisk together the flour, baking soda and 1 teaspoon salt in a large bowl.
  • Beat the butter and both sugars on medium-high speed in the bowl of a stand mixer fitted with a paddle attachment (or in a large bowl if using a handheld mixer) until light and fluffy, about 4 minutes. Add the eggs, one at time, beating after each addition to incorporate. Beat in the vanilla. Scrape down the side of the bowl as needed. Reduce the speed to medium, add the flour mixture and beat until just incorporated. Stir in the chocolate chips.
  • Scoop 12 heaping tablespoons of dough about 2 inches apart onto each prepared baking sheet. Roll the dough into balls with slightly wet hands. Bake, rotating the cookie sheets from upper to lower racks halfway through, until golden but still soft in the center, 12 to 15 minutes (the longer the cook time, the crunchier the cookies). Let cool for a few minutes on the baking sheet, and then transfer to a rack to cool completely.
  • Let the baking sheets cool completely, scoop the remaining dough onto 1 sheet and bake. Store the cookies in a tightly sealed container at room temperature for up to 5 days.

1 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 large eggs, room temperature
1 teaspoon maple flavoring
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups white baking chips
1 cup chopped pecans
MAPLE GLAZE:
1/3 cup butter, cubed
1-3/4 cups confectioners' sugar
1/3 cup maple syrup
1/4 teaspoon maple flavoring

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs and maple flavoring. In another bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture. Stir in baking chips and pecans., Drop dough by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake 10-12 minutes or until golden brown. Cool on pans 2 minutes. Remove to wire racks to cool completely. , For glaze, in a saucepan, melt butter over medium heat. Remove from heat. Gradually beat in confectioners' sugar, syrup and maple flavoring until smooth., Drizzle over cookies; let dry completely. Store between pieces of waxed paper in airtight containers.

75g light brown sugar
75g golden caster sugar
1 medium egg
1 tsp vanilla extract
180g plain flour
½ tsp bicarbonate of soda
150g dark chocolate, cut into chunks

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Cream the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, bicarb, chocolate and ¼ tsp salt.
  • Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Bake for 10-12 mins or until firm at the edges but still soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.

1/2 cup rolled oats (not quick-cooking)
1 cup whole-wheat pastry flour, spooned and leveled
1/4 teaspoon baking soda
1/8 teaspoon salt
4 tablespoons (1/2 stick) unsalted butter, softened
2/3 cup packed light-brown sugar
3 tablespoons agave nectar
1 large egg, room temperature
2 teaspoons pure vanilla extract
4 ounces semisweet chocolate, chopped, or 1/2 cup semisweet chocolate chips

Steps:

  • 1. Preheat the oven to 350 degrees F. Combine the oats, flour, baking soda and salt in a food processor and pulse until the oats are finely ground. Set aside.
  • 2. In the bowl of an electric mixer, cream the butter, sugar and agave nectar until light and fluffy. Add the egg and vanilla and mix until smooth and glossy. Reduce mixer speed to the lowest setting and gradually add the flour mixture until just incorporated; stir in the chocolate.
  • 3. Drop level tablespoons of the dough onto silicone mat lined baking sheets, 2 inches apart (12 cookies per sheet). Transfer the sheets to the refrigerator and chill the cookies until solid, about 30 minutes. Bake until lightly golden around edges, about 12 to 14 minutes, rotating the pans halfway through.   • Make the brown butter: melt butter in a clear heavy bottom pot. Once the butter starts to foam, whisk continuously until brown bits start to form. Remove from heat, pour into clean bowl and cool to room temperature (25-30 minutes). Butter should be melted, but cooled.
  • Stir together the brown butter and sugars until smooth and well combined. Add each egg and yolk, mixing each time until well combined. Stir in maple syrup, vanilla extract and maple syrup extract. Stir each one until well combined.
  • Stir in 1/2 of the dry ingredients to the wet. Mix until mostly combined. Add remaining 1/2, mixing until mostly combined. A few flour streaks is fine. Stir in the chocolate chips or chunks. Stir until mostly combined. Any loose chips or chunks can be placed on top of the cookies onced scooped. Cover the mixing bowl with plastic wrap. Chill cookie dough in the fridge for 1-2 hours. The longer the chill, the more concentrated the flavor. Preheat the oven to 375F about 30 minutes before you intend to bake the cookies.
