Homemade glazed lime pound cake recipe that bakes up moist, dense and so soft thanks to buttermilk and lime yogurt! Perfectly sweet and tart with a bold lime glaze

3 cups all purpose flour
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 cup butter-flavored shortening
1 cup butter (softened)
3 cups granulated sugar
6 large eggs (room temperature)
1/2 cup buttermilk
5 oz lime flavored yogurt
2 teaspoons vanilla extract (can also use half lime extract and half vanilla extract)
1/4 cup fresh lime juice
2 teaspoons fresh lime zest
LIME GLAZE (double recipe if you want to glaze the entire cake)
1 cup powdered sugar
2-3 tablespoons fresh lime juice
1/2 teaspoon lime zest

Steps:

  • Preheat oven to 325 F.
  • Generously grease and flour a bundt pan. Set aside.
  • In a medium bowl sift together flour, salt and baking powder. Set aside.
  • In a large bowl cream together shortening, butter and sugar.
  • Beat in eggs one at a time until batter is fluffy.
  • In a small bowl, mix together buttermilk and lime yogurt.
  • Alternate adding the buttermilk yogurt mix and the dry mixture into the wet batter.
  • Mix in vanilla extract, lime juice, and lime zest until well combined.
  • Spoon batter into prepared pan.
  • Bake for 1 hour and 15-20 minutes. (I check the center edges with a wooden skewer to make sure it is completely done)
  • Let cake cool before gently removing from the pan.
  • When cake has cooled completely drizzle with glaze.
  • To make the glaze, mix together powdered sugar and enough lime juice to create a thick, yet pourable consistency (think Elmer's glue) Stir in lime zest.
  • Serve cake garnished with lime slices, a sprinkling of lime zest, and vanilla ice cream or whipped cream.

125g unsalted butter , softened
180g caster sugar
2 large eggs , beaten
180g plain flour , sifted
1 tsp vanilla extract
1 tsp baking powder
pinch salt
150g soured cream
100g caster sugar
50g unsalted butter
4 tbsp water
few drops vanilla extract

Steps:

  • Grease and lightly flour a 1.4 litre (6 cup) fluted bundt tin. Preheat the oven to 180C/160C fan/gas 4.
  • Put the butter and sugar into a bowl and beat well using an electric mixer until the mixture is very light and fluffy. Add the eggs a little at a time, beating well between each addition. Add a little flour if the mixture starts to separate. Add the vanilla extract.
  • Mix together the flour, baking powder and salt and stir half into the butter mixture together with half the soured cream. Beat well together.
  • Add the remaining flour and soured cream and mix well. Spoon into the prepared tin and spread level.
  • Bake in the oven for 35-40 mins. When cooked remove from the oven and leave to cool in the tin for 5 mins.
  • To make the glaze put all the ingredients into a small pan and heat until the butter has melted. Bring to the boil then reduce the heat a little and simmer for 3 mins. Remove from the heat and allow to cool and thicken.
  • Turn the cake out onto a wire rack over a tray. Pour or brush half of the glaze over the cake. Leave to soak in. Then pour the remaining glaze over the cake. Leave until completely cold before serving.

Combine the flour, baking soda and salt; add to the creamed mixture alternately with sour cream. Beat just until combined., Pour into a greased and floured 10-in. fluted tube pan. Bake at 350° until a toothpick inserted near the center comes out clean, 55-60 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely., For icing, in a small bowl, beat the sour cream and butter until smooth. Gradually add confectioners' sugar. Beat in lemon juice and zest. Drizzle over the cake. If desired, top with additional grated lemon zest. Store in the refrigerator.

3 tablespoons dry breadcrumbs
3 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter or 3/4 cup margarine, softened
2 1/2 cups granulated sugar
2 teaspoons lemon extract
3 large eggs
1 1/2 tablespoons grated fresh lemon rind (about 2 lemons)
1/4 cup fresh lemon juice, divided
1 (8 ounce) carton low-fat sour cream
1 cup powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • Coat a 10-inch tube pan with cooking spray, and dust with the breadcrumbs.
  • Combine flour, baking soda and salt in a bowl; stir well.
  • Beat the butter in a large bowl at medium speed until light and fluffy.
  • Gradually add the sugar and lemon extract, beating until well blended.
  • Add eggs, 1 at a time, beating well after each addition.
  • Add grated lemon rind and 2 tablespoons lemon juice and beat for 30 seconds.
  • Add the flour mixture to sugar mixture alternately with sour cream, beating at low speed, beginning and ending with flour mixture.

  • Combine 2 tbsp lemon juice and powdered sugar.

  • LEMON AND SOUR CREAM CAKE Preheat the oven to 350°f / 180°c. Grease a one pound loaf pan, and line with a parchment paper sling. (9” x 4 ½” x 2 ¾” is what I used. Larger will work, but do not go smaller than this or it will spill in the oven - happened to me and it’s not ideal. haha) Place the sugar into a large bowl, then zest the lemon directly into the bowl. Using your fingers, rub the lemon zest into the sugar until incorporated. Add the flour, almond meal, baking powder, baking soda, and salt, and whisk to combine. In a medium bowl, combine the melted butter, lemon juice, eggs, sour cream, and vanilla bean paste, and mix to combine. Add the wet ingredients to the dry ingredients and whisk until completely incorporated. Finish with a rubber spatula if needed to ensure that there are no dry ingredients left on the bottom.
  • Transfer the mixture to the lined loaf pan, smoothing with an offset spatula or back of a spoon. Place onto a sheet pan (optional step but I like doing it just in case). Bake the loaf cake for 60 to 70 minutes, or until a skewer inserted into the centre comes out clean, checking for doneness after 50 minutes and tenting with foil if needed to stop the top of the loaf from browning excessively. Remove from the oven and allow to stand in the pan for 5-10 minutes, before brushing with the lemon syrup (recipe follows). Leave to stand for a further 5 to 10 minutes, brushing additional syrup on if it seems to be absorbing, then remove from the pan and allow to cool completely on a wire rack.
  • Using a spoon or offset spatula, spread with the glaze (recipe follows). Allow 10-15 minutes for it to set slightly before serving. Garnish with additional zest if desired. Slice thickly using a sharp bread knife. Leftovers can be wrapped or stored in an airtight container at room temperature.
  • LEMON SYRUP Place the lemon juice and syrup in a small saucepan over medium heat. Stir to combine, then heat until the sugar has dissolved. Bring the mixture to a gentle boil, then simmer for 2 minutes to allow it to reduce slightly. Allow to stand for 5-10 minutes to cool slightly.
