SLOPPY OTTOS
My version of sloppy joes comes from an old family recipe. Make these sandwiches even more German by stacking everything on a pretzel bun. -Jason Koren, Milwaukee, Wisconsin

Steps:
- Preheat oven to 350°. In a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain. Add sauerkraut, peppers and onion; cook and stir 8-10 minutes longer or until vegetables are tender., Spoon meat mixture onto bun bottoms; place cheese over meat. Replace tops. Place on a baking sheet. Bake 4-6 minutes or until cheese is melted.

SLOPPY OTTOS
Steps:
- preheat the oven to 350˚
- fry off the sausage over medium high heat, drain
- reduce the heat to medium and add the chopped pepper, onion and the drained sauerkraut
- cook for 5-10 minutes or until the peppers are no longer crunchy, stirring occasionally
- meanwhile split the rolls and place the bottoms on a baking sheet
- once the peppers are cooked to your liking lay the cheese over the top of the mixture and let it melt slightly, stir to mix it in and then remove from the heat
- divide the mixture between the pretzel rolls, add a top bun
- then bake 4-5 minutes until the rolls are warmed and the cheese finishes melting
- serve while hot

SLOPPY OTTOS (GERMAN VERSION OF SLOPPY JOES)
Because of my German heritage, I try to use the month of October to cook more German-inspired foods. When my sons were younger, they loved sauerkraut and any dish that contained it. This was a favorite of theirs and I liked that it was a one skillet, easy and tasty sandwich. I served it with German potato salad. Yum!!

- Stir in desired amount of sauerkraut and heat through.
- Just before serving, stir in sour cream. Heat gently and serve on dark buns.

SLOPPY JANE'S
This is a vegan version of Sloppy Joe's from the cookbook La Dolce Vegan by Sara Kramer. Quick and simple and tastes fantastic! L picked this recipe totally at random, and I am SO glad she did! I substituted 1 TBSP tamari and 1 TBSP of Bragg's Liquid Aminos for the Vegan Worcestershire sauce. The original simmering time for the recipe is listed below, I probably simmered mine closer to 25-30 minutes before the rice was tender.

Steps:
- In a large saucepan, on a medium heat, saute the onions in oil until they're translucent.
- Add the green pepper and tofu and saute for 2-3 minutes
- Add the tomatoes, chilli, salt, pepper, mustard, syrup, Worcestershire sauce and rice.
- Cover and simmer for 15-20 mins/until rice is cooked. Stir to prevent sticking.
- Serve over toasted buns or bread.

- Heal the oil in a skillet over medium heat; add in the onion and bell pepper; cover, and cook about 5 minutes, until softened.
