Steps:
- Juice lemon to measure 2 Tablespoons juice; place in small bowl. Add mustard, worcestershire sauce, garlic and black pepper; whisk until blended. Add mayonnaise; whisk until smooth.
- While continually whisking, add oil to mayonnaise in a thin, steady stream. Continue whisking until blended; stir in parmesan cheese. Cover; refrigerate until ready to serve. Store dressing covered in refrigerator up to 2 weeks.

A home-made and healthified version of creamy Caesar salad dressing that can be used for salad or any recipe calling for creamy Caesar salad dressing.

Steps:
- Peel and crush the garlic clove with a flat side of a chef's knife. Sprinkle with salt and mash the garlic into a paste using the flat side of the chef's knife. (You might find it easier to use the back of a spoon) but I use the knife. Either whisk very vigorously in a small bowl or use a small food processor. Add the lemon juice, sour cream (or Greek yogurt), Dijon mustard, hot pepper sauce, Worcestershire sauce and black pepper. Process or whisk until very well combined. While whisking or with the food processor running slowly drizzle in the olive oil. Add the grated Parmesan cheese. Mix and refrigerate until needed to combine the flavors. Will keep in the refrigerator for up to 3 days.

Here's a smooth and tasty alternative to regular Caesar dressing. This recipe has stood the test of time in my kitchen, and is requested often. It tastes best on Romaine tossed with 'Spring Mix' lettuces. The dressing will keep up to two weeks in the refrigerator in an air-tight container.

- Stir the white wine vinegar, Dijon mustard, balsamic vinegar, lemon zest, sugar, Italian seasoning, salt, and black pepper together in a bowl. Gradually whisk in the olive oil to make an emulsion, or thickened vinaigrette mixture. Stir in the garlic. Add the Parmesan cheese just before serving.

COOKING LIGHT'S CREAMY CAESAR SALAD DRESSING
I don't know the month/date of the issue that I saved this from. It's my go-to caesar dressing when I want a quick dressing, or when I want something that's a little more kid-friendly than a classic caesar dressing. I wrote the recipe as-is from the magazine, but I don't buy/use fat-free mayo. I also just throw everything into my magic bullet and go, which works great, too!

- Place all except oil and mayonnaise in food processor or blender and process until smooth.
- While processor is running add oil VERY SLOWLY and process until thick and creamy (about 4-5 minutes).
- Pour into bowl and add 1/4 cup of mayonnaise and blend thoroughly with a fork.
- Taste and adjust seasonings to your taste (sometimes I like to add a couple more tablespoons of Parmesan cheese).
- Cover and chill until ready to use.
