2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
3 egg yolks
1/2 Almond Coconut milk (or any milk flavor of your choice)
1 1/2 cup scalded Almond Coconut Milk
1/2 Cup Semi-sweet chocolate chips
1/2 cup shredded coconut
1 teaspoon coconut extract
1 Tablespoon Butter
1 Teaspoon vanilla extract
Pre-cooked Shortcrust Pastry Pie Shell or Perfect Flaky Pie crust
Homemade whipped topping
shredded chocolate
pan toasted coconut

Steps:

  • In a medium saucepan sift sugar, starch, and salt.
  • Add egg yolks and 1/2 cup milk of choice.
  • Begin heating on low heat
  • Add 1 1/2 cup scalded milk. (Milk doesn't need to be scaled necessarily just hot. I heated mine in the microwave for 1-2 minutes).
  • Add chocolate chips, shredded coconut, and coconut extract.
  • Stir and continue to cook on medium heat until pudding consistency.
  • Don't overcook or pie will be too thick in texture.
  • Remove from heat as soon as it begins to come close to pudding consistency
  • Add butter and vanilla extract and stir until butter is melted.
  • Fill the pre-cooked pie shell.
  • Cover with plastic wrap and cool in the fridge several hours or overnight until completely cooled and set.
  • Top with whipped topping
  • Sprinkle with Shredded chocolate and toasted coconut
  • Serve and enjoy!

1 (3 ounce) can flaked coconut, divided
1 1/2 cups sugar
1/4 cup cornstarch
1 dash salt
2 1/2 cups milk
4 egg yolks, lightly beaten
1/4 cup butter or 1/4 cup margarine
2 tablespoons light corn syrup
1 1/2 teaspoons vanilla extract
1 9-inch baked pie crust
4 egg whites
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1/2 cup sugar

Steps:

  • Sprinkle 2 tbs coconut on a baking sheet; reserve remaining coconut. Bake at 350 degrees for 3 to 4 minutes or until lightly toasted. Set toasted coconut aside.
  • Combine 1 1/2 cups sugar, cornstarch, and dash of salt in a large saucepan. Add untoasted coconut, milk, and next 4 ingredients; stir well. Cook over medium heat, stirring constantly, until thickened. Spoon into prepared pastry shell.
  • Beat egg whites, cream of tartar, and 1/4 tsp salt at high speed of an electric mixer until foamy. Gradually add 1/2 cup sugar, 1 tbsp at a time, beating until stiff peaks form and sugar dissolves (2 to 4 minutes). Spread meringue over filling, sealing to the edge of the pie crust. Bake at 325 degrees for 25 to 28 minutes or until golden. Sprinkle toasted coconut on top of pie. Let cool completely on a wire rack. Cover and store in the refrigerator.

THE CRUST:
a heaping ¾ cup (about 11) medjool dates, pitted and soaked in hot water for 5 minutes, then drained completely
3/4 cup raw cashews, roughly chopped (raw almonds work too!)
1/4 cup shredded unsweetened coconut
THE FILLING & TOPPING:
1 14-oz. can coconut cream, refrigerated overnight*
2 Tbsp. maple syrup
splash pure vanilla extract
1 lb. strawberries sliced and diced (see photos)
for topping: toasted coconut, fresh mint, grated dark chocolate

Steps:

  • Prepare the crust: Place drained dates, cashew pieces, and coconut in a food processor, and process until the mixture can easily be squeezed into a ball.
  • Line an 8-inch round cake pan with plastic wrap (you'll want some overhang so you can remove the pie later). Dump date-cashew-coconut mixture into the center and flatten it with your fingers, pressing up the sides of the pan slightly. Place in the freezer to set.
  • Prepare the filling: Remove coconut cream from the fridge. Scoop out the solid white part and place it in the bowl of a stand mixer (a hand mixer would work, too!). Add maple syrup and vanilla, and whip until combined, smooth, and fluffy, about 1-2 minutes. It should form stiff peaks.
  • Assemble: Remove crust from the freezer. Pour the filling on top, smoothing out the top with a spatula. Set in the freezer for 10 minutes.
  • Remove from freezer and top with strawberries, toasted coconut, mint, and chocolate. Place back in the freezer for 1 hour.
  • Remove from freezer and carefully remove the pie from the pie pan and plastic wrap.** Place on a plate, cut, and serve. Store covered in the fridge.

1/2 teaspoon salt
2 tablespoons vegetable shortening
6 tablespoons cold unsalted butter, cut into small pieces
1 large egg yolk
2 to 4 tablespoons ice water
1 1/2 cups chopped pecans
6 tablespoons unsalted butter
1 1/4 cups sweetened cream of coconut (from a 15- to 16-ounce can)
1/4 cup packed dark brown sugar
1 tablespoon all-purpose flour
1 teaspoon fresh lemon juice
1/2 teaspoon salt
3 large eggs, lightly beaten
1/2 teaspoon coconut extract
1/2 cup sweetened shredded coconut

Steps:

  • Make the crust: Pulse the flour, sugar and salt in a food processor until combined. Add the shortening and pulse until the mixture looks like coarse meal. Add the butter and pulse a few times until it is in pea-size bits. Add the egg yolk and 2 tablespoons ice water, then pulse a few times. Pinch the mixture with your fingers; if it doesn't hold together, add more water, 1 tablespoon at a time. Turn out onto a sheet of plastic wrap, gather into a disk and wrap. Refrigerate until firm, at least 1 hour or overnight.
  • Roll out the dough into a 12-inch round on a lightly floured surface and ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang. Tuck the overhanging dough under itself and crimp the edges with your fingers. Freeze until firm, about 30 minutes.
  • Meanwhile, position racks in the middle and bottom of the oven; preheat to 350˚ F. Spread 1 cup pecans on a baking sheet and toast on the middle rack until darkened, 8 to 10 minutes; let cool.
  • Line the pie crust with parchment or foil and fill with pie weights or dried beans. Bake on the bottom oven rack until the edges of the crust are lightly browned, 20 to 25 minutes. Remove the parchment and weights and continue to bake until the bottom of the crust is golden, 10 to 15 more minutes.
  • Meanwhile, make the filling: Melt the butter in a medium saucepan over medium heat and cook, swirling the pan occasionally, until brown flecks appear, about 8 minutes. Remove from the heat and whisk in the cream of coconut, brown sugar, flour, lemon juice and salt. Let cool to lukewarm, 5 to 10 minutes, then whisk in the eggs and coconut extract until combined.
  • If the crust has cooled, return it to the oven for a few minutes to warm through. Scatter the toasted pecans in the crust. Pour in the filling. Top with the shredded coconut and remaining 1/2 cup untoasted pecans. Bake on the middle oven rack until the filling is just set, 35 to 40 minutes (cover loosely with foil if the crust is getting too dark). Transfer to a rack to cool completely.
