½ cup chocolate cookie crumbs
1 pinch ground cinnamon
8 (1 ounce) squares semisweet chocolate
1 tablespoon butter
2 (8 ounce) packages cream cheese, softened
1 cup heavy whipping cream
1 teaspoon vanilla extract
⅔ cup white sugar
2 eggs, beaten
1 ½ tablespoons unsweetened cocoa powder
1 ½ cups water

Steps:

  • Grease an 8-inch springform pan that will fit inside the pressure cooker. Mix the chocolate wafer crumbs and cinnamon together. Sprinkle the crumb mixture on the bottom of springform pan, pressing gently to form the crust.
  • Melt chocolate and butter together and set aside.
  • With a food processor or electric mixer, process cream cheese until smooth. Add chocolate mixture, and process until mixture is well-mixed and uniformly colored. Pour in the cream, vanilla extract, sugar, and eggs. Beat well. Sieve cocoa powder over batter, and pulse or mix on low speed until cocoa is thoroughly incorporated. Pour mixture over crumbs in pan. Cover cake with a piece of waxed paper. Wrap the entire pan with aluminum foil.
  • Add water to pressure cooker. Place pan on the trivet in pressure cooker. Seal the cooker and bring it up to 15 pounds (high) pressure. Reduce the heat to maintain the pressure, and cook 45 to 50 minutes. Remove cooker from heat, and let the pressure drop on its own. Remove cheesecake from cooker, and let cool to room temperature in pan on a wire rack.
  • Remove cheesecake from pan, and refrigerate for 8 hours before serving.

1/4 cup cocoa powder, such as Baker's® 100% Pure Cocoa Powder

1 large egg
1 1/2 sticks (12 tablespoons) unsalted butter
3/4 cup cocoa powder, such as Baker's® 100% Pure Cocoa Powder, plus more for sprinkling
4 cups heavy cream
One 1/4-ounce package unflavored gelatin
1 cup sugar
1 tablespoon pure vanilla extract
1 1/4 cups heavy cream
4 tablespoons unsalted butter
12 ounces semisweet chocolate, such as Baker's® Semi-Sweet Chocolate Baking Bar, chopped

Steps:

  • For the brownie: Preheat the oven to 350 degrees F. Spray the bottom of a 9-inch springform pan with nonstick cooking spray.
  • Whisk together the flour, cocoa powder and sugar in a medium bowl. Whisk in the milk, butter, vanilla and egg until smooth. Pour the batter into the prepared pan and bake until a knife inserted in the center comes out clean, about 20 minutes. Cool completely on a wire rack, about 30 minutes.
  • Unclasp the pan, remove the outer ring and spray it with nonstick cooking spray. Line the ring with a 2 1/2-inch-wide parchment strip, making sure that it sits tightly and smoothly along the sides. Re-clasp the ring to the bottom of the pan with the cake in it.
  • For the mousse: Roughly chop 4 tablespoons of the butter and put in a medium microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until melted, about 1 minute. Stir in 1/4 cup of the cocoa powder until smooth; set aside. Chop the remaining 8 tablespoons butter and put in a medium microwave-safe bowl. Microwave in 30-second intervals, stirring in between each, until melted, about 1 minute. Stir in the remaining 1/2 cup cocoa powder until smooth; set aside.
  • Add 1/4 cup of the heavy cream to a small microwave-safe bowl and stir in the gelatin. Let sit for 5 minutes to bloom. Microwave in 30-second intervals, stirring in between each, until the gelatin is dissolved, about 1 minute. Cool to room temperature, about 5 minutes.
  • Transfer the gelatin to the bowl of a stand mixer fitted with the whisk attachment and add the sugar, vanilla and remaining 3 3/4 cups heavy cream. Whisk on medium speed until stiff peaks form, 3 to 4 minutes. Divide the whipped cream mixture between 2 large bowls. Fold one bowl of the cocoa powder-butter mixture into each batch of whipped cream mixture and stir until no streaks remain (one bowl will contain dark chocolate mousse and the other will contain light chocolate mousse).
  • Spread the dark chocolate mousse on top of the brownie in the springform pan. Use an offset spatula to even out and smooth the top. Spread the light chocolate mousse on top of the dark chocolate mousse and use an offset spatula to even out and smooth the top. Refrigerate until the mousse is set, 3 hours and up to overnight.
  • For the ganache: Bring the heavy cream and butter to a boil in a small saucepan over medium-high heat. Put the semisweet chocolate in a large heatproof bowl and pour the hot cream over top. Let it sit for 5 minutes, then stir until smooth and shiny.
  • Unclasp the springform pan and remove the parchment paper from the sides of the cake. Use a hot, dry offset spatula to smooth out the sides. Set a rack in a rimmed baking sheet and put the cake on top of the rack. Pour the ganache over the cake and let it drip down over the sides so the entire cake is covered. Swipe once across the top with a clean, large offset spatula to create a smooth top. Refrigerate until set, about 30 minutes.
  • Hold a stencil or other tool with holes (such as a doily or a cooling rack) over the cake (do not lay it on the ganache; it will stick) and dust with more cocoa powder to create a decorative pattern. Serve immediately.

14 ounces bittersweet chocolate, chopped

1 teaspoon vanilla extract

Steps:

  • Make the cake: Prepare the cake mix as the label directs for a 9-by-13-inch cake. Bake; cool slightly in the pan, then invert onto a rack to cool completely.
  • Clean out the cake pan and line it with plastic wrap. Cut the cake in half lengthwise, then in thirds crosswise to make 6 rectangles. Using a serrated knife, slice each rectangle in half to make two layers. Arrange half of the pieces snugly in the cake pan. Crumble the remaining pieces and press tightly into 6 small balls; arrange 1 cake ball in the center of each cake rectangle in the pan.
  • Make the mousse: Heat the chocolate, butter, coffee and 1/4 cup water in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water), stirring, until melted. Remove the bowl from the pan; stir until cool. Reserve the simmering water. Fill a large bowl with ice water.
  • Whisk the egg yolks, 1 1/2 cups sugar and 2 tablespoons water in a separate large heatproof bowl. Set the bowl over the saucepan of simmering water and whisk until pale yellow, 6 to 8 minutes. Add the chocolate-coffee mixture and the vanilla and whisk until combined, about 2 minutes. Remove the bowl from the pan and set in the bowl of ice water; whisk until slightly cool but not thick, about 4 minutes.
  • Beat the egg whites and salt in a bowl with a mixer until foamy. Add 2 tablespoons sugar and beat until almost stiff; gently fold into the chocolate-yolk mixture to make a dark chocolate mousse. Spread 5 cups over the cake and cake balls. Freeze until firm on top, about 30 minutes.
  • Beat the heavy cream and the remaining 4 tablespoons sugar until soft peaks form; fold into the remaining mousse. Remove the cake from the freezer; spread with the light chocolate mousse, cover with plastic wrap and freeze until firm, at least 6 hours or overnight.
  • Make the chocolate shell: Stir the chocolate, heavy cream and 4 tablespoons corn syrup in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water) until melted. A spoonful at a time, spread half of the shell mixture over the frozen mousse. Return to the freezer.
  • Make the chocolate sauce: Add the remaining 1 tablespoon corn syrup and the butter to the remaining chocolate shell mixture. Microwave 30 seconds, then stir until glossy.
  • To serve the cake, beat the heavy cream with a mixer until foamy. Add the sugar and beat until soft peaks form. Remove the cake from the freezer; invert onto a baking sheet and unmold, then invert again onto a platter, chocolate shell-side up.
  • Cut the cake in half lengthwise using a warm knife, then cut into thirds crosswise to make 6 rectangles; cut each rectangle in half diagonally to make 2 triangles. Top each triangle with whipped cream, ice cream and the prepared chocolate sauce.

¼ cup brown sugar
7 tablespoons butter, melted
32 oz cream cheese, softened
4 oz semi-sweet chocolate chips
1 tablespoon cocoa powder
1 ½ cups sugar
2 teaspoons vanilla extract
4 eggs
1 ½ cups heavy cream
¼ cup powdered sugar
16 oz chocolate chips
2 cups heavy cream, hot

Steps:

  • Place cookies in plastic bag and crush them into a fine crumb using a rolling pin. Alternatively, a food processor can be used to crush the cookies.
  • Pour the cookie crumbs into a medium bowl with the melted butter and brown sugar. Mix until the crumbs take on the character of a coarse, wet sand.
  • Pour the crumbs into a 9-inch (23 cm) spring pan. Press the crumb firmly into the pan, making sure to coat the bottom evenly.
  • Once the crust has been formed, place it in the refrigerator to firm up.
  • Add cream cheese, melted chocolate, cocoa powder, and sugar to a large bowl and whisk, either by hand or with an electric mixer, until all the ingredients are incorporated.
  • NOTE: If mixing by hand, it is recommended to microwave the cream cheese slightly before whisking in order to soften it up.
  • Add vanilla extract and eggs, and continue to whisk until mixture is smooth and glossy.
  • In a separate bowl, combine heavy cream and powdered sugar. Whisk until the cream develops a mousse-y texture and soft peaks form.
  • Adding a small amount at a time, carefully fold in the whipped cream into the cream cheese batter, being careful not to let the air out of the fluffy mixture. Fold just until incorporated.
  • Once combined, pour the batter over the prepared cookie crust inside the springform pan. Use a spatula to smooth out the top. Give the pan a slight jiggle to release any large air bubbles that may be trapped in the batter.
  • Preheat oven to 300˚F (150˚C).
  • Place the filled pan on top of a sheet of aluminium foil and fold the foil up the sides on the outside of the pan. Then place the wrapped pan into a larger baking pan or dish lined with 2 paper towels at the bottom.
  • NOTE: The aluminium foil will keep water from seeping into the bottom of the pan and the paper towels ensure that the heat is distributed evenly along the bottom of the pan.
  • Fill the larger pan with about 1 inch (2 ½ cm) of hot water.
  • Bake at 300˚F (150˚C) for 60-70 minutes--checking every 15-20 minutes to add more hot water to the larger dish, as necessary.
  • Once out of the oven, immediately run a small sharp knife around the outside of the cheesecake to release it from the pan. Allow the cheesecake to cool completely before removing it from the pan.
  • Prepare the ganache by combining chocolate chips with hot cream. Stir until chocolate is completely melted and ganache is smooth and glossy.
  • Pour ganache evenly over the cooled cheesecake.
  • Refrigerate the ganache covered cake for 30 minutes before cutting and serving.

  • In a food processor, combine the crushed cookies and sugar; pulse twice to combine. With the food processor running on low, slowly add the melted butter until the mixture comes together.
  • Press the cookie mixture into the bottom of the prepared pan, allowing the crust to come up slightly on the sides, but not reaching the top of the pan. Place on a rimmed baking sheet and bake for 12 minutes. Remove from the oven, then reduce the oven temperature to 350 F.
  • Melt the milk and chocolate in a small saucepan over medium heat, stirring frequently. Stir in the espresso powder and vanilla, then remove the mixture from the heat.
  • In a large mixing bowl, beat the cream cheese and sugar on medium speed with an electric hand mixer until fully combined, scraping down the sides and bottom of the bowl several times to ensure an even texture. (Alternatively, you can use an stand mixer for this.)
  • Add the eggs, one at a time, beating after each addition.
  • Add the chocolate mixture and mix again on low until fully combined.
  • Pour the batter over the prepared crust, spreading it into an even layer, then place on the baking sheet. Bake until the center is only slightly jiggly and the outside edges look set, about 30 to 40 minutes.
  • Turn off the oven and open the oven door slightly. Allow the cake to cool in the oven for 1 hour. This helps prevent cracking during cooling.
  • Remove the cheesecake from the oven and place on a wire rack to finish cooling completely. Once cool, cover with plastic wrap and refrigerate while you make the mousse.
  • Whisk together the egg yolks and sugar in a large bowl until light and frothy, about 1 minute.
  • Heat 3/4 cups of the cream in a small saucepan over medium until it begins to steam. Remove from the heat and add the chocolate, stirring until melted completely. Allow this mixture to cool slightly, about 3 minutes.
  • Very slowly whisk the chocolate mixture into the egg yolk mixture until fully combined. Set aside to cool until just barely room temperature, about 30 minutes.
  • In another large bowl, beat the egg whites with an electric hand mixer on medium speed until stiff peaks form. Fold about 1/3 of the egg whites into the chocolate mixture with a rubber spatula to loosen it-do not worry too much about losing any of the air from the egg whites.
  • Fold in the remaining egg whites until only a few white streaks remain (careful not to overmix).
  • Using the bowl the egg whites were in, beat the remaining cream on medium speed until stiff peaks form. Fold this whipped cream into the chocolate mixture until no streaks remain.
  • Remove the cheesecake from the refrigerator and top with the chocolate mousse. Cover and chill the mousse cheesecake for at least 6 hours or overnight.
  • Release the chilled cheesecake from the springform pan, then slice and serve. Top with whipped cream, if desired.

I created this out of necessity. I didn't have enough chocolate mousse for a pie and I didn't have enough cream cheese for a cheesecake. I loved how light and creamy it came out, so I decided to post it.

1 chocolate graham wafer pie crust
1 (3 1/8 ounce) box chocolate mousse mix
1 cup milk (or whatever your mix requires)
8 ounces cream cheese, softened
1/2 cup confectioners' sugar
1 cup chocolate chips (optional)

Steps:

  • In a medium bowl, whip together cream cheese and confectioners' sugar until light and smooth.
  • In a large bowl, prepare chocolate mousse mix with milk, as directed on package.
  • Gently fold cream cheese mixture into mousse, until mixture is no longer streaky.
  • Sprinkle the bottom of pie crust with some of the chocolate chips, if using.
  • Spoon mousse mixture into pie crust and decorate with remaining chocolate chips.
  • Refrigerate for 2 hours before serving.
  • Store in refrigerator.

14 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped.
1 1/4 cups chilled whipping cream
1 teaspoon ground cinnamon
1/4 cup Grand Marnier or other orange liqueur
6 large eggs
1/2 cup (packed) golden brown sugar

Steps:

  • Preheat oven to 350°F. Butter and flour twelve 3/4-cup custard cups. Stir chocolate in bowl set over simmering water until smooth. Remove from over water. Cool to lukewarm, about 10 minutes.
  • Using electric mixer, beat cream and cinnamon in medium bowl until soft peaks form. Add liqueur; beat until still peaks form. Beat eggs and brown sugar in large bowl until very light, about 5 minutes. Gradually beat chocolate into egg mixture, then fold in cream mixture.
  • Divide batter among prepared cups. Set cups in large roasting pan. Add enough hot water to pan to come halfway up sides of cups. Bake until tops of cakes look dry and tester inserted into center comes out with moist crumbs attached, about 18 minutes. Transfer cups to racks; cool cakes completely.
  • Cut around cakes to loosen. Turn cakes out onto plates.
