ULTIMATE LEMON POPPY SEED BREAD
This is one my favorite breads! It's rich, so I don't make it very often, but so wonderful! It makes very nice gifts! ;) (Makes 2 nice-sized loaves.)

Steps:
- Preheat oven to 325 degrees.
- Coat 2 (8 1/2" x 4 1/2" x 2 1/2") loaf pans with butter-flavored cooking spray.
- In the bowl of an electric mixer, (I use my kitchen aid one), cream the butter and sugar together until light and fluffy.
- Beat in eggs one at a time. Scrape sides and bottom every so often with a rubber spatula.
- Add the lemon juice, lemon rind and vanilla and beat until combined.
- In another bowl, combine the flour, poppy seeds, baking powder and salt. I usually just mix this well with a whisk to combine evenly.
- Add to the egg mixture and stir until just moistened.
- Divide the batter between the 2 prepared pans.
- Bake about 1 hour, until golden brown and a toothpick inserted in the center comes out clean. Cool in pans 10 minutes.
- Invert onto wire racks.
- Cool further til wrappable with plastic wrap without any steam. Wrap tightly to keep fresh and moist.

LEMON BLUEBERRY POPPY SEED BREAD
This recipe is from a collection of recipes from the labels of food products. I don't really know what label it originally came from. It has a very light cake like texture. I like to make it for spring and summer. It is very lemony and sweet but light. You should use a muffin mix that includes a can of berries for the best result.

Steps:
- Preheat oven to 350 degrees. Grease and flour a 8 inch loaf pan.
- Rinse blueberries from mix with cold water and drain.
- For Bread: Combine muffin mix and poppy seeds in medium bowl. Add eggs and water, stir until moistened. Fold in blueberries and lemon peel.
- Pour into prepared pan.
- Bake at 350 degrees for 1 hour or until toothpick comes out clean.
- Cool in pan 10 minutes before removing from pan to cool completely.
- For Glaze: Combine powdered Sugar and lemon juice, stir until smooth. Drizzle over loaf.
BANANA POPPY SEED QUICK BREAD
From a Dole pamphlet I've had sitting around since 1986! This is a nice twist on a standard banana bread or poppy seed bread. I love the light hint of lemon in the bread too with the lemon zest.

Steps:
- Mash bananas with a potato masher until all large pieces are broken down (or you can use a blender and puree the bananas) - you should receive about 1 cup of banana total. If not, then add enough banana to equal one cup.
- Cream together the sugar and butter until light and fluffy.
- Beat in eggs and grated lemon peel until blended.
- Combine the flour, baking powder, salt and cinnamon.
- Beat the bananas into the wet ingredients alternately with the dry ingredients -- repeating twice ending with dry ingredients.
- Hand stir in the poppy seeds.
- Pour into a well-greased (or sprayed) 9x5 inch loaf pan.
- Bake at 350* F for 50-60 minutes until pick inserted in center comes out clean. (The original recipe called for 60-70 minutes but mine is usually done before 60 minutes).
- Cool in pan for 10-15 minutes before turning out onto a wire rack to completely cool.

- squeeze juice from 2 lemons (you should get 1/3 cup). use the rinds to get your zest.
- combine all ingredients and mix.
- bake in an 8 inches loaf pan sprayed with cooking spray for 30 minute at 350.

- Preheat oven for 350F. In a large bowl combine the almond flour, coconut flour, baking soda, baking powder and salt. Mix well.
- In a medium bowl beat 3 eggs together with a fork. Add coconut milk, lemon juice, vanilla, lemon zest, honey and melted coconut oil. Mix well.
- Add the dry ingredients to the wet ingredients and mix until combined. Add the poppy seeds and mix till even throughout batter.
- Line a loaf pan with parchment paper, Pour the bread batter into the loaf pan and spread so the batter is even all around. Baked for 50-60 minutes or until a toothpick comes out clean when inserted into the centre of the loaf. The top of the loaf may be slightly browned on the rough edges of the bread when done.
