YEAST ROLLS
These Yeast Rolls are the perfect fluffy pull-apart dinner rolls for weeknights and holidays. So tender, buttery, and delicious, just like grandma used to make!

Steps:
- Dissolve the yeast in the warm water in a very large bowl, then stir in the sugar and let stand for 5 minutes.
- Stir in the egg, melted butter, and salt. Stir in as much of the flour as you can with a wooden spoon.
- Transfer the dough to a stand mixer fitted with a dough hook and mix on low speed for 6 to 8 minutes. Alternatively: You can turn the dough out onto a lightly floured surface and knead by hand until the dough is smooth and elastic.
- Shape the dough into a ball and place back in the lightly greased large bowl, turning one to cover the surface of the dough with grease. Cover with a clean hand towel and let rise in a warm place until the dough doubles in size, about 45 to 60 minutes.
- Punch the dough down and turn out onto a lightly floured surface, divide the dough in half and cover the dough back up with the cloth and let rest for 10 more minutes. Meanwhile, lightly grease two 9x13-inch pans. For Larger Rolls: Use a 15x10-inch pan and do not divide the dough.
- Divide each half of the dough into 12 pieces and shape the rolls by gently pulling each dough piece into a ball, tucking the edges under and arranging on the baking sheets. If you are making larger rolls, make 15 equally sized balls of dough.
- Cover the pans of rolls with hand towels and let rise in a warm place until the rolls have doubled in size, about 30 minutes.
- Preheat the oven to 350 degrees F and brush the tops of the rolls with melted butter. Bake for 15 to 18 minutes or until the tops are golden brown. Brush the rolls with more butter after removing from the oven. Best served within 24 hours.

- Sift together two cups of the flour with the sugar, salt, and stir in the yeast. With mixer at low speed, blend shortening or butter into the flour mixture. Add the hot water (the hottest it comes from your tap, all at once, with mixer running. Add the egg, and continue mixing. Add in the remaining two cups flour to make a soft dough. At this point, I changed my mixer beaters for dough hooks and let the mixer knead the dough for about ten minutes and then put it into an oiled bowl, cover with a towel and allow to rise in a warm spot until doubled, about two hours. Punch dough down. At this point it can either be refrigerated or shaped in rolls or loaves and allowed to rise a second time until doubled, usually about an hour. Bake in a preheated 375°F oven until barely brown. May be frozen after baking and reheated to serve.
FEATHERLIGHT ROLLS

- In a large bowl, dissolve yeast in warm water. Stir in 1 tablespoon sugar; let stand 5 minutes. Add the milk, shortening, eggs, salt, 3 cups flour and remaining sugar. Beat on medium speed 2 minutes. Stir in enough remaining flour to form a soft dough (mixture will be sticky). Do not knead. Cover and refrigerate overnight., Punch dough down. Turn onto a lightly floured surface; divide into 24 portions. Divide each portion into three pieces; shape each into a ball. Place three balls in each greased muffin cup. Cover and let rise in a warm place until doubled, about 1-3/4 hours. , Preheat oven to 350°. Bake 13-15 minutes or until golden brown. Remove from pans to wire racks. Serve warm.

BUTTERY YEAST ROLLS
These are the absolute best dinner rolls. They are light and fluffy and buttery. The dough can also be shaped in many other ways, so use your imagination. Makes awesome cinnamon rolls too!

Steps:
- Place all ingredients except the 1/4 cup butter into bread machine in the order recommended by the manufacturer.
- Select the dough cycle and start machine.
- Shape dough into 20 to 24 balls and place in buttered pan (s).
- Melt the 1/4 cup butter and brush it over the tops of rolls, saving the excess for brushing on after baking.
- Cover and let rise in a warm place about 1 hour, or until double in bulk.
- Bake at 375 degrees F for 15 to 18 minutes.
- Brush baked rolls with remaining butter.
- NOTE: This dough can also be divided into two portions and each rolled into a 12-inch circle; spread each circle with softened butter, cut into 8 wedges and roll up starting with wide end, to make crescents OR use this dough for cinnamon rolls or sticky buns.
UNBELIEVABLE ROLLS
Simple dinner rolls that are easy to make. Dough is also a great base for cinnamon rolls.

- In a medium saucepan over medium heat, warm milk, water, sugar and salt. Remove from heat, and mix in the eggs and yeast.
- Measure flour into a large bowl. Make a well in the flour, and pour milk mixture into it. Do not stir. Cover with a lid, and let stand for 20 to 30 minutes.
- Pour melted margarine into flour, and mix well. Add more flour if too sticky. Knead lightly. Cover, and let rise for 20 to 30 minutes.
- Shape the dough into rolls, and place on a baking sheet. Let rise again for 20 to 30 minutes.
- Bake rolls in a preheated 400 degrees F (205 degrees C) oven for 15 minutes, or until done.

LIGHT AND FLUFFY YEAST ROLLS
After a long attempt to recreate the infamous yeast rolls of O'Charleys, I was able to get close. This is the result of a few years of trying to find out how they do it. If you've never heard of the place, I guarantee you will still LOVE these rolls! (Note: I doubled this recipe and was able to make enough to feed two very hungry families over Thanksgiving... just so you know!)

- Mix together the warm water and yeast packet in measuring cup. Let it get good and foamy.
- Mix together the oil, boiling water, and sugar. Stir until sugar dissolves. Add the foamy yeast water, and then the beaten egg.
- Sift together the flour, baking powder and salt. Add about 1 cup of dry mix to the liquids at a time, and mix very, very well.
- Grease pan.
- Pinch dough into balls. Keep them small because they will still rise. Let rise 2 hours, or until just past doubled.
- Preheat oven to 400.
- Bake for 10-15 minutes, or until golden brown on top. Brush with melted butter fresh out of the oven, and serve warm.

- Preheat oven to 425.
- In a large bowl combine 1/2 of the flour with sugar, yeast and salt. Stir until mixed. In microwave heat milk until just under the boiling point. Pour into dry mixture. Melt butter, combine with water and add to flour mixture; stir until combined. Add remaining flour while stirring until dough leaves the sides of bowl and forms a ball. Turn dough out on a lightly floured board and knead in enough remaining flour until dough is smooth and elastic.
- Wash out bowl and grease inside with oil. Placedough in greased bowl to rise. Cover with plastic wrap and a towel. Run 2 inches of very warm water in sink. Place bowl in water to speed rising. Allow to rise for 15 minutes.
- Divide and shape dough as desired. Cover and let rise another 15 minutes. Bake at 425 degrees for 12-15 minutes or until golden brown.

GEORGINE'S FLUFFY ROLLS

- Combine milk, shortening, sugar, and salt in a saucepan and cook, stirring constantly, over medium heat until sugar dissolves. Remove from heat; set aside and allow to cool.
- Mix yeast with 1/4 cup lukewarm water in a large bowl; set aside until yeast dissolves and little bubbles begin to appear on the surface, about 10 minutes.
- Pour cooled milk mixture into yeast. Stir in eggs and gradually add flour, stirring with a wooden spoon until dough is too stiff to stir, then use your hands to knead in the flour (dough will be sticky, so grease your hands with a little butter). Brush a small amount of butter on the inside of a large bowl and on one side of a sheet of waxed paper. Place dough in bowl, cover with buttered waxed paper, and lay a clean damp dish towel on top. Set aside to rise until doubled, at least three hours.
- Turn dough out onto a lightly floured surface. Knead until elastic, then roll out to 1/2 -inch thickness. Cut dough with a 3-inch biscuit cutter, dip each round into melted butter, and fold in half. Line up, round edges up, sides touching, in a baking pan. Cover with buttered waxed paper and a towel, and set aside to rise, at least 2 1/2 hours.
- Preheat oven to 350 degrees. Bake until golden, about 15 minutes. Rolls are best served warm.
CLASSIC LIGHT ROLLS
This yeast dough is simple to make, but it needs to rise for about 3 hours total (before and after cutting into rounds), so plan accordingly.

- In the detached bowl of an electric mixer, whisk together the warm water, a pinch of sugar, and yeast. Let stand until mixture is foamy, about 6 minutes.
- Attach the bowl to electric mixer fitted with the dough-hook attachment. With machine speed on low, add milk, butter, remaining sugar, salt, and 2 lightly beaten eggs. Gradually add enough flour to form a sticky but manageable dough. Transfer the dough to a large buttered bowl; cover tightly with buttered plastic wrap. Let dough rise in a warm spot until doubled in bulk, about 2 1/2 hours.
- Line 1 large or 2 small baking sheets with parchment paper. Turn out dough onto a floured work surface. With a floured rolling pin, roll out dough to a 3/4-inch thickness. Using a 2 1/4-inch round cookie cutter, cut 24 rounds of dough as closely together as possible. Place rounds 1/4 inch apart on prepared baking sheet. Cover with buttered plastic wrap. Let rolls rise until they are light and do not spring back when pressed with your fingertip, about 30 minutes.
- Preheat oven to 350 degrees. Lightly beat remaining egg with the water. Brush mixture on tops of rounds; sprinkle with poppy seeds. Bake until rolls are golden brown, 20 to 23 minutes. Transfer to a wire rack to cool for at least 5 minutes. Serve warm.
