4 cups skim milk
1/2-1 cup Egg Beaters egg substitute
1/4 cup Splenda granular
3 tablespoons sugar-free instant vanilla pudding mix
2 teaspoons vanilla extract
1/2 teaspoon rum extract
1/2 teaspoon brandy extract
1/2 teaspoon ground nutmeg

Steps:

  • Place all of the ingredients in a blender, and blend for 30-60 seconds, or until smooth. Chill for several hours.
  • Shake or stir eggnog well to blend before serving. Serve in glasses or mugs with an additional sprinkle of nutmeg.
  • NOTES: You can use 6 packets of Equal instead of the Splenda Granular. If you'd rather not use artificial sweeteners, then substitute the Splenda with 1/4 cup sugar, and use 1/2 cup regular instant vanilla pudding instead of the 3 Tbsps sugar-free pudding.

2 cups nonfat milk
2 large strips orange and/or lemon zest
1 vanilla bean
2 large eggs plus 1 egg yolk
1/3 cup sugar
1 teaspoon cornstarch
White rum or bourbon (optional)
Freshly grated nutmeg, for garnish

Steps:

  • Combine 1 1/2 cups milk and the citrus zest in a medium saucepan. Split the vanilla bean lengthwise and scrape out the seeds; add the seeds and pod to the saucepan and bring to a simmer over medium heat. Meanwhile, whisk the eggs, egg yolk, sugar and cornstarch in a medium bowl until light yellow.
  • Gradually pour the hot milk mixture into the egg mixture, whisking constantly, then pour back into the pan. Place over medium heat and stir constantly with a wooden spoon in a figure-eight motion until the eggnog begins to thicken, about 8 minutes. Remove from the heat and immediately stir in the remaining 1/2 cup milk to stop the cooking. Transfer the eggnog to a large bowl and place over a larger bowl of ice to cool, then chill until ready to serve.
  • Remove the zest and vanilla pod. Spike the eggnog with liquor, if desired, and garnish with nutmeg.

Most grocery stores now sell fat free or light eggnog in the dairy section. You can substitute rum or rum extract for the brandy. Naughty taste but you've been nice!

2 cups fat free eggnog
1 teaspoon brandy or 1 teaspoon brandy extract
1/8 teaspoon nutmeg, freshly ground

Steps:

  • Beat pudding mix, eggnog and brandy together in a bowl with a wire whisk or hand-held mixer for two minutes.
  • Pour into four serving dishes and chill. Pudding will be soft-set and ready to eat within five minutes.
  • Garnish with nutmeg and serve!

7 cups nonfat milk, divided or 7 cups low-fat milk
1 pinch nutmeg (optional)
2 teaspoons vanilla or 2 teaspoons rum extract
sugar substitute (to taste)
1 cup fat-free evaporated milk

Steps:

  • In a bowl combine the pudding mix with 2 cups fat-free milk, tiny pinch nutmeg (if using) vanilla or rum extract and sugar substitute (to taste) mix on low speed using an electric mixture until thickened (adjust the sugar substitute to taste if needed).
  • Pour into a large container with a tight-fitting lid; add in 3 cups milk, cover with lid and shake vigorously.
  • Add in evaporated milk with remaining 2 cups milk and shake well again.
  • Chill and shake again before using.
  • Delicious!

12 eggs, separated
1 1/2 cups sugar
1 teaspoon nutmeg
1 quart whole milk (4 cups)
1 1/2 quarts heavy cream, divided (6 cups)
2 teaspoons vanilla extract
3 cups Bourbon
1/2 cup dark rum
2 cups cognac
1 quart vanilla ice cream, softened (or more, if desired)

Steps:

  • In a very large bowl, beat the egg yolks until thick and pale yellow. Gradually add the sugar and nutmeg, and beat until well mixed. Using a wire whisk, beat in the milk, 4 cups of heavy cream, vanilla extract, bourbon, rum, and cognac.
  • Before serving, beat the egg whites with a 1/4 cup of sugar until stiff, and fold into the egg mixture. Whip the remaining 2 cups of heavy cream, and fold into the egg mixture. Fold in the ice cream; gently stir to combine all ingredients.
  • Sprinkle individual servings with additional nutmeg.
  • NOTE: Eggnog can be refrigerated; however, the cream will rise to the top. Stir the mixture gently to recombine before serving. The amount of liquor can be adjusted to taste.

1/2 cup half-and-half cream
1/2 cup Egg Beaters egg substitute (or egg substitute)
1 -2 tablespoon sugar-free instant vanilla pudding mix
nutmeg
cinnamon
non-dairy whipped topping (optional)

Steps:

  • Mix milk, egg substitute and pudding together, adding a dash of spices.
  • For extra decadance, I add French Vanilla whip cream!
  • When drink is frothy, either pour into a cup, add another dash of nutmeg and enjoy,.
  • or refrigerate until cold.
  • I like to use an immersion blender to mix ("boat motor").
  • I also like to add hot chocolate mix to my egg nog, so I'll bet that chocolate pudding would be yummy too.
  • Be careful if heating for a hot drink - the eggs get a little curdled.
  • "Cook time" is chill time.

1 cup Splenda granular, no calorie artificial sweetener
1 tablespoon arrowroot or 1 tablespoon cornstarch
1 teaspoon ground nutmeg
7 egg yolks
4 cups milk
2 cups fat-free half-and-half
2 tablespoons vanilla extract

Steps:

  • Note - if you wish to use rum, use 1 cup (235 mL) dark rum in place of the 2 tablespoons of vanilla extract.
  • Mix together first 3 ingredients in a large heavy saucepan. Set aside.
  • Whisk egg yolks; add to SPLENDA® Granulated mixture whisking until blended. Gradually whisk in milk.
  • Cook over low heat, whisking constantly until the temperature reaches 175°, approximately (5 to 8 minutes). Remove from heat and whisk in half and half; cool.
  • Cover and chill 3 hours or up to 3 days. Stir in rum or vanilla just before serving.
  • 15 servings. Prep time : 20 minutes, cooking time: 5-10 minutes.
  • Land O' Lakes Fat Free Half and Half.
  • It looks and tastes like half and half, but it's made mostly of skim milk (and a little carrageenan for body) instead of half cream and half whole milk. That can revolutionize a typical Fettuccine Alfredo recipe, which could easily call for a quarter-cup (or more!) of heavy cream per serving, at the unsightly cost of 22 grams of fat, 14 of them saturated -- not including the butter or Parmesan cheese.
  • With Fat Free Half and Half, those numbers drop to zero, but the flavor doesn't budge.
  • You can also indulge in a tablespoon or two of Land O' Lakes for your coffee, macaroni and cheese, or mashed potatoes. You won't save as much because each tablespoon of whole milk or real half and half has only a gram or two of fat. But if you use two or three tablespoons per cup of coffee -- and drink two or three cups a day -- maybe a pint of Fat Free Half and Half belongs in your fridge.
