LESS SWEET PECAN PIE

Less Sweet Pecan Pie image

Sour cream and less sugar make for a not-too-sweet pecan pie. This recipe works best in a shallow pie dish such as a 9 inch aluminum kind or shallow metal.

Provided by Anna

Categories     Dessert

Number Of Ingredients 14

1 cup all-purpose flour (140)
2 teaspoons sugar
1/4 teaspoon salt
6 tablespoons unsalted butter, cold (85 grams)
1/4 cup sour cream (60 grams)
Filling
1 2/3 cups pecan halves
3 large eggs (room temperature)
1/2 cup sugar
1 cup dark corn syrup
1/4 cup sour cream (room temperature)
2 tablespoons butter (melted)
1/4 teaspoon salt
1 3/4 teaspoons vanilla extract

Steps:

  • Pulse the flour, sugar and salt together in a food processor to mix. Add chunks of butter and pulse until coarse. Add sour cream and pulse until mixed. It will still look crumbly, but it will be moist.
  • Turn mixture out onto a pastry mat and knead it all together with your hands. It should go from a powdery looking mixture to a firm mass. Using a bench scraper, scoop it up and wrap it in plastic. Chill for about an hour (this helps relax the gluten).
  • Remove dough from the refrigerator and let it stand for about 10 minutes so that it's not so stiff. On a floured surface, roll the dough into a circle big enough to cover a 9 inch pie pan. Line the pan with the dough and put the lined pan in the freezer until ready to use.
  • Preheat the oven to 400 degrees. Lay the pecan halves on a rimmed baking sheet and toast for about 7 minutes or just until they are aromatic.
  • Whisk the eggs, sugar and corn syrup together in a bowl, then whisk in the sour cream, melted butter, vanilla and salt. Add toasted pecan halves.
  • Pour mixture into the pie shell and set on a baking sheet.
  • Bake at 400 for 10 minutes, then reduce heat to 350 and bake for 35 minutes or until filling appears set. Cover the pie loosely with a sheet of foil during the last 15 minutes of baking to prevent the crust from getting too brown.
  • Let the pie cool completely, then chill for a few hours. Bring back to room temperature and serve. Alternatively, you can skip chilling, but the pie will be softer. You can also freeze the pie, then bring it back to room temperature before serving.

PECAN PIE - MORE PECANS, LESS SUGAR!

Pecan Pie - More Pecans, Less Sugar! image

Pecan Pie is a southern favorite. But every pecan pie I tasted was way too sweet. I found this recipe years ago in a magazine. My husband won't eat any other pecan pie, anywhere. This recipe is has the traditional pie filling, but not sickeningly sweet and it is loaded with pecans! I am asked to bring it to every family gathering. Enjoy!

NOT SO SWEET PECAN PIE

Not So Sweet Pecan Pie image

I am not really fond of most pecan pies as they always seem too sweet. I found this recipe somewhere and I always use it when making pecan pie. Much better than the pecan pie filling from Williams Sonoma for sure. And there is a variation for my Royal Hawaiian Pie posted at the bottom of this recipe.

Provided by Pam Ellingson

Categories     Pies

Time 1h5m

Number Of Ingredients 7

1 unbaked pie shell
1/4 c butter, room temperature
1/2 c sugar
1/2 c corn syrup, dark
1/4 tsp salt
3 large eggs
1 c pecan halves

Steps:

  • 1. Preheat oven to 350°F. In a medium mixing bowl, cream butter and sugar together well.
  • 2. Add dark corn syrup and salt and beat well.
  • 3. Add eggs, one at a time, mixing well after each addition. Stir in pecans.
  • 4. Pour into unbaked pie shell and bake at 350° for 50 minutes. Cool
  • 5. For Royal Hawaiian Version: Proceed as for Pecan Pie but substitute for the pecans: 1/2 c. lightly toasted coconut (Flaked or shredded) and 1/2 c coarse chopped Macadamia Nuts.

SWEET POTATO PIE WITH PECANS

Sweet Potato Pie with Pecans image

This sweet potato pie has a crunchy texture from toasted pecan halves and is packed with citrus flavor thanks to zest and orange liqueur. It's also bursting with warming holiday spices like cinnamon, nutmeg and vanilla. You can cook the sweet potatoes in the microwave or roast them in the oven. Opting for store-bought refrigerated pie dough (from a 14- to 16-ounce package) makes this pie a breeze to assemble, but I've also given you a recipe for a great homemade version.

Provided by Vallery Lomas

Categories     dessert

Time 3h

Yield 8 servings

Number Of Ingredients 21

One store-bought refrigerated pie crust (from a 14- to 16-ounce package) or Flaky Pie Crust, recipe follows
1 1/4 cups (150 grams) all-purpose flour
1 teaspoon granulated sugar
1/4 teaspoon kosher salt
1 stick (1/2 cup) cold unsalted butter, cut into 1/2-inch pieces
3 to 4 tablespoons cold water
1 tablespoon apple cider vinegar
1/2 cup pecan halves
All-purpose flour, for dusting
3 medium sweet potatoes (about 1 pound)
4 tablespoons unsalted butter, melted
1 cup evaporated milk
1/2 cup granulated sugar
1/3 cup packed light or dark brown sugar
3 large eggs
2 tablespoons orange liqueur
1 tablespoon pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/4 teaspoon freshly grated nutmeg
Zest of 1/4 orange

Steps:

  • For the flaky pie crust: Add the flour, sugar and salt to the bowl of a food processor. Pulse until the mixture is combined. (Alternatively, you can use a large bowl and a pastry blender.)
  • Add the butter and pulse until most of the butter is broken into pea-size pieces, about 15 pulses.
  • Add 3 tablespoons of the cold water to a small cup. Add the apple cider vinegar. Pour the liquid over the crumbly flour-butter mixture. Pulse until it looks like cottage cheese and there are no large pockets of flour.
  • Tip the mixture onto your work surface and gather the dough into a disc. Wrap the disc tightly in plastic wrap and let rest in the refrigerator for at least 1 hour and up to 3 days. It can also be frozen for up to 2 months.
  • For the sweet potato pie: Preheat the oven to 350 degrees F. Put the pecans in a single layer on a baking sheet and toast until they are browned and fragrant, about 7 minutes.
  • When ready to use, roll the store-bought refrigerated pie crust or homemade Flaky Pie Crust dough into an 11-inch-wide round on a lightly floured surface. Transfer to a 9-inch pie plate and lightly press into the pan. Crimp the edge as desired and set aside.
  • To cook the sweet potatoes in the microwave (the quicker method), prick them with a fork all over. Microwave on high for 5 minutes. Flip and microwave for an additional 5 minutes. Check to see if they are ready by piercing the flesh with a fork. If it pierces the easily, they are ready. If it doesn't, continue to microwave in 2-minute intervals until tender. (Take care not to overcook or they will dry out.) Alternatively, the sweet potatoes can be pricked all over with a fork, wrapped in foil and roasted in the oven at 375 degrees F for 60 minutes.
  • Once the sweet potatoes are tender, carefully cut into quarters so the steam can escape. Once cool, remove the skin and refrigerate until ready to use.
  • Mash the cooked sweet potatoes and measure 2 packed cups of flesh (reserve any extra sweet potato for another use). Add the mashed sweet potato and melted butter to the bowl of a food processor. Pulse until combined. Scrape the bottom and sides of the bowl with a rubber spatula.
  • Add the evaporated milk, granulated sugar, brown sugar, eggs, orange liqueur, vanilla, cinnamon, salt, nutmeg and orange zest to the food processor. Pulse until combined, about 10 times. Scrape the bottom and sides of the bowl with a rubber spatula. Pulse a few more times to incorporate everything.
  • Stir in the toasted pecan halves with a rubber spatula. Pour the filling into the pie shell and bake until puffed in the center, slightly jiggly when shaken and set around the edges, 50 to 55 minutes.
  • Let cool on a wire rack until it firms up and deflates a little. Once room temperature, transfer the pie to the refrigerator to chill and set completely. Store the pie in the refrigerator, covered, for up to 3 days.
