LENTIL SOUP WITH MUSTARD OIL AND TOMATO-CHIVE TOPPING

Yield Makes 6 servings

Number Of Ingredients 16

3 tablespoons vegetable oil
2 large celery stalks, chopped
1 cup chopped onion
1 small carrot, chopped
2 garlic cloves, chopped
1 tablespoon chopped peeled fresh ginger
4 whole cloves
1 1/2 teaspoons cumin seeds
1 1/2 teaspoons whole coriander seeds
1 small dried chili (such as chili de árbol*), broken in half
7 large plum tomatoes, 4 coarsely chopped, 3 finely chopped
1/4 teaspoon ground turmeric
5 cups canned vegetable broth
1 1/2 cups red lentils**
1/3 cup chopped chives
2 tablespoons mustard seeds

Steps:

  • Heat 1 tablespoon oil in heavy large pot over medium heat. Add next 9 ingredients; sauté until vegetables begin to brown, about 12 minutes. Add 4 coarsely chopped tomatoes and turmeric; stir 2 minutes. Add broth and lentils; bring to boil. Reduce heat to medium-low; cover and simmer until lentils are very tender, about 45 minutes. Season with salt and pepper. Puree soup in batches in blender. Return to pot. (Can be made 2 days ahead. Chill until cold, then cover and keep chilled. Rewarm soup before continuing.)
  • Mix 3 finely chopped tomatoes and chives in bowl. Heat 2 tablespoons oil in heavy medium saucepan over medium-high heat. Add mustard seeds; cook until seeds darken and begin to pop, about 2 minutes. Pour into small bowl.
  • Ladle soup into bowls. Top with mustard oil and tomato-chive mixture.
  • *Available at Latin American markets and some specialty foods stores.
  • **Available at Indian markets and some supermarkets. If unavailable, use green lentils and simmer about 30 minutes.

1/2 lb dry lentils, rinsed
3/4 cup raw pearl barley or 3/4 cup pot barley, rinsed
6 cups water
1 tablespoon olive oil
1 large onion, chopped
1 clove garlic, minced
2 large celery ribs, diced
2 medium carrots, peeled and sliced
1 cup shredded white cabbage
1 (28 ounce) can diced tomatoes, undrained
1/4 cup dry red wine
1 tablespoon apple cider vinegar
1/4 cup chopped fresh parsley
2 teaspoons salt free herb and spice seasoning mix
salt
fresh ground pepper

Steps:

  • Combine the lentils and barley in a large soup pote with the water and bring to a simmer.
  • Add all the remaining ingredients except the salt and pepper, then return to simmer gently, covered until everything is tender about 45-55 minutes.
  • Stir occasionally and add more water if the soup becomes too thick.
  • Season to taste with salt and pepper.
  • If time allows, let the soup stand for an hour or so before serving, then heat through as needed.

4 tablespoons unsalted butter
1 onion, chopped
1 (28 ounce) can whole peeled tomatoes, with liquid
2 (14.5 ounce) cans chicken broth
2 cups dry brown lentils
½ cup red wine
4 cloves garlic, minced
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves

Steps:

  • Melt the butter in a large pot over medium high heat. Place the onions in the pot and saute for 10 minutes, or until onions are tender.
  • Place the tomatoes in a food processor or blender and puree until smooth. Pour this into the pot with the onion along with the chicken broth and the lentils
  • Bring to a boil, reduce heat to low and let simmer for 20 minutes. Then, stir in the wine, garlic, nutmeg and cloves. Simmer for at least 25 more minutes.

1 1/2 cups dried lentils
5 cups water
1/2 cup onion, chopped
1 garlic clove, minced
1 tablespoon butter
2 teaspoons salt
1/8 teaspoon pepper
2 teaspoons sugar
1/4 teaspoon dried oregano leaves
1/4 teaspoon dried leaf basil
1 tablespoon fresh parsley, chopped
1 (16 ounce) can tomatoes, undrained, diced
3 tablespoons tomato paste

Steps:

  • Sort and rinse lentils.
  • In a large saucepan, combine rinsed lentils and water.
  • In a small frying pan, or skillet, saute onion and garlic in the butter until onion is tender but not browned.
  • Add onion and garlic to lentils.
  • Stir in salt, pepper, sugar, Oregano, basil and parsley.
  • Bring to a boil; reduce heat.
  • Cover and simmer until the lentils are tender, about 45 minutes.
  • Add tomatoes and tomato paste.
  • Stir well.
  • Simmer 15 minutes longer.
  • Garnish each bowl with a parsley sprig, if desired.

50 g butter
50 g flour
2 tablespoons Dijon mustard or 2 tablespoons English mustard
450 ml milk
salt and pepper
3 tablespoons finely snipped chives

Steps:

  • Melt the butter in a small pan and stir in the flour.
  • Remove from the heat and stir in the mustard.
  • Return the pan to the heat and gradually incorporate the milk, beating with a spoon as it comes up to a boil.
  • Season with salt and pepper and let simmer gently, uncovered, for 10-15 minutes.

Steps:
