These vegan sloppy joes have the most delicious tangy sauce and meaty lentil filling! This easy to make and freezer-friendly meal is perfect for Meatless Monday and it's kid-approved!

1 cup uncooked green lentils ((rinsed and drained))
1 cup uncooked red lentils ((rinsed and drained))
3-4 tbsp low-sodium vegetable broth
1 medium red onion (diced)
2 medium red bell peppers (diced)
4 garlic cloves (minced)
3 tbsp tomato paste
2 tbsp chili powder
1 tbsp smoked paprika
1/4 tsp sea salt
1 tsp vegan worcestershire sauce
2 tbsp maple syrup
2 tbsp balsamic vinegar
1/2 cup ketchup
1 cup water
8 burger buns

Steps:

  • Cook the green lentils (rinsed and drained) according to package instructions. Halfway through, add the red lentils, stir to combine, and let both lentils finish cooking together in the same pot.
  • (Do this step while the lentils are cooking.) In a large pan, saute the diced onion and bell peppers in vegetable broth over medium heat until the onions are soft and translucent.
  • Add the minced garlic, chili powder, smoked paprika, tomato paste, and salt. Stir to combine and let the mixture cook for 2-3 minutes or until fragrant. You might need to add a splash of water if the mixture gets to dry and it's sticking to the pan.
  • Add the maple syrup, vegan Worcestershire, balsamic vinegar, ketchup, and water. Stir to combine and let it cook for 2-3 minutes so the flavors begin to meld together.
  • Add the cooked lentils to the pan, stir everything together, and reduce the heat to medium-low and let it cook for 15 minutes. Spoon the filling into vegan burger buns and enjoy!

1 cup green du Puy lentils (see Cook's Note)
1 1/2 teaspoons kosher salt
1 tablespoon olive oil
1 yellow onion, diced (about 1 1/2 cups)
1 green bell pepper, diced (about 1 cup)
3 cloves garlic, minced
One 4-ounce can chopped green chiles
One 8-ounce can tomato sauce
1/2 cup ketchup, preferably organic
1 tablespoon Dijon mustard
1 tablespoon dark brown sugar
1 tablespoon vegan Worcestershire sauce
1 tablespoon chili powder
2 teaspoons apple cider vinegar
1/2 teaspoon ground celery seed
1/2 teaspoon freshly ground black pepper
4 tablespoons unsalted butter, at room temperature
8 potato hamburger buns
Sliced avocado, for serving
Sweet pickle chips, for serving

Steps:

  • Place the lentils in a medium saucepan and cover with water. Bring to a boil. Add 1 teaspoon salt. Reduce the heat to low and simmer until tender, about 30 minutes. Drain.
  • Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and saute until the onions are translucent and the pepper is tender, 7 to 8 minutes. Add the garlic and green chiles and cook about 1 more minute. Stir in the tomato sauce, ketchup, Dijon, brown sugar, Worcestershire, chili powder, vinegar, celery seed, black pepper, remaining 1/2 teaspoon salt and 1/2 cup water. Mix well, then add the lentils. Reduce the heat to low; cover and simmer, stirring occasionally, about 15 minutes.
  • Butter both sides of the hamburger buns. Toast on a hot cast-iron griddle or skillet until lightly browned, 2 to 3 minutes.
  • Serve sloppy joes on toasted buns, topped with sliced avocado and pickles on the side.

5 Tbsp veggie broth
1 small onion, diced
1 small red bell pepper, diced
2 stalks celery, diced
1 tsp ground cumin
1 tsp chili powder
1 cup lentils
1 cup bulgur wheat, cooked
3 ½ cups water
1 15 oz can tomato sauce
4 Tbsp tomato paste
1 Tbsp hoisin sauce
1 tsp salt
1 tsp garlic powder
2 tsp balsamic vinegar

Steps:

  • In large cooking pot, saute diced onion, celery, and red bell peppers in veggie broth approximately 5 minutes.
  • Add cumin, chili powder, garlic powder, and salt.
  • Then add lentils, bulgur, water, tomato sauce, tomato paste, balsamic vinegar, and hoisin sauce. Increase heat to medium high and bring to a boil.
  • Once boiling, turn heat down to low and cook uncovered about 30 minutes, stirring occasionally.
  • Taste lentils to make sure they are tender. Serve on whole grain buns with favorite toppings.

1 cup bulgur
1 cup finely chopped onion
½ cup finely chopped green bell pepper
½ cup finely chopped celery

1¾ cups oil-free barbecue sauce
1 Tbsp. reduced-sodium soy sauce or tamari
Sea salt, to taste
Freshly ground black pepper, to taste
3 whole grain pita bread rounds

Steps:

  • In a small saucepan bring 2 cups water to boiling. Stir in bulgur. Return to boiling; remove from heat. Cover and let stand at least 15 minutes. Drain off any remaining liquid.
  • Meanwhile, in a large skillet cook onion, bell pepper, and celery over medium 7 to 8 minutes, stirring occasionally and adding additional water, 1 to 2 Tbsp. at a time, as needed to prevent sticking. Add garlic; cook 1 minute or until softened.
  • Stir in bulgur, barbecue sauce, and soy sauce. Reduce heat to medium-low. Cook 10 minutes.
  • In a dry skillet heat pita rounds, one at a time, on both sides until warm. Cut in half crosswise and fill with bulgur mixture.

1 cup uncooked lentils
4 cups boston lager beer or 4 cups dark ale beer
1 tablespoon olive oil
1 medium yellow onion, diced small
1 green pepper, diced small
2 garlic cloves, minced
2 teaspoons chili powder
1 teaspoon smoked paprika
1 teaspoon ground mustard
1 (15 ounce) can crushed fire-roasted tomatoes
3 tablespoons tomato paste
1 tablespoon apple cider vinegar
1 1/2 tablespoons maple syrup
1/2 teaspoon sea salt
1/4 teaspoon black pepper
4 whole wheat hamburger buns

Steps:

  • Put the lentils in a small sauce pot and pour in 4 cups beer. Cover and bring to a boil. Once boiling, lower heat and simmer for about 20 minutes, until lentils are soft. Drain and set aside.
  • About 10 minutes before the lentils are done boiling, preheat a medium sauce pan pot over medium heat. Saute the onion and pepper in the oil (~ 7 minutes), until softened.
  • Add the garlic and saute a minute more.
  • Add the cooked lentils, and the the rest of the spices (except the maple syrup & dried mustard). Stir gently until just combined.
  • Add the tomato sauce and tomato paste. Cook for about 10 minutes.
  • Add the maple syrup and mustard and heat through.
  • Turn the heat off and let sit for about 10 minutes, so that the flavors can meld, or go ahead and eat immediately if you can't wait. I like to serve these open faced, with a scoop of sloppy joe on each slice of the bun.

1/4 medium onion, minced
1/4 red bell pepper, minced (or green)
1 garlic clove, minced

1 tablespoon vegan worcestershire sauce (like Annie's or use regular Worcestershire sauce if desired)
2 teaspoons balsamic vinegar

Steps:
