3/4 cup lentils, cooked (below), drained, and cooled
4 tablespoons olive oil
1 large egg
Yogurt-Cilantro Sauce

Yogurt-Cilantro Sauce (opposite), for serving (optional)

Steps:

  • In a food processor, combine walnuts, breadcrumbs, garlic, cumin, coriander, pepper flakes, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper; process until finely ground. Add lentils and 1 tablespoon oil; pulse until coarsely chopped (some lentils should remain whole).
  • In a large bowl, whisk egg. Add lentil mixture; mix well. Divide into 4 equal-size parts; roll into balls, and flatten with the palm of your hand into 3/4-inch-thick patties.
  • Heat remaining 3 tablespoons oil in a large nonstick skillet. Add burgers; cook over medium-low heat until crisp and browned, turning gently with a thin-edged spatula, 8 to 10 minutes per side. Transfer to a paper-towel-lined plate to drain. Serve with Yogurt-Cilantro Sauce, if desired.

1 cup brown lentils
2 tablespoons olive oil
3/4 cup finely chopped carrot
1/3 cup finely chopped shallot
1/3 cup finely chopped celery
1/4 cup sliced almonds
1 teaspoon chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 large egg yolk
1 tablespoon lemon juice

Steps:

  • Bring water to a boil, stir in lentils and simmer until very tender, about 25 minutes, or 30 minutes for green lentils. Drain.
  • Meanwhile, heat 1 tablespoon oil in a skillet. Add carrots, shallots and celery and cook until soft, about 3 minutes.
  • Add almonds, thyme, salt and pepper. Cook a couple more minutes.
  • Transfer to a food processor and add 1 cup of the cooked lentils. Pulse several times until coarsely ground.
  • Transfer to large bowl and add rest of the lentils. Cool 10 minutes. Stir in yolk and lemon juice.
  • Cover and chill one hour.
  • Form into 5 patties. Heat remaining tablespoon oil in large skillet medium high. Cook patties about 4 minutes, flip and cook until lightly brown and heated through.
  • Serve immediately.

¼ cup roasted sunflower seeds
1 cup chopped mushrooms
¼ cup almond flour
2 minced or crushed garlic cloves
2 tablespoons chopped onion
1 tablespoon olive oil
½ teaspoon sea salt
¼ teaspoon ground black pepper

Steps:

  • Preheat your oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • Combine the lentils, egg, sunflower seeds, mushrooms, almond flour, garlic, onion, olive oil, salt, and pepper in the base of a food processor.
  • Process on high for about 45 seconds, stopping once or twice to scrape down the sides. The lentils should be broken down almost completely.
  • Transfer the mixture to a mixing bowl and then use your hands to form six patties. Don't worry if the mixture is very wet, it will firm up as it bakes.
  • Place the baking sheet in the oven for 35 minutes or until the tops are golden brown, flipping the patties once during the baking process.
  • After 35 minutes, remove the baking sheet and let the patties cool for a few minutes before serving.

2 cups cooked brown lentils or 2 cups green lentils
1 cup mashed potatoes
1 cup crumbled brown bread
1/4 cup sesame seeds
1/4 cup sunflower seeds
1/4 cup finely chopped almonds or 1/4 cup cashews
1 garlic clove, crushed
1 onion, finely chopped
1 bunch fresh herb (e.g. basil, oregano, parsley, etc.)
salt and pepper
oil (for frying)

Steps:

  • Mix potato and lentils well.
  • Add the breadcrumbs, sesame and sunflower seeds, nuts, onion and garlic.
  • Finely chop the herbs and add to the mixture with salt and pepper.
  • Mix everything together.
  • Divide into portions and form into burger shapes.

Steps:

  • take one cup of dry lentils put into a pot and add 3-4 cups of water, boil vigoursly at high heat for 10 minutes the turn down to minimum heat and boil for another 20 minutes. A little bit of olive oil and finely chopped garlic can be added to the water.
  • Drain the lentils and put on a frying pan at medium heat, let the water evaporate then add a little bit of canola or olive oil. Add the rest of ingredients - 2 cloves of finely chopped garlic, mustard, oregano, paprika, salt and pepper. Fry/heat for 10 minutes.
  • Take lentils and put into a big bowl and add an egg, then make little patties and fry them, or as a vegan altenative they can be eaten as a side dish or added to tacos without the egg. It will be a little more crummy but still good.

2 stalks celery, diced
1 large onion, diced
3 cups beef stock or broth, plus more if needed
One 14.5-ounce can whole tomatoes
3 tablespoons tomato paste
2 teaspoons dried parsley flakes
1/2 teaspoon ground oregano
1/2 teaspoon kosher salt, or more to taste
1/2 teaspoon freshly ground black pepper, or more to taste
1/4 teaspoon cayenne pepper, or more to taste
5 red potatoes, cut into chunks
4 carrots, peeled and sliced on the diagonal
1 green bell pepper, seeded and diced
1 red bell pepper, seeded and diced
1 yellow bell pepper, seeded and diced
Crusty bread, for serving

Steps:

  • In a large pot over medium-high heat, brown the meat with the garlic, celery and onions. Remove the pot from the heat and drain off as much fat as you can. (Discard the fat once it cools.)
  • Return the pot to the heat and add the beef stock, tomatoes, tomato paste, parsley, oregano, salt, black pepper, cayenne, potatoes, carrots and green, red and yellow bell peppers. Stir to combine, then bring to a boil. Reduce the heat, cover the pot and simmer until the potatoes are tender but not overly mushy, 15 to 20 more minutes. The soup should be somewhat thick, but if you'd like it to be more "soupy," add 1 to 2 cups more broth OR hot water and heat through. Taste and adjust the seasonings, adding more salt, black pepper or cayenne if needed.
  • Serve with crusty bread!

8 ounces fresh baby spinach
2 large cloves garlic, minced
Freshly ground black pepper
1/2 teaspoon ground cumin
1 cup whole-wheat breadcrumbs
1/2 cup walnuts, toasted and finely chopped
Cooking spray
6 whole-grain vegan hamburger buns
Baby arugula, basil, roasted red bell peppers and spicy mustard, for serving, optional

Steps:

  • Bring the lentils and 1 3/4 cup of the broth to a boil in a medium saucepan over high heat. Reduce heat to medium-low, partially cover and simmer until the lentils are fully softened and the liquid is absorbed, about 30 minutes. Transfer to a medium bowl with the remaining 1 tablespoon broth and mash well with a potato masher. Set aside.
  • Heat the oil in a large nonstick skillet over medium heat. Add the chopped onion, lemon juice and 1/4 teaspoon salt and cook, stirring, until softened, about 6 minutes. Add the spinach, garlic, 1 1/2 teaspoons black pepper and cumin and stir until the spinach is wilted, about 3 minutes.
  • Add the spinach mixture, breadcrumbs, walnuts and 3/4 teaspoon salt to the lentils and mix thoroughly. Cover and refrigerate for at least 1 hour or overnight.
  • Preheat the grill to medium-high. Form the mixture into six 4-inch patties and spray with cooking spray on each side. Grill until nice grill marks form, about 3 minutes per side. Place the patties in the buns with the sliced onion and other toppings, as desired, and serve.

  • Cook lentils in stock until just cooked and drain well. Set aside to cool slightly.
  • Sweat onion, garlic, chilly and mushrooms for 5 minutes then add hazelnuts and cook for further 2 minutes.
  • Put onions, garlic, chilly, mushrooms and hazelnut mixture in a bowl and add cheddar and dried herbs and lentils and mix well.
  • Mix in the egg.
  • Blend in enough breadcrumbs to ensure a firm mixture.

  • Allow mixture to set 5-10 minutes so the oats soak in some of the liquid (you can also do this after you shape into patties). This will help with the texture of the burgers, the more you allow the oats to soak, they less mushy texture you will get. I use this time to clean up.
  • Shape into 6 patties, then cook in a pan on the stove top over medium heat for 6-8 minutes on each side (depending on stove). Make sure to keep the pan covered to help the burger cook throughout and achieve the best texture possible. This helps prevent a mushy burger. Check every few minutes to prevent burning, they should be slightly browned when ready.
