3 cans (14-1/2 ounces each) reduced-sodium chicken broth
1 small onion, finely chopped
1 tablespoon olive oil
1-1/2 cups uncooked arborio rice
2 teaspoons grated lemon zest
1/2 cup dry white wine or additional reduced-sodium chicken broth
3 cups chopped fresh broccoli
1/3 cup grated Parmesan cheese
1 tablespoon lemon juice
2 teaspoons minced fresh thyme

Steps:

  • In a large saucepan, bring broth to a simmer; keep hot. In another large saucepan heat oil over medium heat. Add onion; cook and stir until tender, 3-5 minutes. Add rice and lemon zest; cook and stir until rice is coated, 1-2 minutes. , Stir in wine. Reduce heat to maintain a simmer; cook and stir util wine is absorbed. Add hot broth, 1/2 cup at a time, cooking and stirring until broth has been absorbed after each addition, adding broccoli after half the broth has been added. Cook until rice is tender but firm to the bite, and risotto is creamy. Remove from heat; stir in cheese and lemon juice. Sprinkle with thyme. Serve immediately.

This is a great, company-worthy meal that makes an instant dinner party pretty much straight from the pantry and freezer (so you can always have these ingredients on hand).

3 tablespoons (45 grams) butter, divided
8 garlic cloves, chopped
1 pound (454 grams) small wild shrimp, peeled, cleaned, and defrosted if frozen
Juice of 1 lemon (about 3 tablespoons/45 ml), divided
2 tablespoons (30 ml) olive oil
1 medium yellow onion, finely diced
1 teaspoon fine sea salt, divided
1 1/2 cups (270 grams) arborio rice
1/2 cup (120 ml) dry white wine that you like to drink
4 cups (945 ml) lower-salt seafood, chicken, or vegetable broth
10 ounces (284 grams) frozen chopped broccoli or petite florets, defrosted
1/2 cup (40 grams) grated parmesan or pecorino cheese
1/4 cup chopped flat-leaf parsley

Steps:

  • In a 12-inch nonstick pan or shallow Dutch oven, melt one tablespoon of the butter over medium-high heat.
  • Add garlic and cook, stirring, for 30 seconds to a minute, until very fragrant.
  • Add shrimp to pan in a single layer. Cook for about a minute on one side, until becoming opaque, then flip and heat the other side until just cooked through. Sprinkle with about a tablespoon of the lemon juice and stir.
  • Remove from pan and reserve.
  • Heat the remaining two tablespoons butter and the olive oil over medium-high in the same pan.
  • Add onion and 1/2 teaspoon of the salt and cook, stirring occasionally, until softened, about 5 minutes.
  • Add rice, stir well to coat with butter and oil, and cook for a minute.
  • Pour in wine and stir to incorporate. Simmer, stirring frequently, until almost evaporated.
  • Add broth by the cupful, continuing to stir frequently and adding more as it absorbs. Add the remaining 1/2 teaspoon salt during this process.
  • Stir in broccoli as you add the last cup of broth.
  • Stop cooking when there's still a bit of thick broth remaining and the rice is tender but with the tiniest bite in the center of the grain. In the last minute or so of cooking, stir in reserved shrimp with any accumulated liquid, along with remaining lemon juice.
  • Remove from heat and stir in parmesan and parsley, along with some freshly ground black pepper if you like.
  • Let rest for five minutes before serving.

This risotto with lemon and shrimp has simple yet elegant flavors. Traditionally, risotto is made in large batches to feed a crowd, but here I'm breaking that tradition and showing you how to make it for exactly two people!

2 tablespoons olive oil
3/4 pound shrimp, peeled and deveined
1/2 cup diced onions
1 clove minced garlic
3/4 cup risotto or Arborio rice
1 heaping tablespoon lemon zest, plus juice of 1/2 lemon
1/3 cup white wine
3 1/2 cups chicken broth, or more as needed
Salt and ground black pepper

Steps:

  • In a heavy-bottom pot such as a Dutch-oven, add 1 tablespoon of olive oil and heat up over medium-high heat. Brown the shrimp on both sides without fully cooking them through, about 1 minute per side. Remove and set aside on a plate.
  • In the same pot, add the remaining tablespoon olive oil, then add the onions and garlic. Saute for 5 minutes, then add the risotto and cook, stirring gently, to toast it. Add the lemon zest and juice and turn the heat to medium; add the white wine. Continue stirring until most of the wine has cooked off, 5 to 7 minutes. Slowly add about 1/2 cup of chicken broth, and cook, stirring frequently, until the liquid has been absorbed; then add another 1/2 cup chicken broth. Continue doing so in this manner until the risotto is fully cooked through and the liquid has been completely absorbed. (You may need more or less than the 3 1/2 cups of chicken broth.)
  • Season with salt and pepper to taste, then add the shrimp back in. Toss to incorporate and cook until the shrimp are cooked all the way through, 2 to 3 minutes. Divide evenly into 2 bowls and serve!

5 tablespoons extra-virgin olive oil
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 pound extra-large shrimp, peeled and deveined
1 small fennel bulb, chopped (about 1 cup)
1 small onion, chopped (about 1 cup)
1 large clove garlic, smashed, peeled, chopped
1 cup Arborio rice (about 6 1/2 ounces)
1/4 cup dry white wine
3 cups low-sodium chicken broth, plus extra as needed
1/4 cup fresh lemon juice (from 1 large lemon)
Zest of 1 large lemon
3 cups arugula

Steps:

  • Heat 2 tablespoons of the oil in a heavy large saucepan over medium heat. Add the shrimp and sprinkle with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Cook until the shrimp are just opaque in the center, about 3 minutes. Remove the pan from the heat. Transfer the shrimp and juices to a bowl to cool.
  • Add the remaining 3 tablespoons oil to the pan. Add the fennel and onions. Cook until tender, about 4 minutes. Add the garlic and cook until aromatic, 30 seconds. Add the rice. Stir until well coated and translucent in spots, about 2 minutes. Add the wine. Cook until the wine is absorbed, stirring often, about 2 minutes. Add the broth, lemon juice, zest, and the remaining 1 1/2 teaspoons salt and 1/4 teaspoon pepper. Increase the heat and bring to a boil, stirring often. Reduce the heat to medium-low. Simmer until the rice is just tender but still has some bite and the risotto is creamy, stirring often, 13 to 14 minutes.
  • Mix in the arugula. Stir until the arugula wilts, about 30 seconds. Add the shrimp. Mix in additional broth if needed, 1/4 cup at a time, until the risotto is creamy.
  • Spoon the risotto into 4 shallow soup bowls.

½ large sweet onion, finely chopped
4 cloves garlic, chopped

1 cup heavy cream
3 cups cooked broccoli florets
2 tablespoons chopped fresh chives

1 ½ tablespoons grated Asiago cheese

Steps:

  • Heat the olive oil and butter in a large, heavy-bottomed saucepan over medium-high heat. Add the onion and garlic; cook and stir until the onion begins to turn golden brown at the edges, about 2 minutes. Pour in the rice, and stir until the rice is coated in oil and has started to toast, 3 to 4 minutes. Reduce the heat to medium and stir in the white wine and lemon juice.
  • Cook and stir until the wine has mostly evaporated, then stir in one third of the chicken broth; continue stirring until incorporated. Repeat this process twice more, stirring constantly. Stirring in the broth should take 15 to 20 minutes in all. Stir in the cream, and cook 5 minutes before stirring in the broccoli, chives, Parmesan cheese, and Asiago cheese. Cook and stir until the risotto is hot; season to taste with salt and pepper before serving.

Risotto has a reputation for being hard to prepare but this recipe is relatively easy to prepare, and has a taste similar to shrimp scampi.

2 tablespoons butter, divided
½ medium shallot, minced
1 clove garlic, minced
½ teaspoon salt
½ teaspoon ground black pepper
½ cup dry white wine, such as Pinot Grigio
1 cup Arborio rice
3 cups hot chicken broth
½ cup freshly grated Parmesan cheese
¼ cup whipping cream
1 tablespoon lemon juice, or more to taste
8 ounces large shrimp, peeled and deveined
1 teaspoon minced fresh parsley, or to taste
1 lemon, cut into wedges

Steps:

  • Heat 1 tablespoon butter in a large skillet over medium heat and add shallots and garlic. Cook until shallots are soft and translucent, 3 to 5 minutes. Season with salt and pepper. Pour in white wine and simmer until wine is reduced by half. Reduce heat to medium-low and stir in rice. Keep stirring until all the liquid has been absorbed.
  • Next add hot stock, 1/2 cup at a time, stirring frequently until liquid is absorbed. Continue this process, adding stock 1/2 cup at a time, stirring after each addition, until rice is al dente. You may not need the full 3 cups so test the rice after 20 minutes or when you've used 2 1/2 cups of the stock and adjust accordingly.
  • Turn heat to lowest setting and add Parmesan cheese, cream, and lemon juice. Stir until cheese has melted and everything has been incorporated. Adjust seasoning with salt and pepper and turn heat off.
  • Meanwhile, melt 1 tablespoon butter in a small skillet over medium heat and add shrimp. Cook until shrimp tails curl up, about 2 minutes. Be careful not to overcook.
  • To serve, spoon risotto into bowls, top with shrimp and garnish with fresh parsley and lemon wedge if desired.

I adapted this recipe from Rachel Ray's 365: No Repeats cookbook. Be careful not to overcook the shrimp or they will be rubbery. The estimate for the amount of liquid will vary depending on the several factors, but you should be safe with at least 6 cups of pre-heated liquid, you can expect your rice to be done once you have added 4-6 cups. Start checking for texture after the 4th cup is added.

15 ounces artichoke hearts, drained and chopped
2 sprigs rosemary, finely chopped
1 cup parmigiano-reggiano cheese, grated

Steps:

  • Saute garlic and onions in olive oil over medium-high heat for 2 to 3 minutes or until soft.
  • Add rice and saute another 2-3 minutes.
  • Add wine and cook 1 minute.
  • Add the warm stock about 1 cup at a time.
  • Cook uncovered and stirring frequently until all stock is absorbed.
  • Add remaining stock 1 cup at a time repeating this procedure about 1 cup of liquid remains to be added.
  • Add shrimp, lemon zest, artichoke hearts and rosemary with the final addition of liquid.
  • Cook for a total of approximately 20 minutes or until the rice is al dente and the risotto is starcy. The shrimp will be cooked when they turn pink.
  • Add the cheese and juice of one lemon.
  • Season with salt and pepper.
