2 large baking potatoes
2 tbsp olive oil
grated zest and juice ½ lemon
1 egg yolk
140g smoked salmon trimmings, plus extra to serve
1 tbsp chopped parsley , plust extra
2 tbsp gluten-free flour mixed with 1 tsp coarsely ground pepper
a little oil , for frying

Steps:

  • Microwave potatoes on high for 10 mins until tender. Leave to cool for 5 mins, scoop the flesh in a bowl, then mash and leave to cool. Season with olive oil, lemon zest and juice to taste, then mix in the egg, salmon and parsley. Shape into small rounds 3cm wide and 1cm deep. Chill for 15 mins.
  • Dust each cake with the peppered flour, then fry over a low heat in a little oil for 2-3 mins on each side. Drain on kitchen paper and serve garnished with salmon and parsley.

1 pound skinless salmon fillet (see Cook's Note)
Olive oil, for drizzling
Kosher salt and freshly ground black pepper

1/3 cup (1/2-ounce) chopped fresh chives
26 saltine crackers, crushed, divided
1/2 cup frozen corn, thawed
2 tablespoons Dijon mustard
3 tablespoons mayonnaise, plus more, as needed
1 tablespoon capers, rinsed and drained
1 tablespoon lemon juice
1 tablespoon lemon zest
3 tablespoons vegetable oil
3 tablespoons unsalted butter, at room temperature
1/2 cup full-fat plain Greek yogurt
1 1/2 tablespoons capers, rinsed, drained and chopped
1 tablespoon lemon juice
1 tablespoon lemon zest
Kosher salt and freshly ground black pepper

Steps:

  • Salmon: Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Drizzle the salmon with olive oil and season with salt and pepper, to taste. Grill until the flesh is cooked through and flakes easily with a fork, about 6 to 8 minutes on each side. Set aside to cool for 20 minutes.
  • Patties: Using a fork, flake the salmon into 1/2-inch pieces and put into a medium bowl. Add the egg, chives, 1/2 of the crushed crackers, the corn, mustard, mayonnaise, capers, lemon juice, and lemon zest. Mix gently until just combined. Form the mixture into 2 1/2-inch diameter patties, about 3/4 inches thick. (If the mixture is too dry to form into patties, add extra mayonnaise, 1 tablespoon at a time,) Carefully coat the patties in the remaining crushed crackers and refrigerate for 1 hour. In a large nonstick skillet, heat the oil and butter over medium heat. Add the patties and cook until golden and crispy, about 7 to 8 minutes each side. Drain on paper towels.
  • Sauce: In a small bowl, mix together the yogurt, capers, lemon juice, and lemon zest. Season with salt and pepper, to taste.
  • Arrange the salmon cakes on a platter and serve alongside the sauce.

1 garlic clove , finely chopped
½ pack fresh tarragon , finely chopped
2 tbsp olive oil
4 x boneless salmon fillets

Steps:

  • Put the lemon zest and juice, garlic, tarragon and olive oil in a shallow, non-metallic dish and stir together. Season with salt and pepper, then add the salmon fillets. Turn them to coat in the mixture, rubbing it in to the fish well. Cover and set aside for 10 mins.
  • Remove the salmon from the marinade and wrap in foil, if barbecuing. Cook for 5-8 mins over hot coals until just cooked through. (Alternatively, heat the grill to high and put the salmon fillets on a baking sheet. Grill for 7-10 mins, until just cooked through.) Serve with a couscous and rocket salad.

1 teaspoon hot sauce, such as Tabasco
1/2 cup plain dried breadcrumbs
1/3 cup chopped fresh parsley

1/4 cup Dijon mustard
2 large eggs, lightly beaten
2 tablespoons fresh lemon juice
1/4 cup light mayonnaise

Steps:

  • Preheat oven to 400 degrees. Place fish on a rimmed baking sheet; season with salt and pepper. Roast until cooked through, 15 to 20 minutes. Let cool completely; pat dry with paper towels. Break salmon into smaller pieces; flake with a fork.
  • In a large bowl, combine scallions, breadcrumbs, and parsley. Add mayonnaise, mustard, eggs, lemon juice, and salmon. Season again with salt and pepper, plus an additional flavoring if desired. Mix gently until ingredients just hold together.
  • Form mixture into 8 patties (each about 3 inches wide). Place on a foil-lined baking sheet. Refrigerate until cold and firm, 20 to 30 minutes.

Since I like sprucing up things, we decided to put a simple (and I mean really simple) recipe together. If you have a convection oven or an oven that includes convection cooking (like mine does, and it also allows for baking and custom broil), than try this simple recipe.

Salmon Cakes are salmon patties made with fresh salmon, which makes them really juicy and delicious. With a crisp breading exterior, the salmon cakes are far from bland, since they have onions, parsley, mustard, lemon and hot sauce to make them bursting with flavor in each bite.

2 lbs salmon, skinless, boneless
oil, for sautéing the onion and cooking the salmon (about 5-6 Tablespoons, divided)
1 onion, minced
4 Tablespoons panko breadcrumbs for the cakes, plus 1 1/2 cups for breading
1 egg, lightly beaten
2 Tablespoons mayonnaise
1 Tablespoon capers, minced
1 1/2 - 2 Tablespoons freshly squeezed lemon juice
1 Tablespoon dijon mustard
1 teaspoon hot sauce
1 1/2 Tablespoons fresh parsley, minced (you can also add fresh chives or dill)
1 1/2 teaspoons salt, 1/2 teaspoon pepper
oil, for pan frying

Steps:

  • Use a food processor to pulse the salmon into small pieces. The salmon should still have small chunks, not be pulsed into a puree.
  • Using a nonstick skillet, heat 1/2 - 1 Tablespoon of oil, add the onion, season with salt and pepper and cook until tender and lightly golden. Cool slightly. Wipe out the skillet and set aside.
  • In a large bowl, combine the salmon, cooked onion, egg, mayonnaise, capers, lemon juice, mustard, hot sauce, parsley, 4 Tablespoons of breadcrumbs, salt and pepper in a large bowl and mix to combine.
  • Using an ice cream scoop (or your hands, of course), portion out the salmon into 2-3 inch circles. You will have 14-16 salmon cakes, depending on how big you make them.
  • Dredge the salmon cakes in the breadcrumbs.
  • Heat about 1 1/ 2 tablespoons oil in a nonstick skillet on medium-high heat and cook the salmon for about 3 minutes per side, just until golden brown. The fish cooks very quickly, so don't overcook it by using low heat or covering the skillet, etc. It will be dry, if you're not careful.
  • Take the salmon cakes off the heat and drain on a paper towel. Wipe out the skillet and repeat with the rest of the salmon cakes.
  • Serve hot or warm. Store leftover salmon in the refrigerator in an airtight container for 3-5 days.

They make great cold sandwiches on rolls with cocktail sauce or tartar sauce. My big family with teens gets a hot meal and a cold meal from this recipe but a smaller family can freeze them for later enjoyment. Note -- Cooking time depends on how many skillets you are using at once.

1 cup cracker crumbs or 1 cup dry breadcrumbs

olive oil or butter, to grease pan

Steps:

  • Bust up the salmon into flakes with a fork. I leave the bones and skin in because they pack a powerful nutritional punch.
  • Add the remaining ingredients, except for the olive oil or butter, and mix well. Let rest 5 minutes.
  • Add additional crumbs or milk if necessary to make a moist patty that holds together well.
  • Heat a little olive oil or butter in a skillet over medium to medium-high heat and cook patties until the first side is nicely browned. Turn and cook other side to a nice brown. Make as many batches as necessary, using 2 skillets if you have room on the stove to speed up the process.
  • Tip -- do not turn too soon or the patty may fall apart. Plan to turn only once.
  • Serve hot with lemon wedges to squeeze over them.
  • Serve hot or cold as a sandwich on hard rolls with cocktail sauce or tartar sauce.
  • Serve mini-patties as party snacks.
  • For OAMC I suggest wrapping patties individually and reheating them in the microwave when wanted.

1 1/4 pounds skinless salmon fillets, cut into 1-inch cubes
2 tablespoons Dijon mustard
1/2 cup panko (Japanese breadcrumbs) or fresh breadcrumbs made from crustless French bread
3/4 teaspoon salt
3/4 teaspoon ground black pepper

Steps:

  • Whisk 1 cup mayonnaise, 2 minced green onions, lemon juice, and grated lemon peel in small bowl to blend. Season lemon mayonnaise to taste with salt and pepper and set aside.
  • Combine remaining 4 green onions and chopped parsley in food processor; blend until finely chopped. Add cubed salmon, Dijon mustard, and remaining 1 tablespoon mayonnaise. 2 tablespoons apple cider vinegar
1 teaspoon honey
1/2 teaspoon celery seeds

5 cups shredded kale
3 cups shredded cabbage
3 cups shredded carrots
1 cup sunflower seeds

Steps:

  • For the salmon burgers: Put the salmon, parsley, onion powder, salt, garlic powder, pepper, basil, egg and lemon zest in a food processor and blend until evenly mixed and the consistency of ground meat. Form into 4 patties and place on a baking sheet. Refrigerate for 20 minutes.
  • For the lemon-caper aioli: While the salmon is chilling, make the aioli. Mix the mayonnaise, capers, basil, parsley, garlic and lemon juice in a bowl and refrigerate until serving.
  • For the kale slaw: Combine the mayonnaise, yogurt, Dijon, vinegar, honey, celery seeds, salt and pepper in a bowl for the dressing. Add the dressing to a large bowl with the kale, cabbage and carrots and combine until everything is evenly coated. Top with the sunflower seeds.
  • To cook the salmon burgers, heat the canola oil in a cast-iron skillet over medium heat. Cook the burgers until golden brown and crispy, 3 to 4 minutes per side.
  • Toast and butter the buns. Serve the burgers on the buns with the aioli, tomatoes and watercress.

Salmon patties (aka croquettes) combine canned salmon with grated onion and herbs. Try our popular, family-friendly recipe.

1 (16-ounce) can salmon (undrained)
1 small onion (finely grated)
2 tablespoons fresh parsley (minced)
Ground black pepper (to taste)
2 large eggs (well beaten)
1 to 1 1/2 cups fine dry breadcrumbs (divided)
3 tablespoons butter

Steps:

  • Gather the ingredients.
  • Turn the salmon and liquid into a medium-size bowl. Flake the salmon with a fork, removing any skin and bones. Smaller bones are edible and may be mashed. Add the grated onion, parsley, and pepper; blend thoroughly.
  • Add the beaten eggs and blend well. Add enough breadcrumbs, about 1/2 to 3/4 cup, to make the mixture thick enough to shape into about 12 small patties.
  • Roll the patties in the remaining breadcrumbs to coat thoroughly.
  • In a large heavy skillet or sauté pan over low heat, melt 2 tablespoons of butter. When the butter is hot, add the salmon patties. Fry patties slowly on one side until browned. Add the remaining butter, turn the patties, and fry them until browned on the other side. Serve and enjoy!

2 tbsp avocado oil, divided + additional for cooking
1 lb wild salmon fillet, skin removed
1¼ tsp sea salt, divided
½ tsp ground black pepper, divided
2 shallots, minced
2 stalks celery, minced
2 cloves garlic, minced
¾ cup almond flour
2 tbsp arrowroot powder
1 large egg
1 tbsp lemon zest + 2 tbsp fresh lemon juice
¼ cup extra-virgin olive oil
1 shallot, minced
1 tbsp fresh lemon juice
2 tbsp capers
2 oil-packed anchovy fillets
¼ cup fresh flat-leaf parsley leaves
1 tbsp Dijon mustard
ground black pepper, to taste

Steps:

  • 1. Preheat oven to 425ºF; line a baking dish with parchment. Rub 1 tbsp avocado oil over salmon and season with ¼ tsp each salt and pepper. Place salmon on baking sheet. Roast until cooked through, 12 to 14 minutes. Set aside to cool. Reduce oven temperature to 200ºF. 2. In a small skillet on medium, heat 1 tbsp avocado oil. Add 2 minced shallots, celery, garlic and ¼ tsp salt. Sauté until celery is tender and veggies are fragrant, about 5 minutes; transfer to a large bowl. 3. Meanwhile, make sauce: In a small skillet, combine olive oil and 1 minced shallot; place over low heat and cook until shallot sizzles. Sauté 1 minute, then transfer to a food processor. Add 1 tbsp lemon juice, caper, anchovies, parsley and Dijon. Season with pepper; set aside. 4. Flake salmon into bowl with shallot mixture. Add almond flour, arrowroot, egg, lemon zest and juice, remaining ¾ tsp salt and remaining ¼ tsp pepper. Stir well, mashing with a fork. Scoop ¼ cup mixture; form into a 2½-inch round patty. Repeat to make 12 patties total. 5. In a large nonstick skillet on medium, heat ¼ inch avocado oil. Working in batches, cook patties until golden and cooked through, 2 to 3 minutes per side. Place a wire rack over baking sheet. After cooking, transfer patties to rack; keep warm in oven while you cook remaining patties. Serve with sauce.
