SLOW-COOKED LEMON CHICKEN

6 bone-in chicken breast halves (12 ounces each), skin removed
1 teaspoon dried oregano
1/2 teaspoon seasoned salt
1/4 teaspoon pepper
2 tablespoons butter
1/4 cup water
3 tablespoons lemon juice
2 garlic cloves, minced
1 teaspoon chicken bouillon granules
2 teaspoons minced fresh parsley
Hot cooked rice

Steps:

  • Pat chicken dry with paper towels. Combine the oregano, seasoned salt and pepper; rub over chicken. In a skillet over medium heat, brown the chicken in butter; transfer to a 5-qt. slow cooker. Add water, lemon juice, garlic and bouillon to the skillet; bring to a boil, stirring to loosen browned bits. Pour over chicken. , Cover and cook on low for 5-6 hours. Baste chicken with cooking juices. Add parsley. Cover and cook 15-30 minutes longer or until meat juices run clear. Serve with rice. (If desired, cooking juices may be thickened before serving.)

Fresh lemon and lime juices paired with apple juice serve to rev up the natural tastes in this slow-cooked comfort dish. It's a snap to put together, even before heading off to work. Like it hot? Throw in a teaspoon or two of dried chilies. Add quartered bell peppers or frozen peas for the last half hour of simmering and they will take care of the veggie portion of your balanced dinner. Just be sure to have lots of rice or orzo to soak up the vibrant sauce.

Number Of Ingredients 21

8 bone-in, skinless chicken thighs
or
4 bone-in, skinless chicken breasts
or
8 bone-in, skinless chicken drumsticks
1 cup apple juice
2 tbsp cornstarch
juice of one lemon
juice of one lime
2 tbsp liquid honey
1 tbsp cumin, ground
or
1 tbsp tarragon
or
1 tbsp fines herbes
½ tsp salt
italian parsley, for garnish
or
cilantro, for garnish
or
basil, for garnish

Steps:

  • Remove all excess fat from chicken. If using large chicken breasts, slice each into two pieces. Turn slow cooker to high and pour in the apple juice. Sprinkle with cornstarch and stir until dissolved.
  • Add the juice from the lemon and the lime, honey and seasonings. Stir to blend. Add chicken, turning to evenly coat, then place chicken bone-side up. Cover and cook on high for 3 ½ to 4 hours or on low for 5 to 6 hours.
  • Place chicken on plates and spoon some of the sauce over top. If serving with rice or orzo, liberally pour sauce over them as well. Serve remaining sauce in a pitcher. Garnish with Italian parsley, fresh coriander or torn basil leaves.

We love shredded chicken...I will often make large batches of it and freeze in meal size portions. This makes chicken tacos, enchiladas and other favorite chicken meals all that much faster to get on the table. For this chicken, I used what I had on hand in the freezer. I dropped a package of chicken breasts and a package of chicken thighs into the slow cooker...a good mix of white and dark meat! Along with some lime juice, olive oil and big hunks of cilantro and bam...Seriously y'all...the cilantro flavor totally infused into the chicken as it cooked all day. Perfect for using in your favorite Mexican chicken dish. Also, I should add that I got a large batch of cilantro for just $0.29!

3 limes, juiced
1 onion, chopped
1 lb chicken breast, boneless skinless
