Recipe video above. The idea behind this recipe is that the potatoes suck up the amazing lemon-garlic-oregano flavoured broth, then roasted until golden crispy edges. These won't go super crunchy because of the way they're cooked - but you won't miss the crunch because they have flavour unlike any other ordinary roasted potato! 1.2 kg / 2.5lb potatoes ((Aus: Desiree, US: Yukon Gold, UK: Maris Piper) (Note 1))
1 1/2 cups chicken stock/broth (, low sodium (Note 2))
1/2 cup olive oil
1/3 cup lemon juice
5 garlic cloves (, finely grated using microplane (Note 3))
1 tbsp dried oregano
2 tsp salt ((Note 4))
Lemon wedges, fresh oregano leaves

Steps:

  • Preheat oven to 200°C/390°F (180°Cfan).
  • Cut potatoes: Peel potatoes and cut large ones into thick wedges - about 3cm / 1.2" thick - and medium ones into 3 (see photo in post).
  • Coat potatoes: Place potatoes in a roasting pan with all the other ingredients. Toss well.
  • Roast 45 minutes: Roast for 20 minutes. Turn potatoes, roast for a further 25 to 30 minutes until the liquid is mostly absorbed by potatoes/evaporated and you're left with mainly oil in the pan.
  • To crisp the potatoes (optional): Transfer potatoes to a separate tray. (Note 3) Tilt the original roasting pan and scoop off as much of the oil as you can (some juices is ok), then drizzle over the potatoes.
  • Roast 35 minutes: Transfer potatoes to oven and roast for 35 - 40 minutes, turning once or twice, until potatoes are golden and a bit crispy on the edges.
  • Heat pan juices: Return pan #1 with the garlic juices to the oven for the last 5 - 10 minutes or so to reduce down and make the garlic golden. (Optional, Note 4)
  • Plate up: Transfer potatoes to serving platter. Drizzle over the reduced garlic pan juices (or toss potatoes in the pan). Serve, garnished with lemon wedges and oregano if desired.

3 pounds baking potatoes, peeled and cut into 1 1/2-inch cubes
1/2 cup olive oil
4 garlic cloves, minced
1 1/2 teaspoons dried oregano, crumbled
1 teaspoon salt
Freshly ground black pepper
1/2 cup beef stock or chicken stock
1/3 cup freshly squeezed lemon juice
2-3 tablespoons chopped fresh oregano

Steps:

  • Preheat oven to 400°F.
  • Place the potatoes in a single layer in a 13-x-9-inch baking dish and pour the oil over them. Add the garlic, dried oregano, salt and pepper to taste and toss well to coat with the oil.
  • Bake the potatoes for 15 minutes. Add the stock, toss and bake for 10 minutes more. Add the lemon juice, toss and bake for 10 to 15 minutes more, or until the potatoes are cooked through. If you like, preheat the broiler and broil the potatoes for 2 to 3 minutes, or until golden brown.
  • Sprinkle with the fresh oregano and serve at once.
  • Variation:
  • Dissolve 1 tablespoon tomato paste in the stock, and reduce the amount of lemon juice to taste. Substitute Aleppo pepper or crushed red pepper flakes for the black pepper.

6 Yukon gold potatoes, quartered lengthwise
Zest of 1 lemon plus 1/3 cup fresh lemon juice plus lemon wedges, for serving
1⁄4 cup extra-virgin olive oil, plus more for serving
2 tablespoons Dijon mustard
6 cloves garlic, smashed
6 sprigs fresh oregano
Kosher salt and finely ground black pepper
Sea salt, for serving

Steps:

  • Set up a grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Place the potatoes in a cast-iron pan. In a mixing bowl, whisk together the lemon zest and juice, olive oil, mustard, garlic, oregano, a pinch of salt, some black pepper and 2 cups water. Pour the mixture over the potatoes and toss to combine. Turn the potatoes so they are cut-side down in the pan.
  • Place the pan on the indirect-heat side of the grill, then close the lid and bake until the potatoes are tender, about 40 minutes. Remove from the grill and serve with a squeeze of lemon, a sprinkle of sea salt and a drizzle of olive oil.

3 pounds large russet potatoes, cleaned, each cut lengthwise into 6 wedges
1/2 cup chicken stock or canned low-sodium chicken broth

Steps:

  • Preheat oven to 425 degrees F.
  • Whisk olive oil, lemon juice, shallots, garlic, oregano, and parsley in a medium bowl to blend; season with salt and pepper.
  • Toss potatoes with 1/2 cup vinaigrette on a heavy, large, rimmed baking sheet. Reserve the remaining vinaigrette. Pour chicken stock around potatoes and season potatoes with salt and pepper. Use small potatoes for this if you can, quarter or half them and leave the peel on, they absorb more flavor when they are cut and cooked in the juices. This lemon potato dish has extreme flavor, and the recipe can be doubled, try this dish with your next roasted chicken dinner, you will have rave reviews!

3 lbs potatoes (use small if possible and cut into about 1-1/2 - 2 inch cubes)
1/2 cup olive oil (or more)
2 tablespoons butter, melted (no subs!)
1 whole bulb of garlic, separated into smaller cloves and skins removed (can use two whole bulbs if desired)
2 teaspoons dried oregano (rubbed between fingers, can increase to up to 1 tablespoon)
1 -2 teaspoon salt
black pepper
1/2 cup chicken stock
1/3 cup fresh lemon juice (no bottled please!)

Steps:

  • Set oven to 400 degrees.
  • Butter a 13 x 9-inch baking dish.
  • In a small cup or bowl, whisk together the oil and melted butter; add in dried oregano and mix well.
  • Place the potatoes and whole garlic cloves in a large bowl.
  • Pour the oil/butter mixture over the potatoes and the garlic; toss well to coat.
  • Season with salt and pepper (you can use seasoning salt in place of regular salt, I most always do!) toss well to coat.
  • Place the potatoes in the baking dish in a single layer, and bake for 15 minutes (if you are lucky enough to have a convection/roast setting on your oven, then use it for this recipe).
  • Remove and add in the chicken stock; toss the potatoes to coat well, and place back in the oven for about 10 minutes more.
  • Remove from the oven and sprinkle with fresh lemon juice; toss and place back in the oven for another 10-15 minutes more.
  • **NOTE** if you like you can preheat the broiler, and broil the potatoes for 2-3 minutes or until golden brown, but that is optional.

If your favorite Greek foods are the lively vegetable dishes, this meal-in-a-bowl stew is for you. A simple mix of lemon, garlic and lots of herbs enliven the potatoes and spinach and using ground meat ensures a lot of flavor in very little time. Ground turkey or pork would be just as good, if you prefer. Russets can be substituted for Yukon golds, but their texture will be more grainy and less creamy. Mature spinach or frozen spinach works best here because of its mellow flavor, as opposed to baby spinach, which is more tannic. Add the amount of dill that sounds best to you, or if you don't like it, swap in a few tablespoons of fresh parsley or mint.

  • In a large pot or Dutch oven, warm the oil over high heat. Add the onion, garlic and salt and cook, stirring, until the onion and garlic are softened and just starting to brown, 5 minutes. (Decrease the heat to medium-high if necessary to prevent scorching.)
  • Decrease the heat to medium-high and add the chicken, rosemary, oregano, red-pepper flakes and several generous grinds of black pepper. Cook, breaking up the chicken into crumbles, until the meat starts to lose its translucent pinkness and is turning white, about 2 minutes. Add the potatoes and stir well to combine. Add the chicken broth and half the lemon juice, scraping up any browned bits on the bottom. Bring to a rolling boil and then lower the heat to maintain a very brisk simmer. 1 lemon, juice and grated zest
4 tablespoons water

4 bay leaves
2 rosemary sprigs
1 teaspoon fresh thyme, chopped

1 pinch sugar
salt & pepper
2 tablespoons parsley, chopped

Steps:

  • Preheat the oven to 200C/400F/Gas 6.
  • Cut the potatoes into bite sized chunks and put them in a large ovenproof dish.
  • Add the olive oil, lemon rind and juice, water, garlic, bay leaves, rosemary, thyme, oregano, sugar, salt and pepper.
  • Stir well.
  • Bake the potatoes for 1-1 1/4 hours or until they are cooked through and crispy.
  • Stir every now and then during cooking to coat with the herby oil.
  • Finally sprinkle with the chopped parsley.

These potatoes are wonderfully browned, delicious and fairly easy to prepare. They seem to compliment most everything we have paired them with. I looked at other Lemon Garlic Potato recipes and none were exactly the same, so I posted these here for safe keeping. If you try them, I surely hope you enjoy them as much as my family and I do!

1 1/2 lbs red potatoes
4 garlic cloves, minced
1 teaspoon dried oregano
1 -1 1/2 teaspoon sea salt
1/2-1 teaspoon fresh ground black pepper
2 lemons, juice of
1 lemon, zest of
1/4 cup olive oil

Steps:

  • Wash potatoes and cut into chunks. If they are the small potatoes, cut in half. If they are about the size of Idahos, cut into 6 even chunks.
  • Mix seasonings, lemon juice, zest and oil together.
  • Toss potatoes with lemon mixture.
  • Place in a 11x7 cooking dish. Do NOT drain off any extra lemon mixture.
  • Bake at 400 for 1 hour to 1 hour 15 minutes, turning a couple times.
  • Sometimes I drizzle extra lemon juice over the finished potatoes just because I like them extra lemony.
  • Enjoy!
