VINTAGE LEMONADE
In the 1800's this is how people made lemonade--you can do it too! It's not that difficult, and tastes wonderful!

Steps:
- Peel the rinds from the 5 lemons and cut them into 1/2 inch slices. Set the lemons aside.
- Place the rinds in a bowl and sprinkle the sugar over them. Let this stand for about one hour, so that the sugar begins to soak up the oils from the lemons.
- Bring water to a boil in a covered saucepan and then pour the hot water over the sugared lemon rinds. Allow this mixture to cool for 20 minutes and then remove the rinds.
- Squeeze the lemons into another bowl. Pour the juice through a strainer into the sugar mixture. Stir well, pour into pitcher and pop it in the fridge! Serve with ice cubes.

LEMONADE WITH LEMON GRASS AND DRIED LEMON

Steps:
- Combine sugar, lemon grass and dried lemon in a saucepan. Add 2 cups water, and bring mixture to a boil. Simmer 5 to 7 minutes or until dried lemon is tender. Use a spoon to squash lemon against side of pan.
- Turn off heat, and let mixture rest for 10 minutes, then strain it into a pitcher. Add lemon juice and 6 cups cold water. Chill until thoroughly cold, at least 2 hours. Serve over ice.

- Tip the lemons, sugar and half the water into a food processor and blend until the lemon is finely chopped.
- Pour the mixture into a sieve over a bowl, then press through as much juice as you can. Top up with the remaining water and serve with plain ice or frozen with slices of lemon and lime.
