LEMON THYME SWORDFISH WITH ASPARAGUS
Steps:
- In a blender or food processor, process the cottage cheese until creamy. Transfer the cottage cheese to a small bowl, and stir in the milk, 1 1/2 teaspoons of the lemon juice, parsley, basil, and 1/2 teaspoon of the dried thyme. Cover and chill in the refrigerator.
- Preheat oven to 350 degrees F (175 degrees C).
- Place the fish in an 8x8 inch baking dish. Pour the water and the remaining lemon juice into the dish. Place the bay leaf in the water, and sprinkle the remaining 1/2 teaspoon of dried thyme over the fish. Cover the dish with foil.
- Bake in a preheated oven for 20 minutes or until the fish flakes easily when tested with a fork and is opaque all the way through.
- Meanwhile, place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
- When fish is done, transfer to a serving platter and arrange the asparagus next to the fish. Serve with the cottage cheese sauce.

LEMON SOY SWORDFISH WITH AVOCADO BUTTER
This is an excellent and very flavorful recipe adapted from "The California Heritage Cookbook". I've never had anyone not like it. Any steaky fish should work. The avocado butter is a marvelous accompaniment for any barbecued fish, especially swordfish or salmon.

Steps:
- Fish:.
- Combine first 6 ingredients in a large ziploc bag. Add swordfish steaks. Refrigerate for 1-3 hours, turning a few times.
- To cook, place fish on a preheated broiler pan. Broil 5-6 minutes on each side or until fish flakes easily when tested with a fork.
- You may also barbeque this. If you do brush it with the marinade often.
- Serve hot with avocado butter, lemon wedges and fresh parsley sprigs.
- Avocado Butter:.
- In a small mixing bowl beat butter with an electric mixer until soft and creamy. Beat in remaining ingredients.
- Place in a decorative dish and refrigerate until firm and ready to use. A melon baller works great to scoop out balls to place on the hot fish.

Steps:
- Cut swordfish into 1-inch cubes then add to a resealable plastic bag. Add the olive oil, lemon zest, black pepper, anchovy paste and thyme to the bag then seal. Gently massage the bag until the marinade is well mixed and the fish coated. Place the bag onto a plate and refrigerate for 1 hour.
- Meanwhile, submerge the skewers in water so they soak.
- After 1 hour, heat grill to medium-high heat (or place a grill pan over medium heat).
- Divide the swordfish cubes between each skewer then grill until just cooked through, about 2 minutes per side. Transfer to a serving plate and squeeze lemon juice over the fish.
SWORDFISH MARINATED IN LEMON, ROSEMARY AND GARLIC
Steps:
- Combine the lemon zest, oil, rosemary and garlic on a large, shallow platter or a tray large enough to hold the swordfish steaks in a single layer. Add the swordfish, sprinkle with salt and pepper and turn to coat with the marinade. Cover and marinate in the refrigerator for 1 to 2 hours.
- Brush the grill or broiler pan with a thin film of oil. Just before serving time, preheat the grill or broiler. Transfer the swordfish to grill or broiler pan, reserve the marinade left on the platter. If broiling, adjust the oven rack so that the tops of the fish are about 3 inches from the heat source. Grill or broil until lightly browned, 5 to 8 minutes, depending on the intensity of the heat. Using a spatula, carefully turn each steak. Spoon any marinade and pieces of lemon zest and rosemary onto the tops of the steaks. Broil until lightly browned and the center of the fish is opaque when tested with the tip of a knife, about 5 to 8 minutes. Serve garnished with capers and lemon wedges.

I like to swing by my fish guy and pick up the steaks, then zoom home, marinate and grill (or broil) for a nice, after work treat! YUM! We like these with rice and steamed broccoli. Prep time includes marinate time

- Pre-heat the grill to medium-high heat. Dip a wad of paper towels in some oil and, holding the wad with tongs, wipe the grate. Do this multiple times re-dipping the towels in oil as needed until the grate is black and glossy. This may take 5-7 oily wipes. This process "seasons" the grill for you, much like a cast iron pan, so your fish won't stick to the grate.
- Blot the fillets with a paper towel and brush top and bottom sides with olive oil, then season with kosher salt and pepper.

- Remove the swordfish fillets from the fridge. Gently pat them with paper towels, brush them with olive oil, and season with salt and pepper; set aside and let them come to room temperature. This should take about 15 minutes.
- Once the grill is hot, dip a wad of paper towel into oil using tongs. Gently glide the oiled paper towel over the grates to create a slick surface. Do this about five times so the grates are well-greased. This creates a non-stick surface for your fish.
