AUSSIE MEAT PIE
This recipe is from the Pampas Pastry website. It passes the Susan test for a five star recipe - easy, delicious and looks good too! These pies freeze well. Prepare up to the baking stage, then freeze. Cook from frozen on the day they are required. Hope you enjoy your Aussie Meat Pie - maybe enhanced with a glass of Coonawarra red! Edited to add - some grated/shredded cheese could be added to the mince mixture to make a cheese and mince pie, as per Perfect Pixie's review - great idea - thanks PP!

Steps:
- Cook onion and meat until meat is well browned. Add 3/4 cup water, stock cubes, sauces and seasonings, bring to the boil, cover and simmer 15 minutes.
- Blend flour with remaining water to make a smooth paste. Add to the meat and bring to the boil, stirring continuously; boil 5 minutes, cool.
- Line a lightly greased pie plate with the shortcrust pastry.
- Spoon in the cooled meat filling.
- Moisten edges of pastry base with water. Top with puff pastry sheet, pressing down gently to seal edges. Trim and score edges. Glaze.
- Bake in very hot oven for 15 minutes, reduce to moderately hot and cook a further 25 minutes or until pastry is goldn.

Steps:
- Brown mince.
- Add onion finely diced and brown.
- Drain off fat.
- Add stock cubes crumbled, 1-½ cups of water, salt and pepper and stir until boiling.
- Reduce heat and cover, simmering for an additional 30 minutes.
- Remove from heat.
- In a cup combine flour and extra water and stir until smooth.
- Add flour mixture to meat and stir until combined.
- Return to heat, stir until it comes to a boil and is thickened.
- Add Worcestershire sauce.
- Simmer uncovered for 10 minutes then remove from heat and refrigerate.
- Once cool fill in bottom of piecrust.
- Put top on and pierce the centre with a knife.
- Combine egg yolk with a bit of water and brush over the top.
- Follow directions on frozen pie crusts or bake at 400 for 5 minutes (or until golden brown) then reduce heat to moderate (200) and cook for an additional 10 minutes.

BEEF & BEER PIES
What could be more Aussie than the humble meat pie with the addition of another Aussie favourite..beer! I found this recipe in the Herald Sun & just had to give it go. For convenience the meat filling can be made up to 3 days in advance & refrigerated.

Steps:
- Preheat oven to 200.C.
- Saute onion & bacon until onion softens & bacon is cooked, set aside.
- Add mince to pan and cook until browned, add mushrooms and cook until soft.
- Return onion & bacon to pan and add flour, cook stirring for 3 minutes.
- Add wine & beer & simmer until most of the liquid has reduced to a sauce consistency.
- Add worcestershire sauce & parsley.
- Spoon mixture into individual pie dishes, cover with pastry, (brush with egg or milk if you like) & bake about 20 mins or until pastry is well risen, golden & crisp.
- NB/ If you choose to make fully enclosed pies, pastry top & bottom, allow mixture to cool before spooning into pastry otherwise it will become soggy.

- Preheat hot oven (200 degrees).
- Line a medium sized oven proof pie dish with 1 1/2 sheets of pastry and trim the edges. Make sure the pastry covers the base and up the sides of the dish.
- Cook mince and onion until mince is brown, season with salt and pepper.
- When meat is cooked, thicken with the Gravy mixture.
- Tip into prepared pie dish.
- Brush around edges with milk. Put the 1 1/2 on top of pie to seal. Trim edges and prick with a fork. Brush with beaten milk.
- Cook in a hot oven 15 minutes, then turn oven back to moderate (180 degrees) and cook a further 20 minutes.
- This pie is great served with mashed potato, peas and plenty of tomato sauce!

Steps:
- Process steak until mixture resembles mince. Heat oil in a large frying pan over medium-high heat. Add onion and bacon. Cook, stirring, for 3 minutes or until golden. Add mince. Cook, stirring with a wooden spoon to break up mince, for 6 to 8 minutes or until browned.
- Add tomato paste and flour. Cook, stirring, for 1 minute or until combined. Add stock and thyme. Stir to combine. Bring to the boil. Reduce heat to medium-low. Simmer for 30 minutes or until sauce has thickened and meat is tender. Season with pepper. Remove from heat.
- Preheat oven to 200°C/180°C fan-forced. Line eight 7.5cm round pie moulds with shortcrust pastry. Trim excess. (I would bake the crust for 5-8 minutes before filling with meat mixture to have a flaky crust) Fill cases with steak mixture. Top with puff pastry. Trim excess. Press edges together with a fork to seal. Using a small sharp knife, cut a small cross in pie tops. Brush with egg. Bake for 25 to 30 minutes or until golden. Serve with sauce.

- Meat pie. They're a staple at sporting events and parties and the cause of many a burnt tongue — the humble meat pie is the epitome of Australian food.
- Vegemite. Love it or hate it, after 90 years Vegemite is still an Australian breakfast staple. Spread on toast, bread or crackers, or even added to casseroles or layered in cheesy scrolls, the black, salty paste sure is versatile.
- Pavlova. Both Australia and New Zealand claim to have invented pavlova in honour of Russian ballerina Anna Pavlova, who visited both countries in the 1920s.
