1/2 cup sugar
1 lemon, zested and juiced
16 ounces mascarpone cheese
1 store-bought pound cake, cut into 1/2-inch thick slices
1/2 cup creme de cassis liqueur
2 cups quartered strawberries (or whole blueberries or whole raspberries)
Fresh mint leaves, chopped, for garnish

Steps:

  • In a small saucepan over medium heat, combine the sugar with the lemon juice. Cook until the sugar has dissolved, about 5 minutes. Let cool.
  • In a medium bowl, combine the cooled sugar mixture with the mascarpone cheese and the lemon zest. Using an electric mixer, whip on medium speed until the mixture is light and fluffy.
  • To build the trifle, line the bottom of a trifle bowl with a layer pound cake. Brush the pound cake with some creme de cassis liqueur. Spoon a layer of the cheese mixture over the pound cake, and then a layer of berries. Repeat the layers until all the ingredients are used, finishing with a top layer of berries. Chill in the refrigerator until ready to serve. Garnish with chopped mint leaves.

This is wonderful! Another Giada De Laurentis recipe, from Sicilian Summer. There is a cooling time of 30 minutes. We made some slight changes to the original as we were experimenting and they paid off! We enjoyed this Trifle immensely.

1/2 cup sugar

1 store-bought poundcake, cut into 1/2-inch thick slices
1/2 cup creme de cassis (or framboise liqueur, as we used raspberries)
2 cups quartered strawberries (or whole blueberries or whole raspberries, we used raspberries)
toasted almond, chopped (garnish) (optional)
whipped cream, flavored with framboise (garnish) (optional)
fresh mint leaves, chopped (garnish) (optional)

Steps:

  • In a small saucepan over medium heat, combine the sugar with the lemon juice.
  • Cook until the sugar has dissolved, about 5 minutes.
  • Let cool.
  • In a medium bowl, combine the cooled sugar mixture with the mascarpone cheese and the lemon zest.
  • Now, add almonds, if using.
  • Using an electric mixer, whip on medium speed until the mixture is light and fluffy.
  • To build the trifle, line the bottom of a trifle bowl with a layer pound cake.

Creamy, lemony layers are brightened by berries in this no-bake cross between tiramisu and trifle. Kids can assemble this treat with very little help.

1/4 cup fresh lemon juice
1/4 cup granulated sugar
12-ounces cream cheese, softened
One 8-ounce jar prepared lemon curd
2 cups heavy cream
22 hard ladyfinger cookies
3 cups mixed raspberries and sliced strawberries
Powdered sugar, for garnish
Whipped cream, for serving

Steps:

  • In a small measuring cup, mix the lemon juice with the sugar and 1/4 cup water until the sugar is dissolved. Set aside.
  • Place the cream cheese, lemon curd and heavy cream in a food processor and process until smooth and a bit fluffy.
  • To assemble the tiramisu, place half the ladyfingers in the bottom of an 8-inch square baking dish, breaking a few to fit, and drizzle with half of the lemon syrup. Top with half the lemon cream and 1 cup mixed berries. Repeat the layers, using the remaining ladyfingers, syrup and lemon cream.
  • Cover with plastic wrap and chill at least 8 hours or overnight. Before serving, top with the remaining 2 cups of berries and dust with powdered sugar. Serve with whipped cream on the side.

CREME DE CASSIS (CURRANT LIQUEUR)



Creme De Cassis (Currant Liqueur) image

This is the lovely 'sirop' that goes into a kir (with white wine), a kir royale (with champagne) or a communard (with red wine). It is also wonderful as an apertif or to pour over ice cream or use as a syrup with various desserts. It takes 4 to 6 months(not included in preparation time), but little effort, and the result far exceeds what you can buy at the liquor store. The serving size is a guess.

7 -8 cups currants (the classic is black currants, but red currants will also make a lovely cassis)
5 -6 cups eau de vie or 5 -6 cups vodka (enough to cover the currantsd in the jars)
2 lbs sugar (approximately)
2 cups eau de vie or 2 cups vodka

Steps:

  • You will also need: 2 Quart mason jars.
  • Phase one:.
  • Remove currants from stems and wash.
  • Fill two quart jars with currants three-quarters of the way to the top.
  • Pour eau de vie or vodka over the currants until the jars are nearly full.
  • Seal jars and let sit.
  • Note: currents are usually available at the end of July; they should sit in the jars until early December.
  • Phase Two:.
  • In early December (or in 4 to 6 months), empty the contents of the two jars into a sauce pan.
  • Bring to a boil.
  • Strain the juice.
  • Measure the quantity of juice.
  • For every quart of juice, add one quart of sugar and one cup of eau de vie or vodka.
  • Combine in a saucepan, bring to a boil, and simmer briefly till sugar is dissolved and mixture is syrupy (about ten minutes).
  • Pour into sterilized jars or bottles.
  • Seal.
  • Note: It is ready to drink at this stage, but it only gets better as it sits.

2/3 cup white sugar
2 tablespoons orange juice
1 tablespoon grated orange zest
1 1/2 cups whipping cream
4 cups sliced strawberries
1/3 cup orange-flavored liqueur

6 ounces unsweetened chocolate squares or 6 ounces semisweet chocolate, grated
strawberry, halves (to garnish) (optional)

Steps:

  • Chill one large glass and one medium glass bowl for about 20 minutes.
  • In the large bowl beat together the mascarpone, sugar, orange juice and zest until creamy.
  • In the medium bowl whip cream until soft peaks form.
  • Fold the whipped cream into the cheese mixture.
  • Combine the strawberries and orange liquor.
  • Cut the cake into 1/2 inch slices.
  • Arrange 1/2 of the slices in the bottom of a 8 cup glass bowl.
  • Top with 1/2 the sliced strawberries, including 1/2 the juice/liquor.
  • Spread with half the mascarpone mixture.
  • Sprinkle with half the grated chocolate.
  • Repeat layers ending with grated chocolate.
  • Cover and chill for at least 4 hours, up to 12 hours.

1 cup water
2 tablespoons caster sugar
250 g mascarpone
600 g sour cream
1/2 cup icing sugar, sifted, plus extra
2 tablespoons lemon zest, finely grated
34 lady fingers
500 g raspberries

Steps:

  • Place the limoncello, water and caster sugar in a small saucepan over low heat and stir untilt he sugar has dissolved. Set aside to cool.
  • Place the mascarpone in a bowl and stir until smooth; add the sour cream, icing sugar and lemon rind and whisk until smooth.
  • Dip the fingers into the liqueur mixture and use to line the base and sides of a 3-litre capacity glass bowl.
  • Top the fingers with half the raspberries, spoon over the mascarpone mixture then top with the remaining raspberries.
  • Dust with extra icing sugar to serve.

A fruity twist on your traditional espresso tiramisu. It's a little expensive so I only make it for special occasions, but everyone seems to love it. I've never had any leftovers.

2 lbs mascarpone cheese
3 cups heavy whipping cream
1 cup confectioners' sugar
1/2 cup granulated sugar
2 tablespoons vanilla extract
1 (16 ounce) package frozen mixed berries
2 quarts strawberries, sliced
2 pints blackberries
1 pint raspberries
8 ounces ladyfingers

Steps:

  • In a large bowl whip the heavy cream until stiff peaks form.
  • Add 1/2 cup confectioners' sugar and mix until well blended.
  • In a medium bowl mix mascarpone cheese with vanilla extract and other 1/2 cup sugar.
  • Fold in whipped cream.
  • In a medium bowl, puree thawed mixed berries with granulated sugar. Microwave for 1-2 minutes if necessary.
  • Separate lady fingers and dip each one (flat side down) in the berry puree.
  • Arrange in concentric circles on the bottom of the trifle bowl. Stack ladyfingers up along the sides of the trifle bowl so they are visible from the outside. This will create a cake "crust" for the filling.
  • Drizzle berry puree over the ladyfingers on the bottom.
  • Spread mascarpone/cream mixture over ladyfingers.
  • Add strawberries and blackberries. Continue layers of cream, berries, and puree.
  • In center layer, add more ladyfingers.
  • Continue layers of mascarpone/cream, berries, and puree until the top of trifle bowl.
  • Arrange strawberry slices along the edge of the the trifle bowl. Arrange raspberries and blackberries in concentric circles on the top layer of cream. Cover and refrigerate for 2 hours.
  • Reserve remaining puree for guests to drizzle over individual servings.

I'm so happy to have found this recipe! I love the subtle black currant flavor of creme de cassis. Delicious in desserts, baked goods or drizzled over ice cream. Mix an ounce or 2 with your favorite carbonated beverage for a lite refreshing cocktail.

1 lb black currants, mashed
2 1/2 cups red wine
4 -5 cups sugar
2 -2 1/2 cups vodka or 2 -2 1/2 cups brandy

Steps:

  • Combine the currants and red wine in a ceramic or glass bowl, and leave for at least 24 and up to 48 hours.
  • Purée the mixture in a food processor or blender, and then strain it through a cheesecloth-lined sieve into a large saucepan.
  • For every cup of liquid, add 1 cup of sugar.
  • Heat gently, stirring frequently, until the sugar has dissolved.
  • Do not let the liquid come to a simmer, as you don't want to boil off the alcohol. Then leave at the lowest heat for an hour or more, stirring occasionally, until the liquid has reduced a little and become slightly syrupy.
  • Allow to cool.
  • Mix together 1 part vodka or brandy with 3 parts of the cooled blackcurrant-wine syrup, and funnel into clean, dry bottles. Store in a cool place for at least 2 weeks before drinking.
  • Use whenever a recipe/cocktail calls for creme de cassis.
