1 cup sugar
2 tablespoons cornstarch
1 dash salt
4 tablespoons butter
6 tablespoons lemon juice
1 tablespoon fresh lemon rind (grated)
2 cups boiling water

Steps:

  • Sift cornstarch and sugar to keep it from lumping and then combine with salt and boiling water.
  • Cook over medium heat, stirring occasionally, until boiling and clear, about 5 minutes.
  • Stir in remaining ingredients.
  • Keep warm till ready to serve.

5 tablespoons all-purpose flour, divided
1/4 cup grated Parmesan cheese
3/4 teaspoon salt, divided

2 eggs
2 tablespoons butter, divided
1 tablespoon olive oil
3/4 cup chicken broth
1/2 cup apple juice
1 tablespoon lemon juice
1 tablespoon minced fresh parsley

Steps:

  • Flatten chicken to 1/4-in. thickness. In a shallow bowl, combine 4 tablespoons flour, cheese, 1/2 teaspoon salt and 1/4 teaspoon pepper. In another shallow bowl, beat the eggs. Coat chicken with flour, then dip into egg mixture., In a large skillet, cook chicken in 1 tablespoon butter and oil over medium heat for 3-5 minutes on each side or until no longer pink. Remove and keep warm., In a small bowl, combine remaining, salt and pepper; stir in broth until smooth. Add apple juice to the skillet, stirring to loosen any browned bits. Stir broth mixture and add to the pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened., Stir in lemon juice; cook for 1 minute. Add parsley and remaining butter; cook and stir until butter is melted. Serve with chicken.

This easy skillet creamy lemon chicken is a winner! Tender pan-seared chicken served with a creamy and tangy lemon garlic sauce. It's a quick 30 minute weeknight option!

2 large chicken breasts
Salt and pepper
1 teaspoon Italian herb seasoning
½ cup all-purpose flour
Olive oil
3 cloves garlic, minced
2 tablespoons unsalted butter
½ cup chicken broth
2 tablespoons fresh lemon juice, plus more to taste
1 cup heavy cream
Salt and pepper to taste
Fresh chopped parsley for garnish
Lemon slices for garnish

Steps:

  • Cut each chicken breast in half lengthwise to get thinner cutlets. Over plastic wrap, slightly pound the chicken to even thickness as needed using a meat mallet. This is for even cooking and to tenderize the chicken a bit.
  • Season both sides of the chicken cutlets with salt, pepper, and Italian seasoning (per chicken cutlet, use about ¼ teaspoon each: Kosher salt, ground black pepper, Italian herb seasoning). Dredge the seasoned chicken in flour and shake off any excess.
  • Heat some olive oil in a large nonstick skillet over medium heat. Cook prepared chicken on both sides, about 4-5 minutes per side, until golden brown or until internal temperature reaches 165 degrees F. Remove chicken from pan and set aside.
  • Don't wipe the pan clean. Melt 2 tablespoons unsalted butter, then add garlic, and cook until fragrant. Add chicken broth and 1 tablespoon lemon juice. Taste it, and add the second tablespoon of lemon juice if desired (I ended up adding 2 tablespoons). Bring to a light simmer. Then, stir in heavy cream plus salt and pepper to taste until evenly combined.
  • Return chicken to pan and bring to a simmer. Simmer for another 4-5 minutes until the sauce has thickened a bit.
  • Serve with lemon slices and freshly chopped parsley. Enjoy!

1 Tbsp. extra virgin olive oil
1 Tbsp. butter
1/8 tsp. sea salt
1/4 tsp. herbs de Provence
pinch of cayenne pepper

1 Tbsp. finely chopped parsley
2 Tbsp. white wine
3 Tbps. lemon juice, plus extra

Steps:

  • First, thaw the frozen flounder fillets either on the counter or overnight in the fridge. Open the packages, and drain the excess water from their packaging. Give them a quick rinse under running water, and allow them to drain again.
  • Next, in a 10-inch non-stick skillet, heat olive oil and butter on low heat, until the butter melts.
  • When the butter is melted, add the fillets to the skillet. Sprinkle over them with some sea salt, herbs de Provence, oregano, and cayenne pepper.
  • Cook them on low heat for 30 seconds to one minute. They will start to release excess water, and that's fine.
  • Pour in the wine and lemon juice, and sprinkle over them with freshly chopped parsley. Then cover with a lid.
  • Simmer for 4 to 6 minutes or more, ( depending on how thick the fillets are) until the fish turns opaque-white-ish and the sauce is reduced a little. And the fish flakes off with a fork.
  • When the flounder fillets are fully cooked. Turn off the heat. Squeeze additional lemon juice over the fish (about 1 tablespoon, or more). Then serve.

2 tablespoons butter
2 teaspoons flour
2 tablespoons lemon juice

  • When I originally wrote this recipe, I really didn't think about the garlic much. I was using peeled garlic. If you use a head of garlic, do yourself a favor: Cut the head in half across the grain, and either use a garlic roaster, or wrap the head in foil tightly and bake for an hour at 250; That will loosen the cloves, and roasting will impart more flavor. Just squeeze each clove into the pan. OR (original instruction) mince the garlic until it's very fine.
  • Melt the butter in a small pan.
  • Add the minced garlic. brown the mixture.
  • Add the flour and whisk to form a roux.
  • Add the lemon juice and milk. Continue whisking until the sauce is smooth.

3 lemons, peeled and quartered
2 tablespoons minced garlic

1/2 pound (2 sticks) unsalted butter, cut up, at room temperature

  • Heat a large nonreactive skillet over high heat. When the skillet is hot, add the wine, lemons, garlic, and shallots. Cook for 3 minutes, breaking up and mashing the lemons with a wire whisk. Stir in the salt, pepper, Worcestershire, and hot sauce and cook until the mixture is somewhat syrupy, for about 3 minutes. Stir in the cream and cook for 1 minute. Over low heat, whisk in the butter a few pats at a time. When all of the butter has been added, remove from the heat, but continue whisking until all of the butter is incorporated into the sauce. Strain the sauce, pressing all of the liquid into a bowl. Stir in the parsley. Serve immediately, or keep warm for a few minutes until ready to use.
