LEMON POPPYSEED TRUFFLES



Lemon Poppyseed Truffles image

These lemon poppy truffles take minutes and are so soft and decadent and delicious that you won't know what hit you. Plus they are made with almond flour which is the perfect grain free pick-me-up that will keep you full for hours, while also giving you a sweet treat that you will feel great eating. Perfect for lemon lovers and citrus lovers everywhere!

Number Of Ingredients 5

1 cup almond flour, packed (around 150g)
3 tbsp maple syrup
2 tbsp lemon juice
3/4 tbsp poppyseeds
1 pinch salt

Steps:

  • Combine all the ingredients together and mix well.
  • Scoop into 1 tbsp sized balls and roll until smooth. This should make about 12 truffles.
  • You can serve immediately or store in an airtight container in the fridge for 5-7 days.

2 cups Fiber One Complete pancake mix (from 28.3-oz box)
2 tablespoons sugar
1 tablespoon poppy seed
1 cup cold water
1 tablespoon grated lemon peel
4 cups fresh lemon juice
2 containers (6 oz each) Yoplait Light Fat Free lemon cream pie or very vanilla yogurt
Fresh fruit, if desired

Steps:

  • Heat waffle maker. Grease with vegetable oil or shortening.
  • In medium bowl, stir pancake mix, sugar, poppy seed, water, lemon peel and lemon juice with fork or wire whisk until smooth.
  • Pour batter onto center of waffle maker. Bake about 5 minutes or until steaming stops.
  • Serve waffles topped with yogurt and fruit.

2 cups packed dates pits removed
4 tablespoons poppy seeds
1 vanilla bean insides
1/2 cup shredded coconut

Steps:

  • Pit dates, scrape vanilla bean. Place all items into food processor or high power blender except coconut. Pulse with all items until consistent texture. Will be sticky! You may add a tiny amount of water if needed to get uniform texture. Remove by spoonfuls, roll into balls, then roll the balls shredded coconut.

½ cup lemon juice
2 teaspoons diced onion
1 teaspoon Dijon mustard
½ teaspoon salt
⅔ cup canola oil
1 tablespoon poppy seeds

Steps:

  • Blend sugar, lemon juice, onion, Dijon mustard, and salt in a blender until smooth. Stream canola oil in a thin stream into the mixture while blender is running. Add poppy seeds and pulse blender a few times, just to mix seeds into the dressing.

3 cups all-purpose flour
1 ½ teaspoons baking soda
¾ teaspoon salt
¾ cup butter, softened
2 cups white sugar
3 eggs
½ cup lemon juice
¾ cup plain yogurt
3 tablespoons lemon zest
½ cup poppy seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Heavily grease and flour two 9x5 inch loaf pans.
  • Sift together flour, baking soda, and salt. Set aside.
  • In a large bowl, cream butter or margarine, and sugar until light and fluffy. Beat in eggs, one at a time.
  • Mix lemon juice and yogurt together and add alternately with the sifted flour mixture to the butter mixture. Mix until just blended. Stir in lemon rind and poppy seeds. Pour mixture into prepared pans and smooth tops.
  • Bake at 350 degrees F (175 degrees C) for 50 minutes or until browned and a knife inserted in the center comes out clean. Cool on rack for 15 minutes before turning out of pans.

I grew up having a lot of poppy desserts, so I thought of it right away! You don't have to grind the poppy, but it's just the texture I prefer - you can do it easily in a coffee grinder or buy it already ground! Cooking time is really the chilling time.

2 cups neufchatel cheese
2 tablespoons poppy seeds, ground
1 1/2 tablespoons lemon zest (from 1 med lemon)
1 tablespoon lemon juice, fresh squeezed
3 tablespoons icing sugar
1 cup white chocolate chips
1/2 cup hundreds and thousands (sprinkles)

Steps:

  • Cream together the Neufchatel cheese, poppy seed, lemon juice, and zest. Add the icing sugar to thicken up the mixture (add 1 more tbsp if you want it sweeter). Put in the fridge to set - about 2 hours.
  • Line a cookie tray with wax paper. Using small scoop (about 1 tbsp), make small balls of the truffle mixture (or you can just scoop out 1 tbsp at a time and roll into a ball between your palms).
  • As you finish the tray, put it in the fridge for about 15 minutes to be ready for dipping.
  • Melt the chocolate in a double boiler or the microwave and have the sprinkles in a bowl. Using a fork, dip each truffle into the white chocolate and then the sprinkles and return to tray to set (I like to dip just the top half and have the bottom half "naked", with the chocolate kind of running down it).
  • To serve, put the truffles in little foil candy cups and put on a serving tray or in a gift box to give away!

These are 1 hour rolls. The rolls are dusted with poppy seed right before baking. I like to bake them in muffin tins. To prebake and freeze, take them out after 10 minutes. Cool and freeze. Thaw and bake to finish. Longer baking time in muffin tins. Drop a powdered sugar glaze on top if desired. Photo shows glaze. I prepare both.

Number Of Ingredients 13

2 (1/4 ounce) packages fleischmann's fast rising yeast
1/3 cup warm water
4 tablespoons sugar
3 teaspoons lemon juice
3/4 cup melted shortening
1 1/2 cups lukewarm buttermilk
5 1/2 cups flour
1 teaspoon baking soda
1 1/2 teaspoons salt
1/4 cup cornstarch
1/4 cup melted margarine or 1/4 cup butter
Pam cooking spray
1/8 cup poppy seed (optional)

Steps:

  • Into two cup Pyrex glass measuring cup, add warm water and yeast; stir.
  • In microwavable small bowl add sugar, lemon juice and 3/4 cup shortening. Microwave on 70% power, covered, until melted and dissolved. Stir until warm, not hot.
  • Add to dissolved yeast and water.
  • In large bowl add flour, baking soda and salt, mix.
  • Add buttermilk and stir.
  • Add yeast mixture and stir and mix well. Use dough hook on mixer and beat until smooth. If dough is too sticky, add a little flour each time until the dough pulls away from the sides of the bowl.
  • Cover with a cloth and let rise 10 minutes in a draft free warm area.
  • ( I turn oven on at 170*,cover and let rise in oven.
  • Spray cooking sheets or muffin pans with Pam.
  • Preheat oven to 400°.
  • Dust your hands with cornstarch. Shape into rolls and place on cooking sheets or muffin pans. Let rise 30 minutes.
  • (I put back in a 170* oven and let rise 30 minutes)
  • With pastry brush tops with melted margarine.
  • Optional step: Sprinkle with poppy seeds.
  • Optional step: Top with drops of white glaze.
  • Bake at 400° 18 to 20 minutes. Muffin pans take longer baking.
  • When the tops start to brown, press lightly on the top to see if it springs back. If it does, the rolls are done.
  • These rolls are wonderful to take to a potluck. They stay moist.
