1 lime (juiced)
1/4 cup chopped fresh cilantro

Steps:

  • Gather the ingredients.
  • Pour the vegetable broth, rice vinegar, soy sauce, sesame oil, sugar, garlic, ginger, chili paste, and the juice of 1 lime in a blender, or use an immersion blender.
  • Blend the ingredients on high for about 10 seconds, or until the mixture is smooth and free of clumps.
  • Transfer the dressing to a clean jar or bottle and add the chopped cilantro to the dressing mixture, stirring the mixture lightly to incorporate. Serve with your favorite salad.

  • Lightly toast the cashews in a dry skillet over medium-high heat until golden and fragrant, 2 to 3 minutes. Coarsely chop and set aside.
  • In a large bowl, combine the carrots, chopped mint, chopped basil, zucchini noodles, cucumbers, bell peppers, cabbage and toasted cashews. Add the dressing to the bowl and toss together gently (zucchini noodles are fragile). Garnish with mint and basil leaves and serve.
