1 cup mixed unsalted nuts (I used peanuts, almonds and pistachios)
1/4 cup sugar
1 1/2 teaspoons lemon pepper

Steps:

  • In large pan, combine cashews and sugar over medium high heat.
  • Stir until sugar melts completely (about 5-7 minutes). Lower heat, and stir in lemon pepper.
  • Pour onto sheet of wax paper on a cooling rack, and spread out. Allow to cool.
  • Store in tightly-sealed container.

Steps:

  • Place a medium-size saute pan over medium heat. Add olive oil and cashews and toss to coat. Add chili powder, salt, and pepper and toss until warmed through. Remove from heat and serve. They will crisp as they sit.

1/4 cup sugar
1 pinch salt
1 lemon, zest of
1 teaspoon freshly cracked pepper

Steps:

  • In large pan, combine cashews and sugar over medium high heat.
  • Stir frequently until sugar starts to melt. Lower heat, and stir continuously for 10 minutes, or until sugar starts to fully melt and cover nuts.
  • Add pepper and continue to cook for an additional minute or two, until nuts are well glazed and pepper is well mixed inches
  • Add lemon zest and stir until well mixed.
  • Pour onto sheet of wax paper on a cooling rack, and spread out. Allow to cool.
  • Store in tightly-sealed container.

Sauce should be somewhat thin and watery, like the texture of non-dairy milk. It should taste quite tart from the lemon juice, and savory from the garlic powder. If it seems too tart, don’t worry! It will balance out once it’s on the pasta. Adjust to taste by adding more lemon juice for brightness, or nutritional yeast for a more savory cheesy flavor.
  • Transfer sauce to a large shallow pan, such as a Dutch oven or rimmed skillet (at least 10 inches in diameter and 3 inches deep). Test pasta for doneness. It should be just a little firmer than you want it to be, as it will finish cooking in the sauce.
