Lemon makes almost anything taste better, and this asparagus recipe is no exception! Here's how to make Lemon Roasted Asparagus, a perfect side for your family dinners.

2 lemons
1 tsp. kosher salt
3 lb. asparagus, trimmed
Olive oil, for drizzling
1 c. fresh parsley, chopped

Steps:

  • Grate the zest of the lemons. Spread out the zest on a plate and let it air-dry slightly, about 30 minutes.
  • Preheat the oven to 450˚. Mix the lemon zest with the salt in a small bowl and set aside. Cut the lemons in half and set aside.
  • Divide the asparagus between 2 baking sheets, drizzle with olive oil and toss to coat. Roast until the asparagus is tender and starting to color, 8 to 10 minutes. Transfer the asparagus to a platter.
  • Before serving, squeeze the lemons over the asparagus, drizzle with olive oil and sprinkle with the lemon salt and parsley.

1/2 cup butter, divided
1 teaspoon sesame seeds
1 teaspoon finely minced onion
2 teaspoons chopped fresh parsley
2 teaspoons freshly squeezed lemon juice
1/2 teaspoon grated lemon, zest of
1/2 teaspoon salt
1/4 teaspoon ground black pepper
4 (15 ounce) cans asparagus spears, drained

Steps:

  • In medium skillet,combine 2 tablespoons butter,sesame seed and onion over medium heat.
  • Stirring frequently,cook until sesame seed is lightly browned and onion is tender.
  • Add reamaing 6 tablespoons of butter and stir until melted.
  • Remove from heat and stir in parsley,lemon juice,zest,salt and pepper.
  • Place asparagus in microwave safe dish.
  • Cover and microwave on high power 3-5 minutes until heated through,rotating dish halfway through cooking time.
  • Pour butter mixture over asparagus.
  • Garnish with additional lemon zest and chopped parsley if desired.

1 1/2 pounds large or medium asparagus
6 tablespoons butter
Salt and pepper
2 tablespoons lemon juice
1/2 teaspoon lemon zest
1 tablespoon snipped chives
1 tablespoon roughly chopped parsley or chervil
1 teaspoon chopped tarragon, plus more for garnish
1 tablespoon chopped dill, plus more for garnish (optional)

Steps:

  • Snap off and discard the tough bottoms of the asparagus spears. If using large, thick asparagus, peel the lower ends with a vegetable peeler.
  • Put butter in a wide skillet over medium-high heat. Add asparagus in one layer and season with salt and pepper. Add 1/2 cup water, cover, and bring to a simmer. Cook until the asparagus is firm-tender, about 3 minutes. Take care not to overcook them; they should still be bright green. (They will continue to cook a bit once the heat is off.) Remove the asparagus from the pan and place on a serving platter.
  • Turn heat to high and simmer briskly until most of the liquid has evaporated, a minute or so. Add lemon juice and zest to the buttery juices. Turn off heat and stir in chives, parsley, tarragon and dill, if using. Check seasoning. Spoon the sauce over the asparagus, garnish with a few herb leaves, and serve.

1 1/2 to 2 pounds large asparagus
Olive oil as needed, about 2 tablespoons
Salt and freshly ground black pepper to taste
Juice of 3 lemons
2 tablespoons minced shallots or scallions
1/4 cup minced fresh parsley leaves

Steps:

  • Snap off the woody ends of the asparagus; most spears will break an inch or two from the bottom. Peel the stalks up to the flower bud. Meanwhile, start a charcoal fire or heat a gas grill; if you're cooking indoors, heat a cast-iron or other heavy skillet over medium-high heat until it smokes.
  • To grill the asparagus spears, toss them with about a tablespoon of oil, mixing with your hands until spears are coated. Season well with salt and pepper. Grill until tender and browned in spots, turning once or twice, in all 5 to 10 minutes.
  • To pan grill the asparagus, do not oil or season them. Just toss them in the hot skillet, and cook, turning the spears individually as they brown, until tender, 5 to 10 minutes. Remove as they finish, and season with salt and pepper.
  • Mix together the lemon juice and shallots, then stir in enough olive oil to add a little body and take the edge off the sharpness of the lemon; the mixture should still be strong. Season it well with salt and plenty of black pepper, and stir in the parsley. Serve the asparagus hot or at room temperature with grilled fish. Spoon the sauce over everything.

2 garlic cloves, finely minced
1/4 cup finely chopped flat-leaf parsley
2 teaspoons finely chopped lemon zest
2 pounds asparagus, trimmed
Salt
freshly ground pepper
2 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil

Steps:

  • Once you have finely chopped the garlic, parsley and lemon zest, chop them together on a cutting board until well combined. (This mixture is the gremolata.) Transfer to a bowl. Warm a serving platter.
  • Steam or boil the asparagus in salted water until tender, four to five minutes. Remove from the heat, and toss with the gremolata. Add salt and pepper to taste. Mix together the lemon juice and olive oil, and drizzle over the asparagus. Serve hot or warm.

500 g asparagus, trimmed
3 tablespoons flat leaf parsley, chopped
1 tablespoon olive oil
2 garlic cloves, chopped
1 teaspoon lemon rind
1 lemon, juice of
1/4 teaspoon chili flakes
2 tablespoons water
400 g linguine

Steps:

  • Cook asparagus until al dente. I do this in the microwave - place asparagus in plastic bag, 1 tbs water seal and cook for 1 minute. Straight away drop into ice water to stop the cooking process.
  • Geat frying pan, add olive oil and saute garlic, lemon rind, chilli flakes and parsley until fragrant.
  • Add asparagus and water. Cook 5 minutes. Season.
  • Cook pasta until al dente, drain and toss through sauce with lemon juice and some reserved pasta water for added moisture.

1 pound asparagus spears, ends trimmed
⅓ cup margarine or butter
3 tablespoons sesame seed
1 tablespoon lemon juice, or to taste
1 tablespoon chopped fresh parsley
Salt and pepper to taste

Steps:

  • Place the asparagus in a large pot filled with water 1 inch deep. Bring to a boil, and cook until tender, but still bright green. This will take about 5 minutes, or longer if your asparagus spears are thick. Drain and place on a serving dish.
  • Meanwhile, melt the margarine or butter in a skillet over medium heat. Stir in the sesame seeds, and cook, stirring frequently, until they are golden brown and toasted, about 2 minutes. Stir in the lemon juice and parsley; season to taste with salt and pepper.
  • To serve, pour sauce over the cooked asparagus.
