CHICKEN OR TURKEY & STUFFING SUPREME CASSEROLE
A complete Thanksgiving meal for empty-nesters and singles! Without the chicken or turkey, it's one of the best stuffing side dishes you'll ever eat.

Steps:
- *Equivalent amount of fresh or frozen may be substituted
- **I do not recommend turkey thighs as they take too long to cook. If using turkey, use only smaller drumsticks, wings or breast cutlets.
- Preheat oven to 375 degrees F. Spray or grease lightly a 1.5-2 quart baking dish.
- In a large bowl, combine the soup and milk, stirring until smooth. Add the dry poultry stuffing and the green beans. Stir to combine.
- Transfer stuffing mixture to prepared baking dish.
- Pat chicken/turkey parts dry. Drizzle melted butter over poultry and stuffing (the parts of the stuffing that are visible). Sprinkle salt & pepper (to taste) on poultry only.
- Bake for 45-50 minutes (for chicken, turkey will need longer) or until internal temperature is 185 degrees F or juices run clear.
- Top entire casserole with french fried onions. Bake for an additional 10 minutes, or until onions turn golden brown.
- CROCK POT DIRECTIONS:
- Proceed as above, but cook on low 6-8 hours, high 4-6. Check chicken for doneness as each slow cooker cooks differently

Steps:
- Preheat oven to 350 degrees.
- Make stuffing according to directions.
- Put 1/2 of the stuffing in the bottom of an 8x11 baking pan.
- Shred or chop the chicken/turkey into 1 inch pieces and place over the stuffing layer.
- Mix soup, mayo, sour cream together and spread over the chicken/turkey.
- Spread the remaining stuffing over the soup layer.
- Beat the two eggs with the 1 cup of milk and pour over all.
- Bake 1 hours.

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine the stuffing crumbs, sage, celery and chicken broth, and then set aside. Place the celery soup and the chicken soup into two separate bowls and add 1/2 of a soup can of water to each. Stir these well and set aside.
- Sprinkle 1/3 of the stuffing crumb mixture into the bottom of a lightly greased 9x13-inch baking dish. Then layer with 1/2 of the shredded turkey meat and pour the celery soup mixture over this. Sprinkle another 1/3 of the crumb mixture over this, followed by the remaining turkey. Pour the chicken soup mixture over this and top off with the remaining stuffing mixture. Drizzle the melted butter over all and press the entire mixture down into the dish until firmly packed.
- Bake at 425 degrees F (220 degrees C) for 20 to 30 minutes.

TURKEY STUFFING SUPREME
This is essentially the stuffing my polish father made when he was chef at the old Westbury hotel in Toronto with some minor changes by me over time. The only problem with it is guests love it so much they usually finish it off and you are left with leftover turkey and no stuffing. I usually make extra in a meatloaf pan for the leftovers.

We love this casserole. It's so simple and easy to make. It's always the first to go at family dinners. Letting it set over night really makes the differnce. You can also freeze uncooked just make sure to defrost well before baking.

- Stew chicken and remove skin and bones.
- Cut chicken into bite size pieces and put into a 9 x13 pan.
- Combine soup, milk and sour cream.
- Pour over chicken.
- Mix stuffing mix with onion, celery and butter.
- season with salt and pepper to taste.
- Put suffing mixture over chicken.
- Let set over night.
- Bake for 1 hour at 350.
- Bake covered in foil for 45 min.uncover for last 15 minute for browning.

Steps:
- Preheat oven to 400°F. Place chicken in the bottom of a 13x9x2 pan. Place cheese slices on top of chicken.
- Mix the package of bouillon, soup, and milk together. Pour it over top of the cheese. Pour the cubed stuffing on top. Then pour the melted butter over top.
- Cover and bake for about 55 minutes. Uncover and bake for an additional 5 minutes if you want to make the stuffing a little crispy.
