LEMON OR LIME PIE PALETAS (POPSICLES)

Steps:
- Place the sweetened condensed milk, half-and-half, juice, zest and salt in a bowl and whisk until thoroughly combined.
- If using conventional molds, divide the mixture among the molds, snap on the lid and freeze until solid, about 8 hours.
- If using small paper cups, freeze until pops are beginning to set (1-1/2 to 2 hours), then insert the sticks and freeze until solid, about 8 hours.
- If using an instant ice pop maker, follow the manufacturer's instructions.
- To serve as Mexican Lemon or Lime Pie Paletas, remove from molds and press or roll pops into finely crushed graham cracker crumbs spread on a plate!
- Serve immediately before they melt!

Steps:
- Put the sweetened condensed milk, half-and-half, lime juice, lime zest, and salt in a bowl and whisk until thoroughly combined.
- If using conventional molds, divide the mixture among the molds, snap on the lid, and freeze until solid, about 5 hours. If using glasses or other unconventional molds, freeze until the pops are beginning to set (1 1/2 to 2 hours), then insert the sticks and freeze until solid, 4 to 5 hours. If using an instant ice pop maker, follow the manufacturer's instructions.
- Spread the graham cracker pieces on a large plate. Unmold the paletas and press each side into the graham crackers, coating completely.
MEXICAN PALETAS
Steps:
- Gather the ingredients.
- Place half of the fruit, sugar, water, and lime juice into a blender , and blend until smooth.
- Spoon the remaining chopped fruit into ice pop molds, then add the blended mixture, leaving about 1/2-inch of headspace for expansion.
- Place the molds into the freezer and allow at least 6 hours for your treats to firm up completely. If your molds don't have built-in Popsicle sticks (or you are using paper cups or some other receptacle as molds), take your pops out of the freezer after about an hour and insert wooden sticks into the slushy mix; return to the freezer.
- Remove the pops from the molds and enjoy!

- Stir yogurt, lemon juice, sugar, extract, and food coloring in a medium bowl using a spatula or wooden spoon.
- Scoop equal amounts of lemon mixture into paper dixie cups or popsicle molds. Mine filled 8 dixie cups about 2/3 full.
- Sprinkle about 2 teaspoons of cookie crumbs on top of the yogurt mixture. Use a toothpick or popsicle stick to stir gently. Pack what crumbs are left on top.
- Insert sticks or colorful straws. Freeze for at least 4 hours or overnight. (It’s easiest to freeze the dixie cups if they’re sitting on a cookie sheet.) Remove paper or remove popsicles from molds and enjoy!

- Press one lime slice into the inside of each popsicle mold about halfway down. This is optional and is just for garnish.
- Spoon mixture into nine popsicle molds. The mixture will be a little thick so tap the molds on the counter slightly to remove any air pockets.

- You will need to prepare each color or flavor separately and wait until each one is almost frozen before adding the next layer. I recommend blending each fruit mix or juice right before you freeze that layer to make sure the flavor is a fresh as possible. I also use a thin baking sheet (that will fit in my freeze) to place the molds or cups on, it makes it easier to move them in and out of the freezer when adding each additional layer.
- Blend the kiwi pieces (except the thin slices) with the sugar or honey, lime juice and water. Blend until smooth, taste and adjust the sweetness based on your preference.
