Lemon-Lime Slab Pie image

Zesty, tart and tangy, this slab pie is made easy with Pillsbury™ pie crusts and gets its fresh flavors from the grated zest and juice of lemons and limes. Each piece is topped with a dollop of sweetened whipped cream for a pretty presentation.

1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
2 1/2 cups granulated sugar
1/2 cup cornstarch
2 1/2 cups water
2 teaspoons grated lemon zest
2 teaspoons grated lime zest
1/2 cup fresh lemon juice
1/4 cup fresh lime juice
5 egg yolks
5 tablespoons butter, cut into pieces
1 cup heavy whipping cream
3 tablespoons powdered sugar
1/2 teaspoon vanilla
2 teaspoons grated lime zest

Steps:

  • Heat oven to 450°F. On lightly floured work surface, unroll and stack pie crusts one on top of the other. Roll to 17x12-inch rectangle. Fit crust into ungreased 15x10x1-inch pan, pressing firmly into corners and sides. Fold extra crust under, even with edges of pan. Using fork, prick all over bottom and sides.
  • Bake 10 to 12 minutes or until golden brown and completely baked. Cool completely on cooling rack, about 30 minutes.
  • In 3-quart saucepan, mix granulated sugar and cornstarch. Gradually stir in water, lemon zest, 2 teaspoons lime zest, the lemon juice and lime juice until smooth. Cook and stir over medium-high heat. Heat to boiling; boil 1 minute, stirring constantly, until mixture is bubbly and thickened. Remove from heat.
  • In small bowl, beat egg yolks with whisk. Gradually beat about 1/2 cup hot mixture into egg yolks. Gradually stir yolk mixture into hot mixture in saucepan. Cook over medium heat, stirring constantly, until mixture starts to gently boil. Cook 2 minutes longer, stirring constantly. Remove from heat; stir in butter. Pour over cooled baked crust. Cool at room temperature 15 minutes, then cover filling with plastic wrap. Refrigerate at least 2 hours or until set.
  • When ready to serve, remove plastic wrap from filling. Cut pie into 4 rows by 4 rows. In chilled medium bowl, beat Topping ingredients with electric mixer on medium-high speed until stiff peaks form.
  • Spoon topping into decorating bag fitted with 1/2-inch star piping tip. In center of each piece, apply steady pressure to bag while squeezing, and pipe in tight circle to make rosette flower about 1 1/2 inches in diameter. Stop squeezing, and quickly lift bag off. Garnish rosettes with 2 teaspoons lime zest. Store loosely covered in refrigerator.

Nonstick cooking spray, for the baking sheet
Two 14.1-ounce boxes refrigerated pie crust (4 crusts total)
2 cups firmly packed dark brown sugar
1 cup granulated sugar
4 large eggs
2 sticks (1 cup) unsalted butter, melted
1/4 cup milk
1/4 cup all-purpose flour
4 teaspoons finely grated lemon zest plus 6 tablespoons lemon juice
1 tablespoon vanilla extract
2 cups chopped pecans plus 3 cups pecan halves

Steps:

  • Preheat the oven to 325 degrees F. Spray a 17-by-12-inch rimmed baking sheet with nonstick cooking spray.
  • Unroll the pie crusts and place them in the prepared baking sheet. Line them up so they meet in the center of the baking sheet and overlap a bit. Cut the crusts to fit together in a rectangle slightly larger than the baking sheet, pinching the center seams together. Crimp the dough around the edges of the baking sheet and cut off any excess dough around the edges. Chill while preparing the filling.
  • In a large bowl, whisk together the brown sugar, granulated sugar and eggs until incorporated. Stir in the butter, milk, flour, lemon zest and juice, vanilla and 2 cups chopped pecans until combined.
  • Pour the mixture into the unbaked pie shell. Arrange the pecan halves on top of the pie. Bake until the crust is golden brown and the filling is set but still a little loose in the center (it will set as it cools), about 50 minutes. Serve warm or at room temperature.

1/2 cup (1 stick) unsalted butter, melted
1 1/2 teaspoons vanilla extract
2 teaspoons finely grated lemon zest plus 3 tablespoons juice
2 tablespoons milk
2 tablespoons all-purpose flour
1 cup chopped pecans plus 1 cup pecan halves
One store-bought 9-inch deep-dish pie shell, unbaked

Steps:

  • Preheat the oven to 325 degrees F.
  • In a large bowl, whisk together the brown sugar, granulated sugar and eggs until incorporated. Stir in the butter, vanilla, lemon zest and juice, milk, flour and 1 cup chopped pecans until combined. Pour the mixture into the unbaked pie shell. Arrange the pecan halves on top of the pie in a circular pattern.
  • Bake until the crust is golden brown and the filling is set but still a little loose in the center (it will set as it cools), about 55 minutes. Serve warm or at room temperature.

  • Preheat oven to 325 degrees F. Line a 15x10x1 inch baking sheet/jelly roll pan with foil and spray with cooking spray. Set aside. (If you don't want to remove the whole pie from the pan, skip the foil and just spray the pan.)
  • Place wafers in a food processor and process until finely ground. I did this in two batches, processing the first batch then emptying onto a paper plate. When the second batch was finely ground, I added the first batch back into the processor with the second and proceeded with the next step.
  • Add sugar. Pulse a few times to combine; then add the softened butter and egg whites and process until fully combined, scraping down sides, if necessary.
  • Press crumb mixture into bottom and up the sides of the pan. You should have a good one inch border to be able to hold your filling and topping later. To make this easier, I crumble the crust mixture evenly over the bottom of the pan before I start pressing so that I'm basically just flattening and pressing the crumbs together. I may crumble some extra near the sides to insure there's enough to get the height I need.
