These Lamb Lollipops are the perfect appetizer for a party or gathering of friends and/or family. And they are so easy to prepare and they are just really so festive. Ask your butcher to french the racks of lamb and then cut them into chops.

Number Of Ingredients 7

3 racks lamb (frenched and cut into chops and trimmed of all but thin layer of fat)
Coarse sea salt and freshly ground pepper (or Kosher salt)
3 cloves garlic (minced)
1 tbsp rosemary (fresh, chopped)
1 tbsp thyme (fresh, chopped)
¼ cup olive oil
1 lemon (cut into wedges)

Steps:

  • Liberally sprinkle the chops with salt and pepper all over.
  • In a small bowl, combine the garlic, rosemary, thyme, and salt. Add the oil and whisk until combined.
  • Pour the marinade all over the chops and turn to coat. Cover with plastic wrap and place in the fridge for at least 2 hours, or overnight.
  • Heat a large heavy skillet over medium-high heat, or turn your grill on medium-high heat for direct heat grilling.
  • Sear the chops (in batches if using a hot skillet) until browned on both sides, about a total of 4 to 5 minutes for medium to medium-rare.
  • Transfer to a platter and squeeze a lemon wedge over the top. Sprinkle with a little more sea salt, if desired. Serve at once.

2 x 8-bone rack lamb cutlets , French-trimmed (ask your butcher to do this)
2 tbsp plain flour
1 egg
3 tbsp milk
100g fresh breadcrumb
small bunch parsley , finely chopped
zest 2 lemons
vegetable oil , for frying

Steps:

  • Slice the lamb cutlets between the bones to give you 16 pieces. Remove any big pieces of fat. Cover the cutlets with cling film and lightly bash the meat with a rolling pin to flatten slightly. Put the cutlets in a bowl and sprinkle with flour and some seasoning, tossing to coat.
  • Whisk the egg and milk in a shallow bowl. Place the breadcrumbs, parsley and lemon zest in another. Heat the oven to 200C/180C fan /gas 6. Heat enough oil in a large frying pan to come 0.5cm up the side.
  • Dip each lamb cutlet into the egg mixture, then into the breadcrumbs, pressing gently to help crumbs stick. Cook each cutlet in the hot oil for 2 mins each side until golden brown - you will need to do this in batches. Drain on a plate lined with kitchen paper. When all cutlets have been fried, place on a baking tray and cook in the oven for 3 mins more. This will ensure that any parts of the bone that did not touch the pan have been cooked. Leave to cool, then chill if making ahead or pack into containers for your picnic.

1 tablespoon coriander seed
1 tablespoon mustard seed
1 pound lamb leg, cut into 1-inch cubes
1 pound pork shoulder, cut into 1-inch cubes
1 pound smoked applewood bacon, cut into 1-inch pieces
2 ounces fresh sage, roughly chopped
2 ounces fresh oregano, roughly chopped
2 teaspoons cayenne pepper
1 teaspoon smoked paprika
2 teaspoons garlic powder
2 teaspoons freshly ground black pepper
3 tablespoons salt
Extra-virgin olive oil, for sauteing

Steps:

  • Toast the coriander seed and mustard seed in a small, dry saute pan over low heat until fragrant. Place the toasted seeds in a spice grinder and grind to a powder. Place lamb, pork, and bacon in a large bowl. Add all herbs and seasonings and toss to combine well.
  • Grind the meat in a meat grinder with a medium die and then chill overnight.
  • Wrap 1 tablespoon of ground meat around the end of an ice pop stick. Repeat until all meat is used. Refrigerate for 2 hours.
  • Heat olive oil in a large saute pan over medium heat. Saute lollipops, in batches, until meat is cooked through, about 2 minutes on the first side and 1 minute on the other side. Serve hot.

12 to 14-ounce lamb racks (4 racks serve 6 persons)
Clayton Shurley's Smoked Finishing Salt
Clayton Shurley's Powdered Herb Butter
Black pepper
Olive Oil
Chopped garlic
Chopped rosemary leaves

Steps:

  • Trim the silver skin off lamb racks and cut into individual chops. Rub lamb with Smoked Salt, Herb Butter and black pepper. Then toss the racks with olive oil, garlic and rosemary.
  • Turn on grill or start fire making sure grill is hot before placing lamb on grill. Rub the grill with a towel coated with olive oil. Place lamb lollipops on grill and cook for 3 to 4 minutes on each side or desired doneness.

Six 3/4-inch-thick lamb chops, Frenched
2 tablespoons olive oil
1/2 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper
2 teaspoons herbes de Provence
1 1/2 teaspoons agave nectar
2 tablespoons chopped fresh mint

Steps:

  • Place the lamb chops on a baking sheet. Drizzle with the olive oil on both sides, and sprinkle both sides with the sea salt, pepper and herbes de Provence. Let sit at room temp for 5 minutes.
  • Heat a grill pan over high heat until almost smoking. Add the chops, in batches if necessary, and sear for about 4 minutes. Flip, and cook for another 3 minutes for medium-rare and 5 minutes for medium. Transfer the chops to a serving platter. Drizzle with the agave and sprinkle with the mint.

3 cloves garlic, smashed
2 lemons, halved and thinly sliced
1/2 cup extra-virgin olive oil
6 sprigs mint, leaves torn
4 large sprigs rosemary, leaves torn
16 baby lamb chops (2 1/2 to 3 pounds), bones frenched
2 teaspoons paprika
Kosher salt and freshly ground pepper

Steps:

  • Combine the garlic, lemons, olive oil, mint and rosemary in a large bowl. Sprinkle the lamb chops with the paprika, and salt and pepper to taste; add to the bowl and toss to coat. Cover and let marinate at room temperature, turning occasionally, about 1 hour.
  • Heat a large cast-iron skillet over high heat. Working in batches, cook the chops and lemons until browned, 3 to 4 minutes per side. Serve the chops topped with the lemons.

1 garlic clove , crushed
juice ½ lemon , save the other half for the purée
1 small red chilli , finely chopped
small splash of olive oil
12 lamb cutlets , well trimmed and meat flattened out slightly
bread , to serve
300g podded and skinned broad bean (about 1.2kg unpodded)
3 tbsp olive oil
juice of the other ½ lemon
small pack mint leaves, roughly chopped

Steps:

  • Mix the garlic, lemon, chilli and olive oil together, put the lamb cutlets in a dish and pour over the marinade. Cover and leave to marinate for 1 hr in the fridge, if you have time. Tip the broad beans into a food processor with half the olive oil, plenty of salt and pepper, and the lemon juice. Blitz to a chunky purée, then tip into a saucepan but leave off the heat.
  • Heat a griddle pan and cook the lamb for 2-3 mins on each side for thinner chops, 3-4 mins on each side for thicker chops. While the chops cook, gently heat the purée. Then stir through the mint and the rest of the olive oil. Check for seasoning. Serve the lamb in a pile with a bowl of the smashed broad beans and plenty of bread to mop up the juices.

ONE-PAN HERBY ROAST LAMB WITH LEMON, POTATOES & FETA



One-pan herby roast lamb with lemon, potatoes & feta image

Enjoy a roast lamb dinner with a twist. There's no need to labour over gravy - instead, the lemon and garlic pair well with a quick yogurt and harissa sauce

2kg leg of lamb
1 garlic bulb (about 10 cloves)
small bunch of mint
small bunch of parsley
2 large rosemary sprigs, needles picked
1 lemon, zested and thinly sliced
1 preserved lemon, peel cut into quarters, flesh and pips discarded (or use 1 heaped tsp preserved lemon paste)
70ml olive oil
1kg floury potatoes (such as Maris Piper or King Edward), halved or quartered if large
1 tbsp harissa paste
200g thick Greek yogurt
200g feta cheese, crumbled steamed peas or spring greens, to serve

Steps:

  • Take the lamb out of the fridge at least 1 hr before cooking to come to room temperature. Score the skin into 3cm diamonds using a sharp knife, but don't cut too deep.
  • Cut the garlic bulb in half to expose the flesh of each clove. Set one half aside, then pop the cloves from the remaining half out of their skins. Put these in a small food processor along with most of the mint and parsley, the rosemary, lemon zest, preserved lemon and a large pinch of salt. Blitz the mixture together, or pound using a pestle and mortar, adding half the olive oil once the herbs have started to break down. Pour the marinade over the lamb, massaging it into the cuts. Leave to marinate at room temperature for at least 30 mins, or chill for up to 24 hrs.
  • Heat the oven to 200C/180C fan/gas 6. Put the lamb in your largest roasting tin (you'll need space to add the potatoes later). Wrap well with foil and bake for 45 mins.
  • Meanwhile, put the potatoes in a large pan of cold salted water. Set over a medium heat and bring to the boil, then reduce the heat and simmer for 5 mins. Drain and leave to steam-dry for 10 mins.
  • Remove the lamb from the oven and lift onto a board. Drizzle the remaining oil into the roasting tin, then tip in the potatoes, fresh lemon slices and the remaining garlic bulb half, rubbing the cut side in the oil. Season and toss to coat the potatoes and lemon slices in the oil and lamb juices. Sit the lamb on top.
  • Return to the oven for 35 mins more for medium (a thermometer should read 55C), or 50 mins for well done. Transfer the lamb to a warm platter, cover and leave to rest. Meanwhile, shake the potatoes around in the tin and return to the oven for another 20-25 mins, or until golden and crisp. Swirl the harissa paste through the yogurt.
  • Roughly chop the remaining mint and parsley. Scatter the chopped herbs and feta over the potatoes. Carve the lamb and pour any roasting juices into the spiced yogurt, and mix through. Serve the lamb and potatoes with peas or spring greens, and the spiced yogurt sauce on the side for drizzling over.
