1 1/2 tablespoons garlic (finely minced)
1 tablespoon fresh lemon zest
4 tablespoons lemon juice (freshly squeezed )
1/2 cup minced fresh herbs (I used a mix of basil, rosemary and oregano)
1 teaspoon salt
1/4 teaspoon pepper
4 tablespoons extra virgin olive oil
2 medium zucchini (cut into 1/2 inch slices)
1 large red bell pepper (cut into 3/4 inch squares)
1 medium red onion (cut into wedges and then 3/4 inch squares)
1 1/4 pounds boneless skinless chicken breasts (cut into 1 inch cubes)
1 lemon cut into wedges for serving

Steps:

  • In a small bowl combine garlic, lemon zest, lemon juice, herbs, salt, pepper, and olive oil. Set aside.
  • Place cut vegetables in a zip lock bag and add 3 tablespoons of the herb marinade. Toss to coat. Place chicken in separate bag and add remaining marinade and toss to coat. Let sit in the fridge for at least 30 minutes and up to 4-6 hours.
  • Preheat the grill to medium heat. Thread the skewers alternating with meat and vegetables. Lightly sprinkle with salt and pepper. Grill for 3-4 minutes and then flip. Continue to cook and flip when necessary until the chicken is cooked through to 165 degrees.
  • Serve with lemon wedges and squeeze on top.

¼ cup olive oil
¼ cup lemon juice
zest of 1 lemon
2-3 garlic clove (crushed)
2 tsp fresh thyme
2 tsp rosemary
1 tsp dried oregano
1 tsp salt
1 tsp pepper
4 large chicken breasts (skinless, boneless)
wooden skewers (soaked in boiling water for 30 minutes)

Steps:

  • Combine all the ingredients for the marinade.
  • Slice the chicken into bite-sized chunks and place in a bowl. Pour over the marinade, cover and allow to marinade for at least 30 minutes but up to 24 hours, covered in the fridge.
  • Thread the marinated chicken onto soaked wooden skewers or metal skewers.
  • Heat an outdoor grill or stovetop grill pan then cook the skewers, turning every 3-5 minutes, until the chicken is cooked through and golden brown on all sides.
  • Remove from the heat and allow to rest for 5 minutes before serving.

3/4 cup lemon juice
1 tablespoon onion powder
2 teaspoons garlic powder
1-1/2 teaspoons salt

These chicken skewers in flatbreads taste great as well as being healthy and an easy-to-make dinner for hectic weeknights

1 small pack mint , leaves picked
150g natural yogurt , plus extra to serve (optional)
1 lemon , zested and juiced
½ tsp ground cumin
½ tsp ground coriander
2cm piece ginger , grated
4 skinless chicken breasts, each cut into 6 pieces
4 wholemeal flatbreads or pittas
2 Little Gem lettuces , sliced
1 small red onion , sliced, to serve
pickled red cabbage , chilli sauce and hummus, to serve (all optional)
4 metal or wooden skewers

Steps:

  • Chop half the mint and put in a bowl with the yogurt, half the lemon juice, all the lemon zest, spices and ginger. Mix well and season with lots of black pepper and a pinch of salt. Add the chicken pieces, mix well and put in the fridge for 20-30 mins. Meanwhile, soak 4 large wooden skewers in water for at least 20 mins (or use metal ones).
  • When you're ready to cook the chicken, heat your grill to a medium heat and line the grill tray with foil. Thread the chicken onto the soaked wooden or metal skewers and grill for 15-20 mins, turning halfway through, until browned and cooked through.
  • Warm the flatbreads under the grill for a couple of seconds, then serve them topped with the lettuce, chicken, red onion, remaining lemon juice and mint, and any optional extras such as extra yogurt or pickled cabbage, chilli sauce and hummus.

2 teaspoons Italian seasoning
½ teaspoon seasoning salt
½ teaspoon mustard powder
1 teaspoon garlic powder
½ teaspoon ground black pepper
1 (3 pound) whole chicken
2 lemons
2 tablespoons olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the seasoning, salt, mustard powder, garlic powder and black pepper; set aside. Rinse the chicken thoroughly, and remove the giblets. Place chicken in a 9x13 inch baking dish. Sprinkle 1 1/2 teaspoons of the spice mixture inside the chicken. Rub the remaining mixture on the outside of the chicken.
  • Squeeze the juice of the 2 lemons into a small bowl or cup, and mix with the olive oil. Drizzle this oil/juice mixture over the chicken.
