Old-fashioned carrot salad made with lemon Jell-O and pineapple. Grandma didn't specify the amount of carrots. You probably can't use too much!

- In a large bowl, prepare the lemon gelatin according to package directions using reserved pineapple juice in place of some of the water. Refrigerate until thickened, about 1 hour.
- When the gelatin has thickened, stir in pineapple and shredded carrot. Cover and refrigerate until set, at least 4 hours.

MOM'S GELATIN FRUIT SALAD
Steps:
- In a small saucepan, sprinkle gelatin over cold water; let stand 1 minute. Heat and stir over low heat until gelatin is completely dissolved. Stir in sugar, orange juice and lemon juice; cook and stir 6-8 minutes or until sugar is dissolved., Transfer to a bowl; refrigerate, covered, until slightly thickened, about 1-1/2 hours. Fold in fruit. Pour into a 6-cup ring mold coated with cooking spray or a 2-qt. serving bowl. Refrigerate until firm. If using a ring mold, unmold onto a serving plate.

- Dissolve gelatin in boiling water. Stir in soda. Chill until partially set. , Drain pineapple, reserving juice; set pineapple aside. Add water to pineapple juice, if necessary, to measure 1 cup; set aside. Stir the pineapple, oranges and grapes into gelatin. Pour into a greased 13-in. x 9-in. dish. Chill until firm. , Meanwhile, in a large saucepan over medium heat, combine the egg, sugar, flour, butter and reserved pineapple juice. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool completely. Fold in whipped cream. Spread over gelatin. Chill until firm. Cut into squares; serve on lettuce if desired.

Whenever I invite my big family for dinner, my grandchildren request this favorite fruit salad. My sons have always liked it, too - maybe the taste runs in our family! This salad is also good for potluck gatherings.

- In a large bowl, combine 1 cup water and lemon gelatin. Add 1 cup ice cubes, stirring until melted. Stir in pineapple. Pour into a 13x9-in. dish coated with cooking spray; refrigerate until set but not firm., Repeat with the orange gelatin, remaining water and ice. Stir in marshmallows. Pour over lemon layer; refrigerate until firm. , Meanwhile, in a small saucepan, combine sugar and cornstarch. Stir in reserved pineapple juice until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat., Stir a small amount of hot filling into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat; stir in butter. Cool to room temperature without stirring. Refrigerate for 1 hour or until chilled., Arrange bananas over gelatin. Stir whipped topping into dressing. Spread over bananas. Sprinkle with cheese.

This is easy to make and even thought it is called a salad, it makes a nice light dessert. My mom, who lives a in retirement center and no longer cooks, brought this receipe with her the last time she came for a visit. She wanted me to try it. I did and we all love it.

- Use 3/4 cup boiling water to dissolve Jello - chill before adding milk
- Add the milk and fruit.
- Stir in other ingredients.
- Pour in to shallow dish.

FRUIT SALAD
This is a recipe (if you can call it that) that I concocted. The Jello gives it just enough sweetness and a nice red color. I use canned fruit because I always have it on hand, but (of course) you can always use all fresh fruit. Use your imagination and add (or delete) any fruit. The strawberries and bananas tend to soften if left in the mixture to long. Best to add them just before serving. During the summer months I always have some in my frig.

- Drain all canned fruit (save juices- add some to recipe if needed, or desired) Mix all fruit together.
- Sprinkle with Jello (enough to sweeten- not entire package).
- Peel and slice bananas, oranges and kiwi into bite-size pieces.
- Slice strawberries.
- Remove grapes from vine.
- Add oranges, kiwi and grapes to Jello mixture.
- Strawberries and bananas should be added last as they tend to soften.

- Sprinkle pudding mix into reserved juice; mix until combined and slightly thickened.
- Fold into fruit until well combined.
- Edited based on reviews: The sauce will be somewhat thin, kind of like a glaze. If you would like it thicker and creamier, mix less of the reserved juice into the pudding mix.
LIGHT AND LEMONY FRUIT SALAD/DESSERT
DD#2 needed a quick, light "something" to take to a picnic an hour after she got home from work. I remembered reading a salad recipe with a package of pudding added so I opened the cupboard and started draining and dumping. She came home with an empty bowl and requested I make more for home. - In a large bowl, dissolve jello in hot water. Add cold water and stir well. Pour contents into desired serving bowl and refrigerate for 1 hour to allow it to begin to set. Add drained pineapple to jello, mix. Add bananas to jello, mix. Top with marshmallows. Cover with plastic wrap and chill for 4 hours or until set. Just prior to serving, blend heavy whipping cream, vanilla and sugar. until soft peaks form. Spread whipped cream on top of Jello and serve. Refrigerate leftovers for up to 2 days in a covered container.
