Steps:

  • Simmer 1 cup orzo in a saucepan with 2 1/2 cups water, 2 tablespoons olive oil, 1 teaspoon dried mint, 1 teaspoon salt, 1/2 teaspoon paprika and 2 strips lemon zest, stirring occasionally, until the orzo is tender, 12 to 15 minutes. Let cool slightly. Stir in 2 chopped scallions, the juice of 1 lemon, and salt to taste.

1 lb box orzo pasta (i used barilla) cooked by package directions
2 Tbsp butter
2 Tbsp extra virgin olive oil
6 clove garlic, minced
6-8 mini sweet peppers (chopped or cut into strips or rings) assorted colors
1 bunch green onions, chopped
1/2 large bell pepper, chopped
1 medium shallot chopped
2 tsp lemon pepper(no salt added)
1 1/2 tsp kosher salt
1 medium lemon (zest & juice)
1/2-1 pt grape tomatoes halved
1 1/2 Tbsp chopped chive
1-1 1/2 c shredded romano cheese
1/2-3/4 c pan drippings from baked chicken (or use chicken broth)
garnish if desired, grape tomatoes, chive, lemon slices,lemon pepper

Steps:

  • 1. Cook Orzo pasta according to directions on box till Al dente', usually about 8 or 9 minutes. Drain and set aside till needed. To make this a complete meal add sautéed boneless skinless chicken breast chunks or strips to it & additional vegetables.
  • 2. Please note that Orzo Pasta is SHAPED LIKE RICE, but requires less cooking time. Is found in the pasta section of most larger grocery stores.
  • 3. Add butter and olive oil to a large skillet, heat over medium high heat. Add chopped vegetables, and cook till translucent about 5 to 7 minutes.
  • 4. Next add pasta and stir to blend together. Then add salt pepper, chive, lemon pepper, lemon zest, and lemon juice squeezed from lemon. Stir and cook a couple of minutes.
  • 5. Then add the dripping from baked chicken or Chicken broth, which ever you prefer. Allow to tighten up a bit, (some of liquid is absorbed.)
  • 6. Add the Romano cheese and stir till cheese melts. Add additional chopped chive if desired.
  • 7. Garnish as I did, if desired, by using a pyramid shaped mold. Spray inside of mold with non stick butter flavored cooking spray. Then pack orzo into mold till mold is filled, unmold onto a plate if desired and garnish with lemon slices or wedges, chopped chives and grape tomato halves. Sprinkle a little lemon pepper on the perimeter of the plate if desired. Serve your impressive presentation to guest and watch them devour it.
  • 8. I forgot to show you the mold that I used for the presentation. This one is made of metal, but they also make them in a plastic form, I though the metal one would better suit my needs. It comes in various sizes, I purchased the largest one, because that way I can always use less in the mold to create a smaller one.

1 cup uncooked whole wheat orzo pasta
1 tablespoon olive oil
1/4 cup grated Parmesan cheese
2 tablespoons minced fresh parsley
1/2 teaspoon grated lemon zest
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook orzo according to package directions; drain. Transfer to a small bowl; drizzle with oil. Stir in remaining ingredients.

6 cups water
1 tablespoon chicken bouillon powder (or to taste)
16 ounces uncooked orzo pasta
1/4 cup butter
2 tablespoons fresh minced garlic
2 tablespoons grated fresh lemon rind
3 tablespoons fresh lemon juice (or adjust to taste)
1 1/2 cups grated parmesan cheese
fresh ground black pepper (to taste)

Steps:

  • In a saucepan bring the water with bouillon powder to a boil; add in orzo and cook uncovered until tender stirring a couple times to prevent sticking; drain and place into a bowl.
  • In another saucepan melt butter over medium heat; add in garlic and cook stirring for 2 minutes.
  • Remove from heat, add in the cooked pasta, lemon rind and lemon juice; stir until combined.
  • Mix in Parmesan cheese, then season with black pepper and salt if desired.

  • Preheat oven to 350F (177C) and toast pine nuts for 6-7 minutes, or until toasty and fragrant. Set aside to cool.
  • Turn oven up to 425F (218C). Line two sheet pans with parchment paper. Place the mushrooms, bell peppers, asparagus, tomatoes, garlic and shallot on one pan. Sprinkle with 2 Tbs of olive oil. Using a spatula, mix all the veggies together with the olive oil. Sprinkle with salt and pepper then stir again. Move 1/2 the veggie mixture to the other sheet pan. Spread the veggies in one layer, making sure there's no overlapping on both pans. Roast in a 425F oven for 35-40 minutes (due to oven variations, keep an eye on your veggies and start checking your veggies at 25 minutes; a bit of charring is good!** SEE NOTES!!). Rotate pans 1/2 way through roasting.
  • In a large saute pan, heat 1 Tbs of Olive Oil on medium heat until shimmering. Add the orzo and stir, coating the orzo thoroughly. Stir occasionally for about 3 minutes or until the orzo is toasty and golden. Add the vegetable broth. Be careful here because the broth will spit and sputter. Bring to a simmer, turn down the heat to low, cover and cook for about 15 minutes or until all the liquid is absorbed. Stir. Remove from heat, cover and set aside.
  • In a small bowl add the olive oil, lemon juice, salt, and pepper. Whisk until all the ingredients are emulsified.

  • Bring a medium saucepan filled with water to a boil over high heat. Lightly salt the water, add orzo and bring to a boil. Reduce heat to medium-high and cook the orzo for 8 minutes. Add the frozen peas, bring back up to a boil, and cook for 2 more minutes. Drain and rinse lightly with hot water.
  • Meanwhile, in a 10 or 12” skillet, melt the butter over medium heat. Add garlic and sauté just until the garlic becomes fragrant and starts to look golden, about 1 minute. Add lemon zest and lemon juice and cook until heated.
  • Add the cooked orzo and peas, parsley, salt and pepper to the skillet. Toss to combine well and cook until heated through, about 1 – 2 minutes.
