These Grilled Lemon Garlic Pork Chops were so fantastic! They were the superstar of our cookout! The lemon garlic marinade makes for the most juicy and tender chops around.

Number Of Ingredients 7

4-6 Pork Chops (I used bone in center cut pork chops)
salt and fresh cracked pepper
1/4 cup lemon juice (from 2-3 lemons) + a little zest
1/4 cup Olive Oil
3-4 cloves garlic, minced
1/2 teaspoon Italian seasoning (oregano, rosemary, basil or thyme will work as well)
2 tablespoons Soy Sauce (I use low sodium)

Steps:

  • In a medium bowl, mix lemon juice, olive oil, minced garlic, Italian seasoning and soy sauce together. Pour marinade over pork chops in a large zip top bag or covered baking dish and place in the refrigerator for 1-4 hours.
  • Lightly oil the grill grate. Preheat an outdoor grill for high heat. Remove chops from bag, and transfer remaining marinade to a saucepan. Bring marinade to a boil, remove from heat, and set aside.
  • Grill pork chops for 3 minutes per side on high heat, move to low heat side basting frequently with boiled marinade, until done when the juices run clear or register at 145 on a thermometer. Let meat stand for 5 minutes before serving.
  • Heat a heavy skillet over medium-high heat. Add 2 tablespoons oil and let heat up, but not smoke.
  • Shake off or pat pork chops with paper towel to remove excess marinade. Place pork chops in skillet and cook about 4 minutes then turn and let cook till internal temperature of 145 or the juices run clear. Let rest about 5 minutes before serving.
  • Preheat oven to 375 degrees F. Heat a heavy oven safe skillet over medium-high heat. Add 2 tablespoons oil and let heat up, but not smoke.
  • Shake off or pat pork chops with paper towel to remove excess marinade. Sear each side of chops for at least a couple minutes on each side (until brown on both sides, for flavor and color then)
  • Transfer to oven and cook until internal temperature reaches 145 degrees or the juices runs clear, about 25 minutes for a thick pork chop.

This lemon garlic pork chop marinade is easy to mix up and adds so much flavour. Marinate and then grill, pan fry, or bake, or freeze for later!

4-6 pork chops
1/3 cup olive oil
1/3 cup lemon juice (from 2-3 lemons)
1 1/2 tablespoons soy sauce
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place the pork chops in a large ziplock bag. In a small bowl, whisk together the olive oil, lemon juice, soy sauce, garlic, oregano, salt, and pepper.
  • Pour the marinade over the pork chops and seal the bag, squeezing out all the air.
  • Move the pork chops around in the marinade until they are all evenly coated.
  • Refrigerate and let them marinate for at least 30 minutes and up to 4 hours (see note).
  • You can freeze the pork chops in the marinade immediately and let them marinate as they defrost, or marinate and cook them immediately.
  • Either grill the pork chops for 4-8 minutes per side over medium heat (about 400F), pan fry for 4-8 minutes per side over medium heat, or bake at 400 degrees F for 20-30 minutes, or until an internal temperature of 145 degrees F has been reached.
  • Let the pork chops rest, tented with foil, for 5 minutes before serving.

1/2 cup vegetable oil
4 tablespoons red wine vinegar
4 garlic cloves, minced
2 teaspoons sage leaves, crumbled

  • Combine all ingredients in a large bowl.
  • Marinate 4 to 6 hours in refrigerator.
  • Grill 5 inches from heat, basting with marinade several times.

1/2 cup lemon juice
2 teaspoons grated lemon zest
2 tablespoons olive oil

1 lime, juiced
4 cloves garlic, minced

3/4 cup sugar
1/4 cup plus 1 tablespoon fish sauce
1 lemongrass stalk, finely chopped
1 1/2 tablespoons minced garlic
2 tablespoons minced shallot
1 Thai chile, stemmed and finely chopped
1/4 teaspoon freshly ground black pepper
3 bone-in center cut pork chops, each about 12 ounces and 1 inch thick

Steps:

  • 1. In a bowl, combine the sugar, fish sauce, lemongrass, garlic, shallot, chile, and black pepper and whisk until the sugar dissolves. Arrange the pork chops in a rimmed dish in a single layer. Pour the marinade over, cover with plastic wrap, and let marinate at room temperature for 1 to 2 hours. (The pork can also be refrigerated overnight. Bring meat to room temperature before grilling).
  • 2. Prepare a hot fire in a charcoal grill (you should be able to hold your hand 1 to 2 inches above the grate for only 2 to 3 seconds). When the coals are ready, push two-thirds of the coals to one-half of the grill, creating a hot zone; spread the remaining one-third on the opposite side of the grill to create a cooler zone.
  • 3. Remove the pork chops from the marinade and discard the marinade. Place the chops on the hottest part of the grill. Let cook for 1 minute, then flip and cook for 1 minute on the second side.
  • 4. Move the chops to the cooler side of the grill and cook, turning once, for about 10 minutes total, until an instant-read thermometer inserted into the thickest part of the chop registers 140°F, raking over coals from the hotter side of the grill if necessary to maintain an even temperature. Spritz any flare-ups with a spray bottle filled with water.
  • 5. Transfer the chops to a large plate, tent with aluminum foil, and let stand for 10 minutes. Cut the meat from the bone and slice the meat across the grain on the diagonal. Transfer the slices and bones to a serving platter and serve.

3/4 cup water
2 tablespoons sugar
2 tablespoons kosher salt
1/4 cup fresh tarragon (chopped)
1 tablespoon lemon rind (grated)
1/4 cup fresh lemon juice
1/4 teaspoon fresh ground black pepper

Steps:

  • Combine water, sugar, and salt in a bowl, stirring with a whisk until sugar and salt dissolve. Pour water mixture into a large zip-lock plastice bag. Add the tarragon, lemon rind and juice. Add the pork chops to bag and marinate in refrigerator for 2-4 hours, turning bag occasionally.
  • Prepare the grill about 20 minutes before taking pork out of refrigerator.
