MEATLOAF 101 WITH MRS. KOSTYRA
Nothing says home cooking like meatloaf, all the better when it's an old family recipe, like this one.

Steps:
- Heat oven to 375 degrees. Place bread in the bowl of a food processor fitted with the steel blade; pulse until fine crumbs form. Transfer to a medium bowl, and add ground beef.
- Place onion, garlic, celery, carrots, and parsley in the bowl of a food processor fitted with the steel blade; pulse until fine. Add to meat mixture, using hands to mix well. Add egg, 1/2 cup ketchup, 2 teaspoons dry mustard, salt, and pepper; use hands to combine thoroughly. Place in an 8 1/2-by-4 1/2-by-2 1/2-inch loaf pan.
- Combine remaining 1/2 cup ketchup, remaining teaspoon dry mustard, and brown sugar in a bowl; stir until smooth.
- Brush mixture over meatloaf; place in the oven with a baking pan set on the rack below to catch drippings. Cook until a meat thermometer inserted in the center reads 160 degrees, about 90 minutes. If top gets too dark, cover with foil, and continue baking.

- Preheat oven to 400 degrees. In the bowl of a food processor, pulse bread until fine crumbs form. Transfer to a medium bowl; add ground beef and ground pork.
- Place onion, garlic, celery, carrots, and parsley in food processor; pulse until finely chopped. Add to beef mixture; combine using your hands. Add egg, 1/2 cup ketchup, 2 teaspoons dry mustard, salt, and pepper; combine thoroughly, using your hands. Place in an 8 1/2-by-4 1/2-by-2 1/2-inch loaf pan.
- In a small bowl, combine the remaining 1/4 cup ketchup and 2 teaspoons dry mustard, and the brown sugar; stir until smooth.
- Brush mixture over top of the meatloaf. Place the pan on a baking sheet to catch drippings, and transfer to oven. Bake until a meat thermometer inserted in the center reaches 160 degrees, about 1 1/2 hours. (If the top of the meatloaf gets too dark, cover with foil and continue baking.) Let meatloaf stand 15 minutes before slicing.
"WHAT YOU GOT" MEATLOAF ON THE GRILL

- For the glaze: In a medium bowl, add the ketchup, brown sugar, Worcestershire sauce, mustard, vinegar and 1/2 teaspoon pepper. Whisk to combine and set aside.
- For the meatloaf: Preheat the oven or grill to 375 degrees F. If using a gas grill, set to medium heat on one side and low on the other side. If using a charcoal grill, bank medium-hot coals on one side of the grill.
- Prepare your pan: Line a baking sheet with foil if using an oven. If grilling, gather a sturdy grilling tray, disposable foil pan or some sheets of foil.
- In a large bowl, add the meat, breadcrumbs, onion, parsley, cayenne, paprika, Old Bay, Worcestershire sauce, eggs and garlic. Mix the ingredients thoroughly and season well with salt and pepper.
- Put the meat mixture on the prepared tray. Form the meat into a loaf around the kielbasa, if using, so the sausage is sealed inside. Spread the glaze over the top. Bake in the oven or on the cooler side of the grill, covered, until cooked through and the glaze is sticky, about 1 hour.
- Serve with potatoes or a side salad or use on a sandwich.
- Preheat the oven to 400 degrees F. Line a baking sheet with foil.
- Remove the outer papery skin from the garlic, then cut 1/4 inch off the top of each head. Drizzle 1 teaspoon of olive oil over each head of garlic, then wrap each head in foil. Seal the foil packets and transfer to the prepared baking sheet. Roast until completely soft and caramelized, about 1 hour. Allow to cool slightly.
- When cool enough to handle, squeeze the garlic cloves from the skin into a medium bowl and mash with a fork into a paste.
MY MEATLOAF
This is the meatloaf I taught myself how to make when I tried to duplicate my Daddy's meatloaf! It's a perennial family favorite! It's wonderful sliced cold the next day and used in a warm, toasted sandwich with a little butter.

- Preheat oven to 425 degrees F (220 degrees C).
- In a large bowl, combine the beef, ketchup, soup mix, bread, Italian-style seasoning and water. Mix well. Shape into a loaf and place into a 9 inch pie pan OR a 9x13 inch baking dish. Baste the top of the meatloaf with ketchup.
- Bake at 425 degrees F (220 degrees C) for one hour, or until the edges are just crispy and the top has a crust.
- Cool for 15 to 20 minutes before cutting.

MY MEATLOAF 101
This is so easy and good! I am a sucker for meatloaf recipes, sometimes I am pleased, but so often, I go back to the basics. I hope you enjoy this as much as my family does. Makes excellent cold or hot sandwiches the next day!

- Preheat oven to 375 degrees.
- In a large bowl, mix ground beef with onions and celery. Peel carrot into short strips, chop and add to meat. Set aside.
- In a small mixing bowl, lightly beat eggs, then add milk, ketchup and spices and blend. Combine wet mixture with meat and mix together.
- Sprinkle oatmeal over meat mixture and gently mix all together until oatmeal is well combined.
- Shape into loaf shape and place in metal loaf pan; drizzle top of loaf with ketchup (I place my ketchup in a small squirt-top dispenser for convenience). Bake for approximately 1 hr 15 minutes.
- Remove from oven, let stand about 15 minutes. Slice and serve.

TWENTY-FIVE INGREDIENT MEATLOAF
Steps:
- Preheat oven to 350 degrees F.
- Heat oil in heavy skillet. Add green onions, celery, garlic, carrot, onion and peppers and saute until sweated, about 5 minutes. Do not overcook. Set aside to cool. Combine salt, black and white peppers, cayenne, cumin, garlic powder, paprika, thyme, sugar and eggs in a large bowl and beat well. Add half-and-half and ketchup and blend thoroughly. Add meats, breadcrumbs, cilantro and cooled vegetables to egg mixture and blend thoroughly with hands for about 5 minutes. With damp hands, form the mixture into an oval resembling a long loaf of bread. Place on a cookie sheet that has been lined with foil and sprayed with cooking spray. Cover with foil. Bake 45 minutes, then uncover and bake 15 minutes more. Let rest for 20 minutes before slicing and serving.
EVERYDAY MEATLOAF
My sons loved meat loaf growing up. While all 3 were teenagers at home I would often double or triple this recipe for one meal. Even the one that hates onions loves this recipe. This recipe is from my mom's Better Homes & Gardens Cookbook (1954).

Steps:
- Soak bread crumbs in milk.
- Add beaten eggs, seasonings, onion (process in food processor to puree for picky eaters).
- Mix together well.
- With hands, gently add ground chuck and mix together lightly.
- Place in loaf pan sprayed with PAM.
- Bake in 350º oven 45-50 minutes.
- Prepare topping in small bowl.
- Pour over meat loaf during last 15 minutes of baking time.
- *The more you handle the ground beef during the making of meat loaf the tougher it becomes.
- **Edited - For different texture and taste sautee onion in a bit (1 Tablespoon +/-) of butter. Add 1/2 cup grated carrots (sautee with the onions) for a little extra punch of color and flavor.
MY MEATLOAF
This is a consolidation of my mom's recipe and my own touches. I use to use just 1 pound (or more) of ground beef, but now that I have changed my eating habits, the turkey is incorporated into it, making it a little healther. Adjust the amounts as you need or to your desires. Sometimes I use more onion, sometimes less. I also sprinkle in garlic powder and Accent every once in a while.

- All measurements are approximates.
- Mix the ground meat with the ingredients listed, with the exception of the ketchup.
- Place in a lightly sprayed loaf pan (sprayed with Pam), top with ketchup (my boys like a thick layer of it on top).
- Bake in a 350 degree oven until thoroughly cooked (45 minutes or more).
- *For the dried bread crumbs, I use 2 to 3 slices of lightly toasted bread that has been chopped up in a food processor.
