2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1/2 cup butter
1 1/4 cups white sugar
3 eggs
1 teaspoon vanilla extract
1 cup milk
1 tablespoon grated lemon, zest of
1/2 cup fresh lemon juice
1 tablespoon cornstarch
6 tablespoons butter
3/4 cup white sugar
4 egg yolks, beaten
4 cups confectioners' sugar
1/2 cup butter, softened
2 tablespoons fresh lemon juice
1 teaspoon grated lemon, zest of
2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 inch round pans. Mix together the flour, baking powder and salt. Set aside.
  • In a large bowl, cream together the butter and sugar until light and fluffy, about 5 minutes. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk, mixing just until incorporated.
  • Pour batter into prepared pans. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool in pans on wire racks for 10 minutes. Then invert onto wire racks to cool completely.
  • To make filling: In medium saucepan, mix together 1 tablespoon lemon zest, 1/2 cup lemon juice and 1 tablespoon cornstarch until smooth. Mix in 6 tablespoons butter and 3/4 cup sugar, and bring mixture to boil over medium heat. Boil for one minute, stirring constantly. In small bowl, with a wire whisk, beat egg yolks until smooth. Whisk in a small amount of the hot lemon mixture. Pour the egg mixture into the sauce pan, beating the hot lemon mixture rapidly. Reduce heat to low; cook, stirring constantly, 5 minutes, or until thick (not to boil).
  • Pour mixture into medium bowl. Press plastic wrap onto surface to keep skin from forming as it cools. Cool to room temperature. Refrigerate 3 hours.
  • To make frosting: In large bowl, beat confectioners' sugar, 1/2 cup butter, 2 tablespoons lemon juice and 1 teaspoon lemon zest until smooth. Beat in milk, and increase speed and continue to beat until light and fluffy.
  • To assemble: With long serrated knife, split each cake layer in half horizontally, making 4 layers. Place 1 layer, cut side up, on a serving plate. Spread with half of the lemon filling. Top with another layer, and spread with 1/2 cup frosting. Add third layer, and spread with remaining half of the lemon filling. Press on final cake layer, and frost top and sides of cake with remaining frosting. Refrigerate cake until serving time.

LEMON LAYER CAKE WITH LEMON CREAM FILLING AND FROSTING

Lemon Layer Cake with Lemon Cream Filling and Frosting image

If you want, you can simplify things by skipping the filling recipe and just using the frosting to fill in between the layers of cake. This cake will last for up to 4 days in the fridge.

Provided by Katie Workman

Time 5h35m

Yield 12 servings

Number Of Ingredients 20

3/4 cup (1 1/2 sticks) unsalted butter, softened, plus more for buttering the pans
2 3/4 cups cake flour (not self-rising), plus more for flouring the pans
1 tablespoon baking powder
1/2 teaspoon kosher salt
1 1/2 cups granulated sugar
4 large eggs
2 teaspoons pure vanilla extract
1 teaspoon finely grated lemon zest plus 1/4 cup fresh lemon juice
3/4 cup whole milk
1/2 cup granulated sugar
1 teaspoon finely grated lemon zest plus 1/4 cup fresh lemon juice
2 tablespoons unsalted butter, softened
3 large egg yolks
Pinch of kosher salt
1/2 cup heavy cream
2 cups fresh raspberries
4 1/2 cups confectioners' sugar
1 cup (2 sticks) unsalted butter, softened
3 tablespoons heavy cream
1 teaspoon finely grated lemon zest plus 3 tablespoons fresh lemon juice

Steps:

  • For the lemon cake: Preheat the oven to 350 degrees F. Butter two 9-inch round cake pans, then insert a round of parchment cut to fit just inside the bottom of each pan. Butter the parchment, then flour the pans, tapping out any excess flour.
  • In a medium bowl, stir together the cake flour, baking powder and salt.
  • Using an electric, standing or hand mixer, beat the butter and granulated sugar until very fluffy and pale yellow, about 2 minutes. Add the eggs 1 at a time, then add the vanilla followed by the lemon zest and juice--the mixture may appear to break apart a bit or curdle, but it will come back together when the flour is added, so don't panic! Add about a third of the flour mixture and mix until just barely incorporated, then add half of the milk and blend. Repeat with one-third of the flour mixture, the rest of the milk and the rest of the flour mixture and blend until the ingredients are just completely incorporated.
  • Scrape down the sides of the bowl in the middle of this process. Scrape the batter into the prepared pans, dividing it evenly and smoothing the tops. Bake until a wooden skewer or toothpick inserted into the center of the cake comes out clean, 22 to 26 minutes. Cool the cakes in the pans on a wire rack for 15 minutes, then run a knife around the insides of the pans to make sure the sides don't stick, place a wire rack over the top of each pan and invert the cake onto the wire rack. Peel off the parchment and cool completely.
  • For the lemon filling: While the cakes are baking, make the lemon curd. Whisk the granulated sugar, lemon juice, butter, egg yolks and salt in a small nonreactive saucepan. Place the pan over medium-low heat and cook, whisking constantly, until thickened, about 10 minutes. Place the lemon curd in a small bowl, press a piece of plastic wrap on top of the surface and place it in the refrigerator to chill for at least 2 hours and up to a week.
  • Briskly stir the lemon zest into the chilled curd to blend well. In a medium bowl, beat the heavy cream just until stiff peaks form. Gently fold into the lemon curd with a rubber spatula. Refrigerate for at least 1 hour but not more than 6 hours.
  • For the lemon frosting: In a large bowl with an electric, standing or hand mixer, beat the confectioners' sugar with the butter on low speed until combined, then turn the beater speed to high and add the cream and lemon zest and juice. Beat until fluffy.
  • To assemble the cake, place each cake layer upside down on a round of cardboard or a flat plate. Using an offset spatula or butter knife, frost the top and sides of each cake layer with a very thin layer of the lemon frosting. Place the cake layers in the freezer for 15 minutes or in the refrigerator for 30 minutes to firm up the thin layer of frosting.
  • Place the bottom layer of cake on the platter that you will be serving it on and tuck thick strips of wax or parchment paper under the edges of the cake to keep the platter clean. Spread the lemon filling over the bottom layer, leaving a 1/2-inch border all around so the filling has a bit of room to spread when you place the second layer on top. Cover the filling with the raspberries, then place the second layer of cake on top.
  • Frost the cake with the rest of the frosting. The cake will keep for up to 4 days in the refrigerator, though it's best within a day of making. Bring to room temperature before serving.

LEMON CAKE POPS

Lemon Cake Pops image

The perfect balance of light lemon flavor and sweetness, these Lemon Cake Pops are perfect for Easter or any Springtime event. Add your own lemon flavor to a boxed cake mix for just the right amount of tart lemon flavor.

Provided by Jenna Owens

Categories     Desserts

Time 3h45m

Number Of Ingredients 7

1 (9x13) yellow cake mix, plus the ingredients called for on the box
Zest from one lemon
1 tbsp lemon extract
Store-bought or homemade frosting (you'll only need a few spoonfuls)
24 ounces white candy wafers
Cake pop sticks
Sprinkles

Steps:

  • 1. Mix the cake according to the directions on the box, but add in the lemon zest and lemon extract as well. Bake according to the directions on the box. Let cool completely. 2. Crumble the cake into the bowl of your stand mixer. Beat for a minute to break the cake into small crumbles, then add a scoop of frosting. Mix and add more frosting if necessary until the mixture is able to be formed into balls but still a little crumbly. 3. Roll the mixture into 1-inch balls and place on a baking sheet. Refrigerate for 2 hours or freeze for 1 hour. 4. Before removing the balls from the refrigerator or freezer, prepare your decorations. Have the sprinkles and cake pop sticks handy. Melt the candy wafers in a double boiler or the microwave. I like to pour the melted candy wafers into a 2 cup glass measuring cup for easy dunking. 5. Take out a few cake balls at a time. Take a stick and dip it in the melted white chocolate, then stick it into one of the cake balls. Dip completely into the melted chocolate. Gently spin and tap the pop to remove excess chocolate. Add some sprinkles and poke the pop in a styrofoam block to harden. Repeat for the remaining cake pops. 6. Store the cake pops in the refrigerator for up to 1 week. You can also freeze for up to 6 weeks and thaw overnight in the refrigerator.

LEMON FILLED CAKE BALLS

Lemon filled cake balls image

I decided to experiment this morning with cake balls and came up with this, They turned out wonderful, and very pretty, with an extra little lemon in the middle to make them extra yummy!

Provided by Gail Herbest

Categories     Other Desserts

Time 3h

Number Of Ingredients 4

1 box lemon flavored cake mix
1 tsp lemon extract
1 jar(s) lemon curd
2 pkg white bark, for coating

Steps:

  • 1. Prepare cake mix as directed on the box adding the 1 teaspoon of lemon extract during mixing.Bake in a 9x13 pan as directed. When cake is done and cool enough to handle(but still warm)place into a large mixing bowl and crumble.
  • 2. Add approximately 2-3 Tablespoons of lemon curd. and mix well until the cake is easily formed into balls. I like mine a little "cakey" but you can add more to you liking. reserve and set aside 1 cup of the mixture
  • 3. using a Tablespoon form into balls and place on a cookie sheet covered with parchment or waxed paper. with the handle of a wooden spoon (I use my little finger)make a small well in the middle of each ball.
  • 4. fill each cake ball with a small amount of the lemon curd. (I used a small frosting press that I have.) using the reserved cake mixture that you set aside take a small piece and carefully cover each opening pressing lightly so as not to push any of the lemon curd out.
  • 5. Place in refrigerator or freezer for one hour.
  • 6. Remove from freezer and dip each ball into melted white bark, I use a spoon to dip then transfer the cake ball to the fork and let it drip the excess off. set each ball onto waxed or parchment paper and let sit until; the coating has set. don't worry if you see a little spot or two that you missed you can re-dip that area with the left over bark after letting them sit.
  • 7. store in a airtight covered container until ready to serve. ENJOY!

LEMON CAKE BALLS (NO BAKE)

Lemon Cake Balls (no bake) image

Condensed milk, crushed biscuits, coconut and lemon - a match made in heaven. These balls are easy to make whether you have a Thermomix, food processor or do it by hand. They are great to keep in the freezer for when unexpected guests pop around or you just need something sweet to get you through the afternoon.

Provided by By Amanda Arnold

Time 1h10m

Yield 32

Number Of Ingredients 6

1 pkt milk arrowroot biscuits
3 Tablespoons lemon juice
3 tsp lemon rind
1 tin condensed milk (400g)
1 ½ cups desiccated coconut
½ cup extra coconut for rolling (tinted with yellow colouring if you like)

Steps:

  • Process biscuits in a food processor until they resemble crumbs. If you don't have a food processor, you can do this by hand by placing biscuits into a zip lock bag and crushing with a rolling pin. Add lemon juice, rind, condensed milk and coconut (1 ½ cups) to the biscuits. Process or mix until combined. Roll a tablespoon of mixture into balls and place into extra coconut. Roll around to cover the balls. I tint my extra coconut with a few drops of yellow colouring for effect. Place in airtight container in the fridge or freezer.

Remove from heat and stir in the butter, lemon juice, and lemon zest.-- Let the lemon curd cool, then press plastic wrap onto the surface, this will prevent a skin from forming on the top. Refrigerate.
