This easy drop biscuit recipe only requires 5 simple ingredients! In under 30 minutes you can have homemade drop biscuits on your table!

2 cups (240 grams) all-purpose flour
1 tablespoon (14 grams) baking powder
1 1/4 teaspoon kosher salt
1/2 cup (1 stick, 113 grams) cold unsalted butter, cut into small pieces
3/4 cup-1 cup (175-240 mililiters) milk or buttermilk

Steps:

  • Preheat the oven to 450 F (232 C).
  • In a large bowl, whisk together flour, baking powder, and salt together. If you want to add any herbs or spices you can add them here.
  • Add the pieces of cold butter and cut into the dry ingredients with a pastry cutter or fork until the consistency of coarse meal. If you want to add any cheeses or other add-ins you can stir them in here before adding the milk.
  • Add 3/4 cup of the milk and stir just until combined. You can use any milk you like or buttermilk if you want a tangy flavor. If the batter is very dry, add a little more milk until the consistency of a very thick batter. Do not over-mix. The batter will be quite lumpy.
  • Drop large mounds (about 1/4 cup each. I use a 2 oz scoop) onto a baking sheet. You can also use a cast iron skille that has been greased with butter.
  • Bake at 450 F (232 C) for 18-22 minutes until golden brown
  • Brush with melted butter if desired.

These easy lemon biscuits are beautifully buttery and just perfect for afternoon tea with a pot of earl grey!

80 g Butter (softened)
100 g Caster Sugar
1 Egg
2 Lemons (zest from both and juice from one)
240 g Plain Flour
2 tsp Baking Powder
25 g Icing Sugar

Steps:

  • Preheat the oven to 190°c (170 fan/ 375F/ Gas 5) and line a large baking tray with baking paper.
  • Cream together the butter and sugar until light and fluffy.
  • Beat in the egg, lemon zest (from 2 lemons) and the lemon juice from just 1 of the lemons.
  • Stir in the flour and baking powder and mix to form a dough. If the mixture is a little dry add more lemon juice (from the second lemon) and mix and continue to do this until a smooth dough forms. Use your hands to bring the dough together in the bowl.
  • Cover the bowl with clingfilm and chill the dough in the fridge for 15 minutes.
  • Take tablespoons of the dough and roll into balls. Place on the baking sheet (you should get about 20 cookies). Flatten down slightly with the back of a spoon.
  • Bake in the oven for 15 minutes. Take out of the oven and flatten down again with the back of a spoon. These biscuits do not spread and are meant to be thick, round and bitesize.
  • Once cool sift over the icing sugar and serve!

2 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1/4 teaspoon baking soda
2 tablespoons wheat germ
1 teaspoon kosher salt, plus more for sprinkling
1 teaspoon finely grated lemon zest
1 teaspoon chopped fresh thyme, plus more for sprinkling
4 tablespoons cold unsalted butter, cut into small pieces
1 cup buttermilk

Steps:

  • Preheat the oven to 425 degrees F. Whisk the flour, baking powder, baking soda, wheat germ, salt, lemon zest and thyme in a medium bowl. Using a pastry blender or your fingers, work the butter into the flour mixture until it is in pea-size pieces. Gently stir in the buttermilk with a wooden spoon until just moistened. The dough will be loose.
  • Turn the dough out onto a lightly floured surface and knead 3 to 5 times, just until it comes together. (Don't overknead or the biscuits will be tough.) Roll out to 1/2 inch thick, then cut out biscuits using a floured 2-inch-round cutter. Arrange on an ungreased baking sheet. Reroll the scraps and cut out more biscuits. Brush the tops with water and sprinkle lightly with salt and thyme.
  • Bake the biscuits until golden brown, 12 to 15 minutes. Serve warm.

2 cups Pillsbury BEST™ Self Rising Flour
1/3 cup turbinado sugar, plus additional for garnish
1/4 cup Crisco® Baking Sticks All-Vegetable Shortening
2/3 cup milk
1 tbsp. fresh lemon juice
1 tsp. grated lemon peel
1 cup fresh blueberries

Steps:

  • HEAT oven to 450°F. Line baking sheet with parchment paper. COMBINE flour and sugar in large bowl. Cut in shortening with pastry blender or fork until crumbs are the size of peas. Blend in milk, lemon juice and lemon peel just until dough leaves sides of bowl. Gently stir in blueberries. DROP dough by rounded tablespoonfuls onto prepared baking sheet. Sprinkle with sugar. Bake 8 to 10 minutes or until golden brown. Cool 2 minutes. Serve warm.

2 tablespoons lemon zest (about 3 lemons)
1 tablespoon vanilla extract
1 cup powdered sugar
2 1/3 tablespoons lemon juice
2 teaspoons lemon zest

Steps:

  • Preheat the oven to 350 degrees F. Line a cookie sheet with parchment paper.
  • In a large bowl, beat together the butter and 1 cup powdered sugar with an electric mixer on medium speed. Stir in flour, cornstarch, lemon zest, and vanilla and mix well.
  • Form the dough into 3/4-inch balls and place them on the prepared cookie sheet about 1 1/2 inches apart. Flatten them a little with your palm.
  • Bake in the preheated oven for 9 to 11 minutes, or until edges are lightly browned. Allow the cookies to rest for 2 minutes and then transfer to a wire rack to cool completely.
  • For the icing, whisk together 1 cup powdered sugar, lemon juice, and zest in a separate bowl. If the mixture is too thick, add more lemon juice. If it's too thin, add powdered sugar to thicken.
  • Once cookies have cooled, dip the tops in icing and place back on the parchment paper. Give the icing 15 to 30 minutes to set. The cookies will need to set for at least 24 hours.
  • The icing to fully dry. But if you're not too worried about the icing being a little wet, feel free to enjoy right away!

1 stick cold unsalted butter, diced

1 stick softened butter
1/4 cup chopped dill
2 tablespoons capers
Zest and juice of 1 lemon
1 stick softened butter
3 tablespoons mango chutney

Steps:

  • Preheat the oven to 400˚ F. Line a baking sheet with parchment paper. Combine the flour, baking powder, sugar and salt in a food processor. Pulse to combine. Pulse in the butter just a few times, until it is in pea-size pieces. Add the milk and pulse just until the dough comes together.
  • Scoop 1/4 cupfuls of dough with a cup measure or ice cream scoop onto the baking sheet (about 10 scoops). Brush the tops lightly with milk. Bake until golden, 15 to 20 minutes.
