LEMON DILL CHICKEN WITH WILD MUSHROOMS OVER FETTUCCINI

Steps:
- In a large stock pot over high heat, boil water for pasta. When boiling, salt the water heavily and add the pasta.
- Meanwhile, in a medium size bowl, mix kosher salt, black pepper, red pepper flakes, paprika and 1 teaspoon dill with 1/2 cup flour. In another medium bowl, add water. Wet chicken with water and then dredge in the flour mixture.
- In large saute pan over medium-high heat, melt 4 tablespoons of butter and saute chicken breasts, about 4 minutes on each side. After they are cooked, remove to a plate. Add to the same pan the shallots and remaining dill. Stir in remaining flour and mix until pasty. Add dry vermouth. After alcohol burns off, mix in mushrooms. Add chicken stock and lemon juice and cook for an additional 3 to 4 minutes. Turn off the heat and stir in the remaining 2 tablespoons butter and a pinch of parsley. Season with salt and pepper, to taste.
- Remove pasta from water after cooking for approximately 10 to 12 minutes. Toss in oil to coat the pasta and add lemon zest. Put pasta on serving platter, then lay chicken across top and pour the sauce over the top. Garnish with parsley.

- Season chicken breasts on both sides with salt and pepper. Heat 1 1/2 teaspoons oil in a large heavy skillet over medium-high heat. Add the chicken and sear until well browned on both sides, about 3 minutes per side. Transfer chicken to a plate and tent with foil.
- Reduce heat to medium. Add the remaining 1 1/2 teaspoons oil to the pan. Add onion and garlic and cook, stirring, for 1 minute. Whisk broth, flour, 1 tablespoon dill and lemon juice in a measuring cup and add to pan. Cook, whisking, until slightly thickened, about 3 minutes.
- Return the chicken and any accumulated juices to the pan; reduce heat to low and simmer until the chicken is cooked through, about 4 minutes. Transfer the chicken to a warmed platter. Season sauce with salt and pepper and spoon over the chicken. Garnish with the remaining 1 tablespoon chopped fresh dill.

LEMON DILL CHICKEN SALAD IN AN AVOCADO

- Halve the avocado and remove the pit. Using an ice cream scoop or dessert spoon, carefully scoop out some avocado to double the size of the hole left by removing the pit. Roughly dice the scooped out avocado and place in a medium bowl. Add the chicken, mayonnaise, red celery, onion, lemon juice, lemon zest and chopped dill and combine well so all the ingredients are well distributed.
- Place half the chicken salad mixture in the cavity of each avocado half. Garnish each with a sprig of dill.

- Melt butter in 10-inch skillet over medium-high heat. Cook chicken in butter about 6 minutes, turning once, until light brown.

- Melt butter in a large frying pan set over medium -high heat. Add chicken and cook until golden brown, 2-3 minutes per side.
- Finely chop capers. Once chicken has browned add capers, peel and broth to pan.
- Cover and cook over medium-low heat, turning halfway through, until chicken feels springy when pressed, from 10-12 minutes.
- Remove chicken to a platter. Stir dill into pan juces. If sauce looks too thin, increase heat to medium-high and stir often until as thick as you like, about 2 minutes. Pour over chicken and serve with orzo or rice and asparagus or green beans.

- In a large bowl toss together tuna, bread crumbs. onions, and pimento.
- In a small bowl beat together egg and milk; stir in lemon peel.
- Stir into tuna mixture; toss until moistened.
- With lightly floured hands, shape mixture into eight 4-inch patties.
- In a large nonstick skillet melt butter. Fry patties, a few at a time, until golden brown on all sides, about 3 minutes per side.
- Place on an ovenproof platter in a 300* oven until ready to serve.
- For sauce:

- Preheat oven to 350 degrees.
- Rinse chicken, inside and out, with cold water.
- Pat dry.
- Place chicken on roasting rack and put 4 sprigs of dill (or 1 t dill weed) and quartered onion inside bird.
- Rub surface of chicken with lemon and spread with butter.
- Place 2 wedges of lemon inside bird, then place chicken in roasting pan and add wine and broth to pan.
- Roast for 1 ½ hours or until tender, basting with liquid every 15-20 minutes.
- Transfer chicken from pan to a warmed platter and keep warm.
- Chop the remaining sprig of dill.
- Strain the pan juices into a saucepan.
- Reserve 2 T of liquid and mix with the cornstarch until smooth.
- Pour cornstarch mixture into juices and bring to a boil.
- Whisk until smooth, add remaining dill and lemon, and then check for seasoning.
- Carve chicken and serve with sauce.
- Garnish with extra dill and lemon if desired.
LEMON DILL SAUCE
I came up with this sauce to serve with Walleye Crab Cakes. I have been told by family and friends it is fabulous!!! I make it often. I have served it with several types of fish. It is a nice change from tartar sauce.
